WARM MEXICAN (CHILI-CHEESE) DIP
Okay, I know there are 157 recipes for Mexican Dip, but this one really IS different. Serve warm. It won't be the prettiest dip at the table, but it will be the best! My kids loved it so much, they would eat it by the bowl with chips and call it a meal! Makes alot, but don't worry, it won't last long... (Note: jar/can sizes are approximate - will correct, if needed, once I can check them out.)

Steps:
- In a 5 quart saucepan, mash tamales with a potato masher and begin to warm over medium heat.
- Add chopped onion, chili and picante sauce.
- Grate cheese and add to heated mixture. Continue to heat until cheese melts.
- Serve warm with tortilla chips.

WARM MEXICAN BEAN DIP WITH TORTILLA CHIPS

Steps:
- Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
- Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

WARM MEXICAN CRAB DIP
Steps:
- 1. Pre-heat oven to 350°F. Lightly oil a shallow 1½ quart casserole dish. 2. In a medium skillet over low heat, melt the butter. Add the onion and jalapeno and saute for 5 minutes, stirring often. Remove from heat and set aside. 3. In a separate bowl, using an electric mixer, place the cream cheese, mayonnaise, and sour cream and blend together until smooth. Using a spatula, fold in the crab meat, salt, chili powder, cumin, hot sauce, cilantro, lime juice and ½ cup of cheddar cheese. Fold in the onions and jalapeno. 4. Transfer the dip to the prepared baking dish. Sprinkle with the remaining ½ cup cheddar cheese and bake uncovered for 20-25 minutes until heated through and bubbly. Top with cilantro and serve warm with tortilla chips.

- Preheat oven to 350°F.
- Use a hand mixer of food processor to combine sour cream and cream cheese. It should be smooth. Spread in 9x13-inch Pyrex dish.
- Spread refried beans over mixture.
- Sprinkle with cheese.
- Add jalapeños or black olives by sprinkling them on top.
- *I sometimes add other layers to the dip, such as salsa.
- Bake for 20 minutes or until the cheese is melted.

FANTASTIC MEXICAN DIP
This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.
