Categories     appetizer

Time 25m

Yield 6 servings

Number Of Ingredients 11

1 10-ounce log goat cheese, at room temperature
4 ounces cream cheese, at room temperature
1/4 cup grated parmesan cheese
1/4 cup extra-virgin olive oil, plus more for brushing
Freshly ground pepper
8 small cocktail tomatoes (about 10 ounces), quartered
2 tablespoons chopped fresh chives
2 teaspoons balsamic vinegar
1 clove garlic, finely chopped
Kosher salt
Toasted baguette slices, for serving

Steps:

  • Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
  • Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

HOT LEEK DIP

Hot Leek Dip image

Provided by Patricia Heaton

Categories     appetizer

Time 45m

Yield 8 servings

Number Of Ingredients 12

1 crusty sourdough or country-style boule, about 7 inches in diameter
3 medium leeks, white and light green part halved lengthwise and thinly sliced
4 tablespoons unsalted butter
2 cloves garlic, finely chopped
1 pinch cayenne
Kosher salt and freshly ground black pepper
1/2 cup whole milk
8 ounces cream cheese, at room temperature
4 ounces goat cheese, at room temperature
1 tablespoon chopped fresh dill, plus a sprig for garnish
1/2 lemon, zested and juiced
Assorted raw vegetables for serving, such as carrot sticks, celery sticks, sliced bell peppers and sliced radishes

Steps:

  • Preheat the oven to 375 degrees F.
  • Make a bread bowl by cutting off the top third of the loaf of bread to expose the inner crumb. Use your fingers to tear out the crumb, trying to keep it in large pieces. Cut or tear the crumb of the bread into 1 1/2-inch pieces. Place the bread bowl and the bread pieces on a baking sheet and bake until slightly dried out and lightly toasted, about 10 minutes.
  • Put the leeks in a large bowl of water and wash thoroughly; drain.
  • Melt the butter in a large saucepan over medium heat. Add the leeks, garlic, cayenne, salt and pepper to taste and cook, stirring occasionally, until very tender and golden in parts, about 10 minutes. Add the milk and bring to a simmer. Add the cream cheese and goat cheese a few spoonfuls at a time, stirring well after each addition, until all of the cheese is smoothly incorporated. Continue to cook, stirring, until the dip is hot, about 3 minutes more. Stir in the dill, lemon zest and juice and season with salt and pepper. Transfer to the bread bowl and garnish with the dill sprig. Serve with the toasted bread and vegetables for dipping. Top with bread top as decoration.

Number Of Ingredients 5

1 (11 ounce) log plain goat cheese
2 extra-large egg whites, beaten with 1 tablespoon water, for egg wash
Fresh bread crumbs
1 tablespoon olive oil
1 tablespoon unsalted butter

Steps:

  • Slice the goat cheese into 12 (1/2-inch-thick) slices. Dip each slice into the egg wash and then into the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a baking rack set on a sheet pan and chill for at least 15 minutes.

LEEK AND GOAT CHEESE QUICHE

Leek and Goat Cheese Quiche image

The recipe is from America's Test Kitchen, with some minor modifications made by me (highlighted in italics). Goat cheese should be fairly easy to find in any decent supermarket. I found the best value for it at a warehouse club, where they were charging less for a pound of it than a normal grocery store charged for half the amount. Make sure to wash leeks thoroughly, as they can be gritty.

Time 55m

Yield 1 quiche, 6 serving(s)

Number Of Ingredients 11

2 medium leeks, washed thoroughly and sliced thinly
2 tablespoons unsalted butter
2 large eggs
2 large egg yolks
3/4 cup whole milk
3/4 cup heavy cream
1/2 teaspoon table salt
1/2 teaspoon white pepper
1 pinch fresh grated nutmeg
4 ounces mild goat cheese, crumbled
1 (9 inch) partially baked pie crusts, baked until light golden brown, 5 to 6 minutes (warm)

Steps:

  • Adjust oven rack to center position and heat oven to 375 degrees.
  • Sauté white parts leeks in butter over medium heat until soft, 10-15 minutes.
  • Meanwhile, whisk all remaining ingredients except goat cheese in medium bowl.
  • Spread goat cheese and leeks evenly over bottom of warm pie shell and set shell on oven rack.
  • Pour in custard mixture to 1/2-inch below crust rim.
  • Bake until lightly golden brown and a knife blade inserted about one inch from the edge comes out clean, and center feels set but soft like gelatin, 32 to 35 minutes.
  • Transfer quiche to rack to cool. Serve warm or at room temperature.

SALSA-BAKED GOAT CHEESE

Yield Serves 4 to 6 as a nibble with tortilla chips, pita triangles, crackers or crispy toasts

Number Of Ingredients 5

1/4 cup pine nuts or coarsely chopped walnuts or pecans
1 4-ounce log goat cheese (there are flavored goat cheeses available, some of which can be good with the salsa, but think about the flavor combination before making your purchase)
1 3-ounce package cream cheese, softened
1 cup Roasted Jalapeño-Tomato Salsa
A tablespoon or so chopped fresh cilantro, for garnish

Steps:

  • 1. Heat the oven to 350 degrees. Spread out the nuts on a baking sheet and toast them in the oven until lightly browned and very fragrant, 7 or 8 minutes (the pine nuts will brown quicker than either of the others). Remove and slide them off into a medium-size bowl.
  • 2. Add the cheeses to the bowl and combine thoroughly with the nuts. Scoop it in the center of a baking dish (I like to use a decorative 9-inch pie pan) and form it into a 5-inch-diameter disk. Spoon the salsa over and around the cheese. Place the dish in the oven and bake until heated through, 10 to 15 minutes. Sprinkle on the cilantro and set it out for your guests to enjoy as a dip or a spread.
