ROMAINE SALAD WITH BLUE CHEESE VINAIGRETTE

Steps:
- Place lettuce in a big bowl. Combine garlic, oregano, sugar and vinegar in a small bowl. Add oil to dressing in a slow stream and mix with a whisk or fork. Stir in blue cheese. Pour dressing over salad and toss. Season with salt and pepper, to taste.
GERMAN ROMAINE SALAD WITH WESTPHALIAN VINAIGRETTE
This salad uses chilled, crisp lettuce and a vinaigrette that is heated. It would be best to use Westphalian ham, a dry cured smoked ham. If that is unavailable, any prosciutto type ham will do.

- For the vinaigrette:
- Spoon the mustard into a medium bowl. Whisk in half the oil and half the vinegar until blended. Add remaining oil and vinegar, and whisk until blended. Whisk in water, and season with salt and pepper. Or, use a food processor.
- Next, place prosciutto in a small skillet on medium heat and sauté until it begins to brown. Add the minced garlic and brown together for a few seconds. Add vinaigrette and cook just until warm.
- Meanwhile, loosen each Romaine heart on 4 individual salad plates. Crumble blue cheese onto the lettuce, the optional hazelnuts, and drizzle with the warmed prosciutto (or Westphalian, better) dressing. Serve.

BROILED "GRILLED" ROMAINE SALAD
Steps:
- For the dressing, finely grate the garlic into a jar, add the remaining dressing ingredients and shake vigorously until a dressing forms. Set this aside.
- Put your oven on the "high" broil setting.
- Cut the romaine hearts in half, leaving the bottom intact so that the leaves stay together. Brush each side with a light coating of olive oil.
- Place the romaine hearts on a parchment lined baking sheet and broil for 2 minutes, then flip and broil the other side for 2 minutes. Keep an eye on them, this happens quickly. But they should come out looking slightly charred.
- While the romaine is broiling, crumble the cheese, chop the walnuts and slice the shallot into thin pieces.
- Once the romaine is out of the oven, use tongs to place the hearts on a serving platter.
- Top generously with the walnuts, cherries, cheese and shallot. Add salt and pepper to taste and then top with the dressing.
- Chop and serve!
ROMAINE SALAD WITH PROSCIUTTO CRISPS
The small inner leaves of romaine lettuce are tender and crisp, perfect for this salad. Use a vegetable peeler to shave the Pecorino Romano.

- Preheat the oven to 400 degrees. Lightly brush a rimmed baking sheet with olive oil, and arrange the prosciutto in a single layer. Place in the oven, and bake until crisp, 5 to 10 minutes. Remove from the oven, and let cool on a wire rack.
- Combine the olive oil, balsamic vinegar, and thyme in a bowl; season with salt and pepper, and whisk to combine. Add the romaine and shaved Pecorino Romano; toss to combine. Arrange on 4 plates; serve topped with the prosciutto crisps.

- Brush each romaine lettuce half with 1/2 teaspoon olive oil.
