FRENCH BISTRO SALAD WITH WARM GOAT CHEESE CROUTES
Warm goat cheese salad is a classic French bistro dish that is easy to make at home. The goat cheese can be cooked either on the stove or in the oven.

Steps:
- Gather the ingredients.
- Cut goat cheese into 8 to 10 disks.
- Add panko or bread crumbs into a shallow bowl.
- Press goat cheese disks into panko. Flip disks to make sure both sides are completely covered and roll edges through panko as well.
- Set coated goat cheese on a baking tray. Place platter in freezer for 15 to 30 minutes. This allows the croutes to set prior to cooking.
- Tear lettuce into bite-size pieces, wash and dry lettuce , and set aside while goat cheese sets. If using herbs in addition to lettuce, wash, dry, and prepare them for salad.
- Whisk together olive oil, vinegar, and mustard in a large salad bowl. Add salt and pepper to taste and add clean lettuce to bowl.
- Heat vegetable oil in a large frying pan over medium-high heat. Add goat cheese rounds. Cook, without disturbing, until they're brown on one side. Flip and cook until they're brown on the second side. Remove from heat and drain on a paper towel-lined plate.
- Toss salad gently to coat lettuce thoroughly with dressing. Divide salad between four salad plates. Top each salad with 2 or 3 goat cheese croutes and serve immediately.

WARM GOAT CHEESE

- Slice the goat cheese into 12 (1/2-inch-thick) slices. Dip each slice into the egg wash and then into the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a baking rack set on a sheet pan and chill for at least 15 minutes.
- Heat the oil and butter in a medium saute pan over medium-high heat. Add the goat cheese slices and cook on both sides until browned on the outside but not melted inside.
WARM GOAT'S CHEESE ON TOAST AND LETTUCE
One of the most popular classics, though very quick and simple to make.If you love goat cheese this is a treat.

Steps:
- Wash and dry the lettuce ; on chopping board, crumple a few leaves together in your hand and cut thin strips with a knife on a chopping board. Share them among the individual dishes.
- Put one goat cheese on each bread slice and pre-heat oven on grill position.
- Make your vinaigrette : In a bowl mix salt, pepper, and mustard ; solwly add the vinegar and then the oil, always mixing.
- When ready to serve, put the toast and cheese under oven grill for about 5 to 10 minutes ; the cheese should begin to get warm and slightly melt ; in the meantime, pour a bit of vinaigrette on the lettuce strips of each dish.
- When cheese is ready, put the toast on lettuce and serve right away.
- Decorate with a walnut half or parsley.
- I used a roll of Goat cheese and cut thick slices.

GOAT CHEESE TOASTS

- Preheat the oven to 375 degrees F.
- Arrange the bread slices on 2 heavy large baking sheets. Brush olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
- Blend the goat cheese and cream cheese in a food processor until smooth and creamy. Add the parsley, thyme, and lemon peel. Using the on/off button, pulse just to blend. Season with salt and pepper, to taste. Spread the cheese mixture over the crostini. Sprinkle with the olives, chives, and more pepper. Arrange the toasts on a platter and serve.
- Do-Ahead Tip: The crostini and cheese mixture can each be prepared 2 days ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese mixture. Let the cheese mixture stand at room temperature for 1 hour to soften slightly before spreading over the crostini.

- Preheat broiler.
- Cook shallot and garlic in 3 Tbsp. oil in a 12-inch skillet over medium heat, stirring, until softened, about 2 minutes. Add tomatoes, red peppers, and 1 tsp. each kosher salt and pepper and cook, stirring, until tomatoes are softened and juicy, about 5 minutes.
- Transfer mixture to a 1 1/2-2 qt shallow baking dish and arrange cheese over top and drizzle with remaining 1 Tbsp. olive oil. Broil until cheese is softened and lightly charred, 3-5 minutes.

- Preheat the oven or toaster oven to 375°F (190°C). Arrange the toasts on a small rimmed baking sheet. - Toast nuts: Spread nuts in a layer on a tray. Toast in a 180C / 375F oven for around 5 minutes until they are lightly browned and smell toasty. Immediately transfer to a small bowl to cool.
