CHEESY BUFFALO CHICKEN CASSEROLE

Number Of Ingredients 11

3-4 lbs boneless skinless chicken breasts, cooked and cubed (season with a little pepper and salt before cooking)
1 1/2 lbs cooked pasta (I used pasta shells)
12 strips of bacon, cut in pieces
2/3 cup of buffalo sauce
1 large clove of garlic, minced
2 cups milk
3 tbsp butter
2 cups sharp cheddar cheese, shredded
1 1/2 cups mozzarella cheese, shredded
2 tbsp flour
1 cup crushed crackers (can be any kind you like - cheese crackers would be great but you can also use plain soda crackers or vegetable crackers)

Steps:

  • Assemble your ingredients. Make sure that your chicken breasts have been cooked and cubed (season with salt and pepper and cook in the oven at 425°F for 35-40 minutes)
  • Begin cooking your pasta according to the package instructions while you work on the rest of the recipe.
  • Preheat the oven to 350°F.
  • Cook the bacon pieces in a large fry pan until crisp and set aside on paper towel to drain. Drain most of the fat from the pan but leave a small amount in the pan. Toss the chicken in the fry pan on low heat for about 2 minutes. Remove the chicken from the pan and set aside with the bacon.
  • In a medium pot melt the butter. Add the minced garlic and cook for about 1 minute. (Don't let the garlic get brown though or it will be bitter.)
  • Add the flour and whisk until combined.
  • Pour in the buffalo sauce and combine.
  • Pour the milk into the pot and bring to a boil. Once it reaches a boil lower the heat to Minimum and add the cheddar cheese and 1/2 cup of mozzarella cheese. Stir until the cheese is melted and combined and sauce has thickened. Set aside.
  • Once the pasta has been cooked and drained, pour them into a12″-15″ glass casserole dish (or other large casserole dish).
  • Combine the sauce, pasta, chicken and bacon in the casserole dish making sure everything is evenly distributed.
  • Sprinkle the cracker crumbs over top of the casserole and then sprinkle with the remaining mozzarella cheese.
  • Place into the oven uncovered for about 15 minutes until the casserole is heated through and the cheese is melted on top.

½ cup ranch dressing
⅓ cup Buffalo wing sauce
2 tablespoons water
2 cups shredded Colby Jack cheese

2 cups crushed corn chips (such as Tostitos®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil; add chicken tenders. Cook until no longer pink in the center and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 10 to 15 minutes. Drain and cool until easily handled, about 5 minutes. Shred chicken with 2 forks.
  • Beat cream cheese in a blender until smooth. Add ranch dressing, Buffalo wing sauce, and water; blend until smooth. Mix in shredded chicken and Colby Jack cheese.
  • Spread rice in a 9x13-inch baking dish. Pour Buffalo chicken mixture on top. Sprinkle Cheddar cheese on top. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until Cheddar cheese is melted and bubbly, about 45 minutes. Sprinkle corn chips on top.

4 ounces cream cheese, softened
½ cup milk
2 tablespoons buffalo wing sauce (or more, to taste)
1 (1 ounce) packet dry ranch seasoning and salad dressing mix
2 cups cooked, shredded chicken (I use a rotisserie chicken for this step)
6 ounces (about 2 cups) dry rotini pasta, cooked and drained
1 stalk celery, sliced (about ½ cup)
½ cup (about 4 ounces) grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
  • In a separate bowl, stir together condensed soup, softened cream cheese, milk, buffalo wing sauce, and ranch seasoning. Gently fold in chicken, cooked pasta and celery.

This recipe was passed to me by a friend whose husband loved Buffalo wings and baked potatoes. I made it for the first time for my crew of boys and it was a big hit. Being a single working mom and short on time, I made some shortcuts to the recipe and to my surprise, it tasted even better.

6 tablespoons hot pepper sauce
⅓ cup olive oil
2 tablespoons garlic powder
1 tablespoon freshly ground black pepper
1 tablespoon paprika
1 ½ teaspoons salt
8 potatoes, cut into 1/2-inch cubes
2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes
2 cups shredded Mexican cheese blend (such as Great Value Fiesta Blend®)
1 cup crumbled cooked bacon
1 cup diced green onions

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat hot pepper sauce, olive oil, garlic powder, black pepper, paprika, and salt in a large skillet over low heat, stirring until thoroughly combined. Turn off heat. Toss potatoes in batches with the hot pepper sauce mixture to coat and use a slotted spoon to transfer potatoes to the prepared baking dish. Leave remaining sauce in skillet. Mix chicken into remaining sauce and allow to marinate while potatoes roast.
  • Bake potatoes until tender inside and crisp and brown outside, 45 to 50 minutes, stirring every 10 to 15 minutes.

8 -10 medium potatoes, cut into 1/2-inch cubes (I leave the skin on)
1/3 cup olive oil
1 1/2 teaspoons salt
1 tablespoon fresh ground pepper
1 tablespoon paprika
2 tablespoons garlic powder
6 tablespoons hot sauce
2 cups fiesta Mexican blend cheese or 2 cups monterey jack and cheddar cheese blend
1 cup crumbled cooked bacon
1 cup diced green onion

Steps:

  • Preheat oven to 500F (This is NOT a typo, 500F is correct!) .
  • In a large bowl mix together the olive oil, hot sauce, salt, pepper, garlic powder & paprika.
  • Add the potatoes and stir to coat.
  • Add the potatoes to a greased baking dish.
  • When scooping the potatoes into the baking dish, leave behind any extra olive oil/hot sauce mix.
  • Add the diced chicken to the "left behind" olive oil/hot sauce mix and stir to coat all the chicken. Allow to marinate as the potatoes bake.
  • Roast the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and nice and crispy on the outside.
  • Once the potatoes are fully cooked add the marinated chicken.
  • Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400°F.
  • In a large bowl mix all the topping ingredients together.
  • Top the raw chicken with the topping.
  • Bake 15 minutes or until until the chicken is cooked through and the topping is melted and bubbly delicious.
  • Serve with extra hot sauce and/or ranch dressing.
