These are the BEST green beans you will ever have. This recipe can be altered to your liking. I throw bacon in and omit the chicken for a side dish. Makes wonderful leftovers, but there are never any unless I eat them alone.

2 tablespoons olive oil
1 pound skinless, boneless chicken breast halves - diced
1 tablespoon minced garlic, or to taste
¼ cup thinly sliced onion
12 ounces fresh or frozen green beans
¼ cup grated Parmesan cheese
3 tablespoons heavy cream

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Add garlic and onion, and reduce the heat to medium. Cook and stir just until fragrant. Mix in the green beans, cover and cook to your desired doneness, at least 5 minutes.
  • Uncover, and stir in the cream and cheese just until everything is coated. Remove from the heat and enjoy.

2- 2 ½ lbs. boneless, skinless chicken breasts ((I used 3 large chicken breasts that weighed ¾ lb. each))
1 small sweet onion, thinly sliced
1 (16 oz) bag frozen cut green beans (about 3 1/3 cups total)
1 lb. baby red potatoes, halved or quartered ((depending on the size of the potatoes))
1 stick (½ cup) butter, melted
1 teaspoon seasoned salt ((such as Lawry's))
1 (1 oz) packet dry Italian salad dressing and seasoning mix

Steps:

  • Preheat oven to 400 degrees F. Spray a large baking dish with cooking spray.
  • Spread the sliced onion in the bottom of the prepared dish. Place chicken in the middle of the dish on top of the onion. Arrange green beans on one side of the chicken and potatoes on the other side.
  • In a small bowl, combine melted butter and seasoned salt. Drizzle over chicken, green beans and potatoes. Sprinkle dry Italian dressing mix over top.
  • Cover dish with foil and bake for 30 minutes. Remove cover and continue baking for 20 more minutes, or until potatoes are tender and chicken reaches an internal temperature of 165 degrees F.

5 small bone-in chicken thighs (approximately 2 pounds)
1 pound small red potatoes (halved)
1 pound fresh green beans
1/4 cup olive oil
2 tablespoons fresh lemon juice
2 cloves garlic (minced)
1 1/2 teaspoons kosher salt
1 teaspoon dried basil *
1 teaspoon dried oregano *
1 teaspoon dried thyme *
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400°F. Place the chicken, potatoes, and green beans on a large baking sheet.
  • Stir the olive oil, lemon juice, garlic together with all of the spices. Drizzle the spice mixture over the meat, potatoes, and vegetables. Use your hands to stir the pieces around a bit and make sure everything is well coated. Be sure to leave the chicken skin-side up.
  • Place the pan in the center of the oven and roast for approximately 50 minutes, until the chicken is golden brown and cooked through. The potatoes should be tender and slightly crisp and the green beans should be browned, crisp, and somewhat shriveled. Enjoy!

1 1/2 pounds boneless, skinless chicken breasts (about 2 large breasts)
3 tablespoons honey
3 tablespoons toasted sesame oil
Kosher salt and freshly ground black pepper
Three 3-ounce packages dried ramen noodles, flavor packets discarded
3 tablespoons seasoned rice vinegar
One 14.5-ounce can cut green beans, well drained
2 cups shredded red cabbage
3/4 cup fresh mint or cilantro leaves (or a combination), roughly chopped
1 carrot, grated
1/4 cup chunky peanut butter
1 to 2 teaspoons sriracha
1/4 cup honey-roasted peanuts, chopped

Steps:

  • Preheat the broiler. Line a baking sheet with foil.
  • Toss the chicken breasts with 1 tablespoon of the honey, 1 tablespoon of the sesame oil, 1/2 teaspoon salt and several grinds of black pepper in a medium bowl. Transfer the chicken to the prepared baking sheet and broil, flipping halfway, until cooked through, about 10 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the ramen for as long as specified on the package directions, then drain in a colander and set aside.
  • Whisk 2 tablespoons of the rice vinegar with 1 tablespoon sesame oil in a large bowl. Add the green beans, cabbage, herbs and carrots and toss to coat.
  • Whisk together the peanut butter, sriracha, 1/3 cup warm water, the remaining 2 tablespoons honey and remaining 1 tablespoon each sesame oil and vinegar in a large bowl until well combined. Season with salt. Add the noodles and toss to combine.
  • Thinly slice the chicken. Divide the noodles among 4 bowls and top with the green bean slaw, chicken and peanuts.

½ tbsp vegetable oil
2 skinless chicken breasts, sliced
200g green beans , trimmed and halved crosswise
thumb-sized piece of ginger , peeled and cut into matchsticks
2 garlic cloves , sliced
1 ball stem ginger , finely sliced, plus 1 tsp syrup from the jar
1 tsp cornflour , mixed with 1 tbsp water
1 tsp dark soy sauce , plus extra to serve (optional)
2 tsp rice vinegar
200g cooked egg noodles

Steps:

  • Heat the oil in a wok over a high heat and stir-fry the chicken for 5 mins. Add the green beans and stir-fry for 4-5 mins more until the green beans are just tender, and the chicken is just cooked through.
  • Stir in the fresh ginger and garlic, and stir-fry for 2 mins, then add the stem ginger and syrup, the cornflour mix, soy sauce and vinegar. Stir-fry for 1 min, then toss in the noodles. Cook until everything is hot and the sauce coats the noodles. Drizzle with more soy, if you like, and serve.

This green bean mushroom and chicken skillet is prepared with fresh ingredients only, without any canned cream soups.

1/2 lb. French green beans
1 Tbsp olive oil
1 Tbsp butter
4 boneless skinless chicken thighs (thinly sliced)
Salt and lemon pepper ((to taste))
4 cloves garlic (minced)
1 tsp onion powder
10 oz. mushrooms
½ cup chicken broth (unsalted)
½ cup heavy cream ((or half-and-half + 1 Tbsp flour for lighter version))
2/3 cup grated Parmesan cheese (more for garnish)

Steps:

  • Arrange green beans in a microwave-safe dish with 1/2 cup (125ml) water. Cook in the microwave for 8-10 minutes, until almost done but still crisp.
  • In a large skillet, add olive oil and butter to the pan and heat it over medium high heat. When the pan is hot, add sliced chicken, season it with salt and lemon pepper right in the pan, and cook for about 4 minutes on each side until chicken slices are slightly browned. Next add garlic, onion powder, precooked beans and mushrooms. Cook for 4 to 5 minutes, stirring regularly, until cooked to your liking.
  • Add chicken broth and heavy cream and reduce the sauce for a couple of minutes, until slightly thickened.
  • Next add parmesan cheese into the pan. Stir until cheese is incorporated with the sauce. Taste and season with more salt and pepper.
  • Serve warm and garnish with extra cheese, if desired.

1 12 oz. package mild Italian chicken sausage ( or sausage of choice)
4 cups green beans (~ 1 lb. green beans)
4 cups cauliflower florets (~ 1 small head cauliflower)
1 large bell pepper (any color)
2 Tbsp. olive oil
2 tsp. garlic powder
2 tsp. onion powder
1/4 tsp. kosher salt
1/4 tsp. pepper

Steps:

  • Heat oven to 400 degrees Fahrenheit.
  • Start by thoroughly rinsing and drying 1 small head of cauliflower, 1 bell pepper, and 1 lb. green beans. Trip the ends of the green beans.
  • Once the green beans are trimmed, chop the beans into halves or thirds (depending on your preference). This yields roughly 4 cups of chopped green beans.
  • Break 1 small head of cauliflower into florets. Cut any larger pieces into smaller florets, making sure they are all relatively the same size to ensure even cooking. This yields roughly 4 cups of chopped cauliflower.
  • Remove the stem, seeds, and membranes from 1 bell pepper (any color). Cut the pepper into chunks.
  • Place the green beans, cauliflower, and bell peppers onto a large sheet pan (I find that either 11x17" or 12x16" works great).
  • Drizzle the vegetables with 2 tablespoon olive oil and sprinkle with 2 teaspoon each of garlic powder and onion powder. Sprinkle ¼ teaspoon kosher salt and pepper over the top. Toss the veggies in the olive oil and spices until completely coated.
  • Cut 1 12 oz. package of sausages into large chunks. Place the sausages over the top of the vegetables, being sure not to overcrowd the pan.
  • Place the sheet pan in the oven and roast for 30 minutes or so, or until the vegetables are softened and golden brown on the outside. The sausages should be fully cooked and slightly crispy. (The safe internal temperature for sausage is 160 degrees Fahrenheit and can use checked using a food thermometer).
  • Remove the pan from the oven when finished.
  • To Serve: Serve with Parmesan cheese and fresh herbs such as basil or parsley (optional). Other serving suggestions include pickled peppers, onions, or Italian giardiniera (optional).
