Wasabi-Soy Vinaigrette image

This all-purpose salad vinaigrette is reminiscent of the wasabi-tinged soy sauce you might have with a California roll. Soy sauce, rice vinegar and sesame oil waltz in time, while the wasabi paste adds nose-clearing excitement. As with any recipe, feel free to adjust the ingredient amounts to your taste preferences, especially the wasabi, which can be scaled down or up. Be sure to shake if it's been sitting in the fridge, as it wants to separate.

2 large garlic cloves, finely grated
2 tablespoons granulated sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
1 1/2 teaspoons wasabi paste, plus more to taste

Steps:

  • In a small liquid measuring cup or a glass jar with a tight-fitting lid, combine 1/4 cup water, the garlic, sugar, soy sauce, rice vinegar, sesame oil and wasabi paste. Whisk to combine, or, if using a jar, seal tightly and shake vigorously until emulsified. Taste and add more wasabi if you like; the wasabi flavor will intensify as the vinaigrette sits.
  • Use immediately or refrigerate in an airtight container for up to 1 week. This tastes great with any green salad, of course, but also with raw, crunchy vegetables, like cucumbers, sugar snap peas and thinly sliced asparagus.

1 ahi tuna steak, 6 ounces
2 teaspoons five-spice powder, available on spice aisle
1 teaspoon grill seasoning, such as Montreal Steak Seasoning, or salt and coarse pepper
Cooking spray or vegetable oil, for brushing the grill pan
5 ounces, half a sack, mixed prewashed baby salad greens
2 radishes, sliced
1/4 European cucumber, thinly sliced
1/2 teaspoon wasabi paste
1 tablespoon rice vinegar or rice vinegar
1 tablespoon soy sauce
3 tablespoons -virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.
  • Combine greens, radishes and cucumber in a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Whisk in oil to combine dressing. Drizzle dressing over your salad and toss to coat evenly. Slice tuna on an angle and arrange on the salad.

1/3 cup vegetable oil
For wasabi cream
2 teaspoons wasabi (green horseradish) powder
3 tablespoons water
1/4 cup sour cream
For halibut
1 (2-lb) halibut steak (1 1/2 inches thick), skinned, boned, and cut into 4 pieces
1/4 cup finely chopped fresh parsley
1/2 tablespoon vegetable oil
Accompaniment: pickled ginger

Steps:

  • Preheat oven to 400°F.
  • Make vinaigrette:
  • Blend vinaigrette ingredients in a blender until smooth. Season with salt.
  • Make cream:
  • Whisk together wasabi powder and water until smooth, then whisk in sour cream. Season with salt.
  • Make halibut:
  • Pat fish dry and season with salt and pepper. Sprinkle 1 side of each piece with parsley.
  • Heat a well-seasoned cast-iron skillet over high heat until hot. Add oil, then fish, parsleyed sides up. Sear fish until undersides are browned, about 1 minute.
  • Turn fish over and put skillet in middle of oven. Roast until just cooked through, 4 to 5 minutes.
  • Serve fish, parsleyed sides up, with a spoonful of each sauce.

1 quart water
1/2 cup tightly packed katsuo bushi (dried bonito flakes)
For shrimp cakes
2 tablespoons finely diced carrot
1/4 cup finely chopped onion
1/2 cup finely chopped fresh shiitake caps (2 large)
8 medium (31 to 35 per pound) shrimp in shell without heads, peeled and deveined, finely chopped by hand or pulsed in a food processor
1/4 pound skinless halibut, snapper, or cod fillet, finely chopped by hand or pulsed in a food processor
1 large egg yolk, lightly beaten
1/2 teaspoon fine sea salt
1 teaspoon light shoyu (Japanese soy sauce)
2 teaspoons sugar
1 quart vegetable oil
For wasabi vinaigrette
1 tablespoon prepared wasabi paste
1 tablespoon mayonnaise
1 tablespoon mirin (Japanese sweet rice wine)
1 tablespoon rice vinegar (not seasoned)
White pepper to taste
For mirin sauce
2 1/2 tablespoons mirin
2 1/2 tablespoons dark shoyu (Japanese soy sauce)
1 teaspoon sugar
1 teaspoon cornstarch mixed with 1 tablespoon cold water
For plating
6 ounces mesclun (4 cups)
4 fresh shiso leaves, thinly sliced
3/4 cup tightly packed katsuo bushi (dried bonito flakes)
1 1/4 ounces daikon sprouts, trimmed
Special Equipment
cheesecloth; a deep-fat thermometer

Steps:

  • Make dashi:
  • Wipe any sand or salt from kombu with a dampened cloth.
  • Bring water and kombu almost to a boil in a 2-quart saucepan, then reduce heat and simmer, uncovered, 5 minutes. Add katsuo bushi and bring to a boil, then boil 30 seconds. Remove from heat and let stand 3 minutes, skimming any foam. Pour dashi through a cheesecloth-lined sieve into a bowl.
  • Make shrimp mixture:
  • Cook carrot, onion, and mushrooms in 1/4 cup dashi, uncovered, in a small heavy skillet over moderate heat, stirring frequently, until carrot and onion are softened, about 4 minutes. Cool slightly.
  • Stir together shrimp, fish, vegetable mixture, yolk, sea salt, shoyu, and sugar in a bowl until combined well, then knead with your hands to form a paste. Chill, covered, until cold, about 1 hour.
  • Make wasabi vinaigrette:
  • Whisk together wasabi paste and mayonnaise, then add mirin and rice vinegar in a slow stream, whisking until blended well. Season with white pepper.
  • Make mirin sauce:
  • Bring mirin, shoyu, sugar, and 1/4 cup dashi to a simmer in a small saucepan. Stir cornstarch mixture, then whisk into mirin mixture and boil, whisking, 1 minute. Remove from heat and keep warm, covered.
  • Fry shrimp cakes:
  • Heat oil in a deep 10-inch skillet over moderate heat until it registers 250°F on thermometer. While oil is heating, form shrimp mixture into 4 (1/2-inch-thick) cakes. Fry cakes until light golden, about 2 minutes on each side, then transfer with a wide metal spatula to paper towels to drain. Transfer cakes with spatula to clean paper towels to drain again. Cut each cake into 1/2-inch-wide slices.
  • Assemble dishes:
  • Divide mesclun among 4 plates and sprinkle with shiso leaves. Arrange shrimp cake slices over salads and drizzle with vinaigrette and mirin sauce. Top each serving with 2 rounded tablespoons katsuo bushi, then with sprouts.

Steps:

  • In a small bowl, whisk together the shallots, vinegar, and 1/4 teaspoon fine sea salt; let the mixture stand 10 minutes. Whisk in the mustard, then add the oil in a very slow, thin, steady stream, whisking constantly until the dressing is emulsified. Season with fine sea salt and freshly ground black pepper. DO AHEAD: The vinaigrette can be prepared ahead and refrigerated, in an airtight container, up to 1 week.

2 tablespoons seasoned rice vinegar
2 tablespoons oriental sesame oil
2 tablespoons water
1 green onion, minced
2 teaspoons wasabi paste (horseradish paste)*
1 garlic clove, minced
1/2 teaspoon salt
2 large red bell peppers
2 large yellow or orange bell peppers
2 yellow Hungarian peppers (also called Hungarian wax chiles or banana chiles)
Toasted sesame seeds

Steps:

  • Combine first 7 ingredients in small bowl; whisk to blend well. (Vinaigrette can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature and rewhisk before using.) Remove grill rack from barbecue. Prepare barbecue (medium-high heat). Rake coals into even layer. Allow coals to burn until just beginning to turn ash-gray. Place peppers directly on coals. Cook until peppers are blackened on all sides, turning frequently with tongs, about 7 minutes. Transfer peppers to bowl; cover with plastic wrap. Cool peppers to room temperature. Peel and seed peppers, then cut into 2x1-inch pieces.
  • Arrange peppers on platter. Spoon vinaigrette over; sprinkle with sesame seeds and serve.
  • *Wasabi paste is available at Asian markets and in tubes in the Asian foods section of some supermarkets.
