A simple and delicious ham and cheese quiche that's good any time!

1 (9 inch) frozen pie crust
4 eggs
1 ½ cups milk
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package diced cooked ham
2 tablespoons melted butter
1 tablespoon dried chives
1 pinch salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place pie crust on a cookie sheet.
  • Beat eggs together in a mixing bowl. Add milk, Cheddar cheese, ham, butter, chives, and salt; mix well. Pour into the pie crust.
  • Bake in the preheated oven for 35 minutes. Increase oven temperature to 400 degrees F (200 degrees C) and bake until top is slightly browned, about 10 minutes.

1 (15 ounce) package refrigerated pie crusts
1 egg white, lightly beaten
6 slices bacon
1/2 cup chopped onion
1 cup fresh mushrooms, sliced
1 1/2 cups half-and-half
1 cup chopped cooked ham
6 eggs, lightly beaten
1/2 teaspoon seasoning salt
1/2 teaspoon black pepper
2 cups shredded swiss cheese
2 tablespoons all-purpose flour

Steps:

  • Fit 1 piecrust into a 9" deep dish pieplate according to package directions; trim dough around edges of pieplate.
  • Place remaining piecrust on a lightly floured surface, cut desired shapes with a decorative 1" cookie cutter. Brush edge of piecrust in pieplate with beaten egg white; gently press dough shapes onto edge of piecrust. Pierce bottom and sides with a fork.
  • Line piecrust with parchment paper or aluminum foil; fill piecrust with pie weights or dried beans.
  • Bake at 400 for 10 minutes. Remove weights and parchment paper; bake 5 more minutes, and set aside. Reduce oven temperature to 350.
  • Cook bacon in a large skillet over medium high heat until crisp. Remove bacon, and drain on paper towels, reserving 2 t. drippings in pan. Crumble bacon and set aside.
  • Saute chopped onion and mushrooms in hot drippings 3 to 4 minutes or until tender.
  • Stir together bacon, onion mixture, half and half, and next 4 ingredients in a large bowl. Combine cheese and flour; add to bacon mixture, stirring until blended. Pour mixture into crust.
  • Bake at 350 for 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Shield edges with aluminum foil to prevent excess browning, if necessary. Let stand 10 minutes before serving.

1 (9 inch) deep dish frozen pie crust
1 (3 ounce) can bacon bits
½ cup chopped onion
5 ounces shredded Swiss cheese
3 ounces grated Parmesan cheese
4 eggs, lightly beaten
1 cup half-and-half cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
  • Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

1 package (14.1 ounces) refrigerated pie crust
2 cups diced fully cooked ham
2 cups shredded sharp cheddar cheese
2 teaspoons dried minced onion
4 large eggs
2 cups half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. Unroll pie crusts into two 9-in. pie plates; flute edges. Line unpricked pie crusts with a double thickness of heavy-duty foil. Fill with pie weights, dried beans or uncooked rice. Bake until light golden brown, 10-12 minutes. Remove foil and weights; bake until bottom is golden brown, 3-5 minutes longer or Cool on wire racks., Divide ham, cheese and onion between shells. In a large bowl, whisk eggs, cream, salt and pepper until blended. Pour into crusts. Cover edges loosely with foil. Bake until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 5-10 minutes before cutting. Freeze option: Cover and freeze unbaked quiche. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 350°. Place quiche on a baking sheet; cover edge loosely with foil. Bake as directed, increasing time as necessary for a knife inserted in the center to come out clean.

Easy Crustless Ham or Bacon Quiche image

My grandmother got this recipe from a friend years ago and has been making it frequently ever since. It is my FAVORITE quiche recipe. I'm not a huge fan of crusts since I love the flavors of the quiche itself and feel that the crust just gets in the way. The Bisquick makes its own sort of crust anyways. You can used leftover ham pieces or crumbled bacon. Either way is delicious. Sauteing the onions in a little butter or oil first is key to a good flavor. You could always add other veggies here as well such as bell pepper or mushrooms.

1 cup Bisquick
1/3 cup butter
3 cups milk
2 cups shredded cheddar cheese

  • 1- Saute onions in saucepan with a little butter or oil until starting to carmelize (3-5 minutes).

1 cup cooked ham (cut in strips)
1/3 cup red bell pepper (cut in strips)
1/3 cup green onion (chopped)
1 cup swiss cheese (shredded)
2 tablespoons all-purpose flour
2 1/3 cups half-and-half
3 eggs (slightly beaten)
1 (9 inch) pie crusts

Steps:

  • Mix ham, bell pepper, green onion, cheese and flour; toss all ingredients lightly.
  • Mix half-and-half gently into eggs.
  • Still gently; fold ham mixture into egg mixture.
  • Pour this mixture into unbaked pie shell.
  • Bake 10 minutes at 425 degrees, and then lower heat to 325 degrees and bake 20 minutes more or till done.
