1 pound cooked lobster meat
5 tablespoons unsalted butter, divided
1/2 cup small-diced celery
Kosher salt and freshly ground black pepper
1/2 teaspoon minced fresh dill, plus extra for garnish
1/2 teaspoon minced fresh parsley
Juice of 1 lemon
6 top-sliced hot dog buns, such as Pepperidge Farm

Steps:

  • Cut the lobster meat in large (3/4-inch) dice. Heat 3 tablespoons of the butter in a medium (10-inch) saute pan over medium-high heat. Add the lobster, celery, 1 teaspoon salt, and 1/2 teaspoon pepper and cook, stirring occasionally, for 2 to 3 minutes, until just heated through. Off the heat, sprinkle the lobster with the dill, parsley, and half of the lemon juice. Stir well.
  • Meanwhile, heat the remaining 2 tablespoons of butter in a large (12-inch) saute pan, until the butter sizzles. Place the rolls in the pan on their sides (you are toasting the outsides, not the insides) and cook over medium-high heat for 2 minutes on each side, until nicely browned.
  • Place the rolls, cut side up, on a platter. Divide the lobster mixture among the 6 rolls and sprinkle with extra dill, salt, and the remaining lemon juice. Serve hot while the rolls are crisp on the outside and the lobster filling is hot.

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

4 granny smith apples, sliced
1 cup brown sugar, packed
1 teaspoon cinnamon
4 tablespoons butter

Steps:

  • In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
  • Add sliced, unpeeled apples, cover, and saute, stirring frequently.
  • In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
  • When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
  • Continue cooking until sugar has dissolved into syrup.
  • Serve with hot buttered biscuits and sausage on the side; or alongside ham or pork.

WARM LOBSTER & POTATO SALAD WITH TRUFFLED MAYONNAISE



Warm lobster & potato salad with truffled mayonnaise image

2 cooked lobsters , about 500g each
250g fine green bean , cooked
2 shallots , finely chopped
6 tbsp olive oil
1 lemon , halved
12 new potatoes , cooked
100g mixed baby salad leaf
1 tsp white balsamic vinegar
2 egg yolks
1 tbsp English mustard
300ml olive oil
few drops truffle oil (optional)
juice ½ lemon

Steps:

  • To make the mayonnaise, whisk the egg yolks with the mustard and some salt and pepper together in a large bowl. Trickle in a few drops of oil, whisking vigorously.
  • Continue to whisk in the oil, little by little at first, then slowly increasing the amount to a steady stream. Make sure each addition is well incorporated before you add any more. Finally, add a few drops of the truffle oil, if using, then finish with the lemon juice. Keep in the fridge until needed.
  • Prepare the lobster and remove the meat from the claws and tail. Trim the frayed bit of meat from the tails and flake the claw meat into large chunks, discarding the membrane. Set aside. Cut the tails into 6 slices each and set aside.
  • Trim the ends off the beans and cut the beans in half. Tip into a bowl with the shallots and 3 tbsp of the olive oil and season with salt and pepper. Mix in the lobster claw meat and squeeze over a lemon half, then set aside.
  • Heat 1 tbsp olive oil in a non-stick frying pan. Fry the potato slices over a medium heat for 5 mins on each side until crisp and golden. Use a fish slice to transfer them to a plate lined with kitchen paper.
  • Heat 1 tbsp olive oil in the same pan and lower the heat, add the slices of tail meat to the pan, then heat through in the oil for a few moments on each side. Turn off the heat, season lightly with salt and pepper and squeeze over the lemon. Moments before you are ready to plate up, toss the salad leaves with the balsamic vinegar and remaining olive oil. You are now ready to plate up.
  • Spoon a quarter of the green bean salad into the centre of the plate. Shape using a 10cm ring or cutter, if you have one, then press down lightly and remove the ring. Place 1 tsp of mayonnaise on the four opposite sides of the outside of the plate and sit a piece of lobster on top of each spoonful of mayonnaise.
  • Put a fried potato slice in between each pile of lobster so you have alternate pieces of lobster, then potato. Toss the leaves in the dressing and carefully tower a small handful on top of the green beans and serve straight away.

4 (1-pound) lobsters
1 recipe lobster stock
1/2 cup vinaigrette
Fine sea salt, to taste
Freshly ground white pepper, to taste
6 cups mesclun (baby greens)
1 shallot, peeled and finely diced
1 teaspoon fresh lemon juice
1 bunch fresh chervil, for garnish

Steps:

  • 1. Kill the lobsters and poach them according to the directions in Poaching Lobster (do not shell the tail meat). Shell the claw meat and cut it lengthwise into 1/4-inch-wide strips. Using heavy kitchen shears, cut away the legs and the thin shell that covers the underside of the tail meat. Cut the tails, with the meat still adhering to the shell, on the diagonal into 1/2-inch-wide slices. Refrigerate the lobster meat.
  • 2. Put the lobster stock in a saucepan and bring it to a boil over high heat. Lower the heat slightly and simmer, skimming occasionally, until the stock has reduced to 1/3 cup, about 10 minutes. Put the sauce in a bowl and let it cool slightly. Whisking constantly, slowly drizzle in the vinaigrette. (The recipe can be made to this point up to several hours ahead; refrigerate the sauce).
  • 3. To serve, preheat the oven to 550 degrees. Spread the lobster on a baking sheet in a single layer and season it with salt and pepper. Spoon 1/4 cup of the sauce over the lobster. Put the rest in a small saucepan and warm it gently over low heat. Put the lobster in the oven just until warmed through, about 1 minute.
  • 4. Put the mesclun in a bowl and toss with the shallot, tarragon, and lemon juice. Toss with 6 tablespoons of the sauce. Mound the salad in the center of 4 dinner plates. Arrange the lobster tail slices in a circle around the salad, with the crescent backs of the shells facing the rim of the plate. Scatter the claw meat over the salad.
  • 5. Spoon the remaining sauce over the tail slices and top each one with a small sprig of chervil. Put a large sprig of chervil on top of each salad and serve immediately.

SAUTéED LIVER & APPLE SALAD WITH BLACKBERRY DRESSING

Dress up cheap chicken livers in this gorgeous salad for an impressive looking dish that's ready in 25 minutes

2 tbsp butter
3 sharp eating apples , such as Braeburn, peeled and cut into sugar-cube-sized pieces
500g chicken livers , trimmed (see tip, below left, for how to prepare)
3 tbsp plain flour , seasoned generously
100g bag salad leaves
100g walnut halves , toasted
crusty bread , to serve (optional)
200g blackberries - smart tart berries are better than dessert ones
2 tbsp red wine or Port
2 tbsp balsamic vinegar
2 tbsp golden caster sugar , plus extra if needed
2 tsp extra virgin olive oil

Steps:

  • Make the dressing first. Set aside 8 of the berries in a bowl. Put the rest of the berries, the wine, vinegar and sugar in a medium pan, cover and simmer for 3 mins or until the berries are very soft. Mash the berries well, then pass the hot mixture though a sieve, on top of the reserved berries. Season and cool. It should be quite sharp and fruity, but blackberries vary hugely; if you need to, add more sugar and taste again.
  • Heat 1 tbsp butter in a large non-stick frying pan and add the apples. Cook for about 5 mins, turning the apples now and again, until golden and just tender. Can be done a few hours ahead.
  • When you're ready to eat, dredge the livers in the seasoned flour and tap off the excess. Heat the rest of the butter in the pan and fry the livers for 5 mins or until golden, turning them halfway through cooking. When red juices start to run from the livers, you know that they are almost ready. Toss the apples back in the pan to warm through, then take it off the heat.
  • Spread the salad leaves across 1 large platter or 4 plates, and top with the livers, apples and walnuts. Whisk the oil into the blackberry dressing and spoon this over generously. Serve with crusty bread, if you like.

6 bacon strips, diced
1/4 cup cider vinegar
3 tablespoons brown sugar
9 cups fresh baby spinach

Steps:

  • In a large skillet, cook bacon until crisp. Remove to paper towels. Drain, reserving 2 tablespoons drippings. , In same skillet, combine vinegar, brown sugar and reserved drippings. 1 steamed lobster tail plus claw meat, sliced thin across the thickest part
1 apple, cored, small dice
2 tablespoons EVOO
1 1/2 tablespoons unsalted butter
1/2 pound Shitake mushrooms, thinly sliced (keep the stems for amazing vegetable stock)
1 tablespoon fresh thyme leaves
1 tablespoon freshly squeezed lemon juice
1/4 cup Pernod (licorice flavor liqueur)
1/2 pound baby spinach
2 tablespoons Vanilla Vinaigrette (see Vanilla Vinaigrette recipe)
Kosher salt and freshly ground black pepper

Steps:

  • In a large sauté pan over medium-high heat, add 1/2 tablespoon butter plus 1 tablespoon EVOO and heat until the butter begins to brown. Add the sliced mushrooms and toss to coat. Add the fresh thyme and season. Continue to cook until the mushrooms are nicely colored, approximately 5 minutes. As it will flambé when it hits the hot pan (fire!), carefully add the Pernod and cook until the flames have fully extinguished. Transfer the mushrooms to a sheet pan. In the same sauté pan add 1 tablespoon EVOO, in addition to 1/2 tablespoon butter and heat until the butter turns brown. Immediately add the cubed apples and stir to coat. Continue to cook until the apples are nicely colored. Drizzle the lemon juice over the apples, stir to coat and remove from the heat. Add to the same sheet pan as the mushrooms. Lastly, on the same sauté pan, add the remaining 1/2 tablespoon butter and toss in the lobster meat in addition to the mushrooms, apples, and 2 tablespoons vanilla vinaigrette. Toss to combine and when the mixture is heated through add the spinach and sauté to coat. The spinach will wilt slightly. Season to taste and serve immediately.
