SWEET CHERRY TOMATO AND SAUSAGE BAKE
There are so many things I love about this dish: it's all cooked in 1 pan; we're using more robust herbs like thyme, rosemary and bay with the tomatoes, which work really well; the half-roasted, half-stewed fresh tomatoes turn into a lovely rich and chunky sauce which is miles better than anything you can get if using canned tomatoes; and we're roasting the sausages, which I think is far better than frying or broiling them. Try to buy the best fresh coarsely ground sausages you can. PS Any leftovers can be chopped up and made into a wonderful chunky pasta dish, using penne or rigatoni, the next day.

- Preheat the oven to 375 degrees F. Get yourself an appropriately sized roasting pan, large enough to take the tomatoes in 1 snug-fitting layer. Put in all your tomatoes, the herb sprigs, oregano, garlic and sausages. Drizzle well with extra-virgin olive oil and balsamic vinegar and season with salt and pepper. Toss together, then make sure the sausages are on top and pop the pan into the oven for half an hour. After this time, give it a shake and turn the sausages over. Put back into the oven for 15 to 30 minutes, depending on how golden and sticky you like your sausages.
- Once cooked, you'll have an intense, tomatoey sauce. If it's a little too thin, lift out the sausages and place the pan on the stove to cook it down to the consistency you like - I tend to make mine quite thick - then put the sausages back in. Check the seasoning and serve either with a good-quality loaf of bread warmed through in a low oven for 10 minutes (great for mopping up the sauce!) or with mashed potato, rice or polenta, a green salad and a nice glass of wine.

- Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
- In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
- In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
- Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

SWEET TOMATO CASSEROLE

- 1. Rip bread into approximately 1-inch bite-sized pieces and put into baking dish. Mix tomato paste with boiling water, brown sugar, salt and melted butter together over low heat. Once it is completely melted, while constantly stirring, bring to a rolling boil until you see bubbles appearing. Pour bubbling mixture over bread, coating thoroughly. You want the tomato mixture to get to the bottom of the baking dish. If needed, gently mix together bread and tomato mixture. If you feel you need a bit more bread, add it in. Bake in 350 degrees over for 30 minutes until lightly brown on top.
THE BEST SWEET POTATO CASSEROLE
We opted for a nutty crumb topping over marshmallows to create a pleasantly crunchy contrast to the creamy and soft mashed sweet potatoes. - For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.

- Preheat the oven to 400 degrees F.
- Toss the potato, yam, bell pepper, carrots, and 2 tablespoons of olive oil in a 13 by 9 by 2-inch baking dish to coat. Sprinkle with salt and pepper and toss until coated. Spread vegetables evenly over the bottom of the pan.
- Arrange the onion slices evenly over the vegetable mixture. Arrange the zucchini over the onion. Drizzle with 2 tablespoons of oil. Sprinkle with salt and pepper. Arrange the tomato slices over the zucchini.

SWEET TOMATO CASSEROLE
This is a southern dish that I serve with breakfast or brunch. Cut the bread and onion the night before to save some time in the morning. This recipe makes enough to serve a large group, but is easy to scale down. The can of tomatoes wouldn't come up on the recipe, but I use a #10 can, 6lbs, 6oz, the largest one there is.

- Crush the tomatoes into bite sized pieces. ( I leave them in the stainer and squeeze by hand until they are broken up to small enough pieces.).
- Melt the butter in a large sauce pan, then add the onions, cook until softened.
- Stir in the remaining ingredients and transfer to a large baking dish. (I use a half hotel pan.).
- Cover with aluminium foil and bake at 350 for 45 minutes. Let cool for about 1 0minutes before serving.
