12 (1 1/2-ounce) veal medallions
1 1/4 teaspoons salt
1 1/8 teaspoons freshly ground white pepper
2/3 cup all-purpose flour
About 1/2 cup vegetable oil
2 tablespoons plus 1 teaspoon unsalted butter
1 pound white button mushrooms, stemmed, wiped clean, and sliced
1/2 cup finely chopped green onions (green parts only)
1 pound jumbo lump crabmeat, picked over for shells and cartilage
16 spears blanched asparagus
1 cup Hollandaise Sauce, recipe follows
3 large egg yolks
2 teaspoons water
1/2 cup melted clarified butter or 8 tablespoons (1 stick) unsalted butter, melted
1 1/2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • One at a time, place the veal medallions between 2 sheets of plastic wrap and pound with the flat side of a meat mallet until 1/8-inch thick. Season the veal on both sides with 1 teaspoon each of the salt and pepper. Place the flour in a shallow dish. One at a time, dredge the veal medallions in the flour, and shake to remove any excess.
  • Heat 3 tablespoons of the oil in a large skillet over medium-high heat. Add 3 or 4 of the medallions and cook until golden, about 1 minute per side. Remove from the pan. Cook the remaining medallions, adding more oil as needed.
  • Discard any oil remaining in the pan, and melt 2 tablespoons of the butter over medium-high heat. Add the mushrooms and green onions and cook, stirring, until wilted, 3 to 5 minutes. Add the crabmeat and the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook, stirring gently, until warmed through, about 1 minute.
  • Meanwhile, in a large skillet, melt the remaining 1 teaspoon butter over medium-high heat. Add the asparagus and toss until heated through, about 1 minute.
  • To serve, shingle 3 medallions alternately with the crabmeat mixture on each of 4 plates. Top each serving with 4 asparagus spears and drizzle with the hollandaise sauce. Serve immediately.
  • In the top of a double boiler or in a large heatproof bowl set over a pot of simmering water, whisk the egg yolks with the water until thick and pale yellow, removing the pan or bowl from the heat as needed to prevent the eggs from overcooking. Gradually add the butter, whisking constantly until thickened. Add the remaining ingredients and whisk well to blend. Adjust the seasoning, to taste.
  • Remove from the heat and cover to keep warm until ready to serve. (Or, place in a bowl set over a pot of warm water and cover; stir occasionally.)

VEAL PORTERHOUSE

1 pound veal porterhouse steak
Salt and pepper
1/4 cup vegetable oil
4 ounces porcini mushrooms, sliced
Half a shallot, diced
3 ounces brandy
1 cup heavy cream
1 tablespoon butter
Chopped fresh parsley, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Sprinkle the porterhouse with salt and pepper. Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the steak and sear until golden brown on both sides, 3 to 4 minutes per side. Remove from the skillet from the heat. Transfer the steak to a plate and add the mushrooms and shallot to the skillet. Return the skillet to medium heat, and cook, stirring, until the porcinis are golden brown. Remove skillet from the heat again. Pour in the brandy, slowly put back on heat and allow the alcohol to flame up. Once flame is out, add the heavy cream, butter and porterhouse. Let simmer until sauce thickens. Remove veal porterhouse and place in the oven until desired temperature. Transfer the steak to a serving plate, top with the sauce and sprinkle with parsley. Serve and enjoy.

MARSALA AND MUSHROOM PASTA BAKE



Marsala and Mushroom Pasta Bake image

Kosher salt and freshly cracked black pepper
1 pound cavatappi pasta
6 tablespoons unsalted butter
6 cups sliced mixed mushrooms (shiitake and cremini)
1 medium yellow onion, thinly sliced
2 cloves garlic, minced
1 tablespoon finely chopped fresh thyme
1/3 cup all-purpose flour
1 cup marsala wine
3 cups vegetable stock
1 cup whole milk
Freshly grated nutmeg
1/2 cup finely chopped fresh parsley
2 cups shredded mozzarella cheese
1/4 cup freshly grated Parmesan

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Bring a large pot of salted water to a boil on the direct heat side of the grill and cook the pasta 3 minutes less than the package directions. Place a large sauté pan over the direct heat side of the grill. Add the butter and once melted, add the mushrooms and a pinch of salt. Stir and cook for 1 minute so the mushrooms soak up some of the butter. Then add the onions, garlic and thyme. Stir and cook until the onions are translucent and the mushrooms are slightly browned, 2 to 3 minutes. Stir in the flour, coating all of the vegetables. Deglaze the pan with the marsala, smoothing out any lumps. Stir in the vegetable stock and milk. Season with salt, pepper and nutmeg and bring to a simmer.
  • Add the cooked pasta, parsley and mushroom marsala mixture to an extra-large mixing bowl. Mix to combine well, then transfer back to the sauté pan. Top with the mozzarella and Parmesan. Place the sauté pan on the indirect heat side of the grill, close the grill with the lid and bake until the cheese is melted and golden brown in some spots, 3 to 5 minutes. Remove from the grill and serve!

VEAL OR CHICKEN HANSON

2 lbs veal loin or 2 lbs chicken
flour, for dredging
3 tablespoons butter
1/4 cup marsala wine
1 1/2 cups shiitake mushrooms, quartered
salt and pepper
3 tablespoons olive oil
1 cup molasses
1/4 cup chicken stock
fettuccine pasta

Steps:

  • Take veal or chicken & pound thin between 2 pieces of plastic wrap until 1/2" thick. Season lightly with salt & pepper on both sides & then dredge in flour.
  • Heat olive oil & butter in a large pan over medium heat, shake off excess flour from veal & saute about 2 minutes per side until lightly browned. Remove & set aside.
  • To pan add molasses, wine & stock. Let reduce on high heat for 5 minutes, after reduction of 1/4th, add mushrooms. Reduce heat, cover & simmer until mushrooms soften & sauce thickens slightly, about 7 minutes.
  • Add veal back to pan & warm.
  • Serve with fettucine that has been cooked & then tossed with a little olive oil, parmesan cheese & parsley.

4 (4 ounce) veal medallions
Salt
Pepper
2 tablespoons olive oil
4 ounces shallots
Madeira wine
12 ounces veal demi-glace, substitute 6 ounces beef stock with 6 ounces chicken stock
1 ounce truffles or truffle oil, substitute mushrooms for truffles or truffle oil
2 tablespoons cold butter
4 (1-ounce) slices foie gras or chicken liver
Fresh chopped parsley

Steps:

  • Preheat oven: 400 degrees F.
  • Season the veal with salt and pepper. Preheat olive oil in saute pan and sear veal. Finish in oven for approximately 12 minutes until medium rare.
  • Remove from oven and let veal rest on a platter for 4 minutes. Add shallots to pan and sweat. Deglaze pan with Madeira wine. Add the demi-glace, salt, and pepper. Shave fresh truffles into sauce. Swirl butter into the sauce to finish.
  • Preheat saute pan to sear foie gras. Season foie gras with salt and pepper. Sear both sides. Plate the veal, 1 piece on each of 4 plates. Pour the sauce over the veal and finish the dish with seared foie gras and slice truffles over dish.

"This is our Saturday-night plat du jour and, because its preparation involves the basics of French cooking, it's also the first dish we teach young cooks: There's the browning of the meat, the softening of the mirepoix, the reduction of wine, and the long braise in stock. It's a forgiving dish that calls for patience rather than precision. It's also the ideal meal to make ahead of time, as it benefits greatly from a night's rest. Serve with Garlic Mashed Potatoes and Pan-Roasted Root Vegetables." From The Balthazar Cookbook by Keith McNally, Riad Nasr and Lee Hanson. As with all tough cuts of meat, short ribs are best when braised. A long and gentle simmer breaks down the abundant fat and connective tissue, rendering the ribs tender and velvety in texture. Veal stock adds its own inherent silky richness. Ask the butcher to cut the ribs across the rack, as opposed to along the bone, so there are 3 short bones in every piece.

6 short rib of beef (5 to 7 pounds)
2 sprigs rosemary
6 sprigs thyme
1 bay leaf
1 stalk celery, halved
3 teaspoons kosher salt
2 teaspoons fresh coarse ground black pepper
3 tablespoons vegetable oil
3 medium carrots, peeled and cut into 1-inch pieces
1 medium onion, roughly chopped
4 shallots, peeled and sliced 1/4 inch thick
5 garlic cloves, peeled and halved
3 tablespoons tomato paste
3 tablespoons all-purpose flour
1/2 cup ruby port
4 cups full-bodied wine, such as cabernet sauvignon
6 cups veal stock (veal stock is really best but you can substitute good homemade beef stock)

Steps:

  • Preheat the oven to 325°F
  • Bind each rib with cotton kitchen twine. Place the rosemary, thyme, and bay leaf between the two celery halves and bind with kitchen twine.
  • Season the short ribs with 2 teaspoons of the salt and the pepper.
  • Heat the oil in a large Dutch oven over a high flame until it smokes.
  • In two batches, brown the short ribs well on both sides, about 3 minutes per side, pouring off all but 3 tablespoons of oil between batches.
  • Remove the ribs and set aside when done.
  • Lower the flame to medium, and add the carrots, onion, shallots, and garlic to the pot and saute for 5 minutes, until the onion is soft and light brown.
  • Stir in the tomato paste and cook for 2 minutes.
  • Add the flour and stir well to combine. Add the port, red wine, and the celery-herb bundle.
  • Raise the flame to high and cook until the liquid is reduced by a third, about 20 minutes.
  • Return the ribs to the pot (they will stack into two layers).
  • Add the stock and the remaining 1 teaspoon of salt; if the stock doesn't cover the ribs by at least 1 inch, add water up to that level.
  • Bring to a gentle simmer, cover, transfer to the preheated oven, and cook for 3 hours. Visit the pot occasionally and stir the ribs, bringing the ones on the bottom up to the top -- they're done when the meat is fork tender and falling off the bone.
  • Transfer the ribs to a large platter and remove the strings.
  • Skim any fat from the surface of the sauce, and then strain through a sieve into a medium saucepan.
  • Discard the solids.
  • Over medium heat, bring the sauce to a strong simmer and reduce the liquid until slightly less then half (4 cups) remains, about 1 hour.
  • Return the ribs to the pot, simmer for 10 minutes to reheat, and serve.
