Steps:

  • Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
  • In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

1 head garlic, halved crosswise
1 bay leaf
1 teaspoon black peppercorns
Kosher salt
2 to 4 tablespoons unsalted butter
Freshly ground black pepper

Steps:

  • Put the potatoes, garlic, bay leaf, and peppercorns in a large saucepan, add cold water to cover by about an inch and season generously with salt,. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size.
  • Drain and discard the garlic, bay leaves, and peppercorns. Halve the potatoes, if large, toss with the butter and season with salt, and pepper, to taste. Keep warm.

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
  • Enjoy!

1/2 Tbsp sea salt for boiling potatoes + 1/2 tsp more for seasoning the sauce
1 Tbsp olive oil or butter
1/2 medium onion (finely diced)
1 garlic clove (pressed)
3/4 cup heavy whipping cream
1/4 cup fresh dill (chopped)

Steps:

  • How to cook new potatoes:
  • Scrub each potato clean with a scouring pad (or the abrasive side of a dish sponge). New potatoes have a very thin skin. You don't have to scrub all of it off, just get at least half of it off.
  • Leave bite-sized potatoes whole and cut larger ones in halves or quarters so they are about 1" thick pieces. Place potatoes in a pot and cover with cold water. Bring to a boil, add 1/2 Tbsp salt and boil for 15-20 minutes or until easily pierced with a fork. Drain potatoes.
  • In a separate pan, add 1 Tbsp olive oil. Add finely diced onion and saute over medium heat until golden and soft. Add 1 pressed garlic clove and sauté another minute, stirring constantly. Add 3/4 cup heavy whipping cream and 1/2 tsp salt, or add salt to taste, bring to a boil and let simmer an additional 2 minutes. Stir in 1/4 cup chopped fresh dill then remove from heat and pour sauce over potatoes. Toss potatoes in sauce until evenly coated. Cover with lid to keep warm until ready to serve.

Garlic powder
1 tbsp olive oil
2 to 4 russet potatoes or 4 to 6 baby potatoes
6 tbsp of unsalted butter that should be soft (Each tbsp for the steak and 2 for cooking potatoes)
1 tbsp of Italian herbs
1 tbsp of fresh thyme
1 tbsp of fresh parsley

  • Let the oven preheat at 400 degrees.

HASSELBACK ROAST NEW POTATOES

12 new potatoes
4 garlic cloves, crushed
75g/2¾oz warm butter
2 tbsp chives, chopped
1 tbsp olive oil

Steps:

  • Put the potatoes in a pan of cold, salted water, then bring to the boil. Cook for 10 minutes, then drain and leave to cool and dry.
  • Meanwhile, mix together the garlic and butter. Set aside.
  • Preheat the oven to 220C/200C Fan/Gas 7.
  • Put the potatoes, one at a time, onto a wooden spoon. Starting at one end, cut across their width with a sharp knife, making sure the knife doesn't go all the way through.
  • Arrange on a roasting tray and coat in the garlic butter. Roast for 25 minutes, then remove from the oven and lightly squash the potatoes with the side of a knife. Increase the oven to 240C/220C/Gas 8.
  • Drizzle the potatoes with the olive oil and sprinkle with salt. Return to the oven for another 10-15 minutes, until golden and crisp.
  • Serve the potatoes with the chives scattered over.

1 sprig thyme
6 white peppercorns
1 bay leaf
1 lemon
4 x 450g/1lb live lobsters
50g/1¾oz butter
450g/1lb new potatoes
salt and freshly ground black pepper
1 tsp English mustard
2 tbsp white wine vinegar
4 tbsp olive oil
4 tbsp vegetable oil
4 little gem lettuce, washed and halved
1 large bunch watercress, washed
225g/8oz butter
1 shallot, finely chopped
4 garlic cloves, crushed
12 cooked whelks, chopped into small dice
6 tbsp parsley, chopped

Steps:

  • Put the lobsters in the freezer for two hours to put it into a torpid state. Bring a large pot of water to the boil. Add the salt, thyme, white peppercorns and bay leaf. Cut the lemon in half, squeeze the juice into the pan then add the halves of lemon too.
  • Push the tip of a large, sharp, heavy knife or skewer into the lobsters at the point where a cross forms in the shell on its back, then lower into the boiling water and bring back to the boil. Boil for five minutes, then remove the pan from the heat. Leave the lobsters in the water for another five minutes, then remove from the pan and set aside to cool.
  • Gently cook the potatoes in boiling water for 10-15 minutes until tender. Drain and season with salt and pepper.
  • Cut the lobsters in half lengthways. Take out the tail meat, cut in half lengthways again and remove the intestinal tract. Take off the claws, removing the meat, leaving the carcass whole and clean.
  • In a frying pan, melt the butter and gently warm through the lobster meat.
  • For the garlic butter, melt the butter in a pan over a low heat. Gently fry the shallot and garlic without browning them, then add the whelk meat. When warmed through, add the parsley.
  • To finish the salad, mix the mustard and vinegar together in a bowl, then whisk in the oils and season.
  • Dress half of the little gems in the serving bowl. Shred the remaining lettuces, mix with the watercress and add to the serving bowl (do not dress until serving).
  • When you are ready to serve, put the meat from the claws in the head space of the shells and the tail meat back in the shells.
  • Put the lobsters onto plates. Put the potatoes in the middle of the plates, pour the garlic butter over the lobsters and serve with the dressed salad.
