Steps:
- Heat oil in a large pot over medium heat. Meanwhile, chop pork into one-inch pieces. When oil is hot, add pork and sauté. Turn pieces occasionally, until the pork is golden on all sides - about 5 minutes.
- Add mushrooms, ginger, and garlic. Sauté for another minute.
- Add chicken broth. Simmer for 10 minutes, until mushrooms are tender and pork is cooked through.
- Stir in scallions and watercress. Cook for 1-2 minutes until watercress is lightly wilted, then serve!

- Clean and prepare watercress. Pluck away unwanted parts of the watercress and cut away the tail end. Wash and soak for 10mins. Drain and set aside.
- Blanch pork ribs. Bring a pot of water to boil, blanch the pork ribs in boiling water with a few pieces of ginger before using.
- Boil soup. In a soup pot, bring 2.5L of water to boil and add both types of apricot kernels, red dates, and pork ribs. Bring to boil. Then turn to lowest heat. Allow the soup to simmer for at least 1.5 -2 hrs. Add watercress and wolfberries and simmer for another 20 minutes
WATERCRESS AND POTATO SOUP
Blend peppery watercress with potato and shallot for a satisfying soup.

- Heat the butter in a medium saucepan over medium heat. Add the shallot and cook, stirring, until tender, 3 to 5 minutes. Add the potato, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
- Simmer until the potatoes are tender, about 15 minutes, adjusting the heat as needed to maintain a simmer. Stir in the watercress and cook 5 minutes more. Remove from the heat, discard the thyme and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
- Stir in the cream and reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
- Serve hot sprinkled with almonds and chives.

- 1. Put water in a pot and add the fresh smashed ginger and chicken bouillon. Cut the pork cutlet into small portions and add to the pot and then add salt. Let this boil to cook the pork . Remove the scum from the pork off the top until there is a clear broth.
- 2. Wash the watercress or bok choy cabbage well and then slice which ever one you decide to use for the soup. Taste the broth to see if it needs more seasoning ( bouillon or salt). If the seasoning is ok then add the veggie of choice and cook in the broth for around 5 minutes ,, more or less. Add egg into the soup and cook a little while till egg is cooked. ( you can omit the egg if you like but we like it in the soup)
- 3. when ready to serve laddle soup in a bowl and add the shoyu sauce and black pepper to taste.

- With the watercress still in a bundle, cut off the stems where the leaves begin, about 5 to 6 cm from the end, but do not discard. Wash leaves and stems separately, in several changes of water.
- Meanwhile, fill a small pot with water and bring to a boil. Put in pork ribs and blanch for a minute or so to remove impurities. Discard the water and wash the meat clear of all scum and grit. Set aside.

- Put the blanched pork ribs, smashed ginger slices, and 8 cups of water in a clean pot. Bring the water to a boil, and immediately turn the heat down to low. Simmer for 90 minutes, covered.
