2 tablespoons chopped shallot (about 1)
1 garlic clove (chopped)
¼ cup extra-virgin olive oil
2 tablespoons honey or maple syrup
2 tablespoons white wine vinegar or rice vinegar
1 tablespoon fresh lemon juice
½ teaspoon fine sea salt
5 ounces prewashed arugula greens
⅓ cup thinly sliced red onion
1 green or red pear (cored and sliced into 1/4" half-moons)
⅓ cup toasted walnuts*
2 ounces soft goat cheese (crumbled)
2 ounces blue cheese (crumbled)
½ cup mixed microsprouts (optional)
Freshly ground black pepper to taste

Steps:

  • Combine all ingredients in a blender or mini food processor until very smooth.
  • Put the greens in a large bowl or on a platter. Top with the remaining ingredients.
  • Drizzle with 2 or 3 tablespoons of the dressing and toss gently to coat. Serve the salad with additional dressing to taste on the side.

4 firm, ripe pears , sliced lengthways into 1cm slices
2 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp honey
250g bag mixed salad leaf
150g pack blue cheese , crumbled
crusty bread , to serve (optional)

Steps:

  • Put the pears in a bowl and drizzle with 1 tsp of the oil. Heat a griddle pan, then cook the pears, in batches, for 1 min on each side. Set aside to cool.
  • Mix the remaining oil, vinegar and honey. Toss the pears, leaves and cheese, divide between 4 plates and drizzle with the dressing. Serve with bread, if you like.

1 (11-ounce) log plain or herbed Montrachet
2 extra-large egg whites, beaten with 1 tablespoon water
Fresh white bread crumbs
2 tablespoons good cider vinegar
2 tablespoons good Champagne vinegar
Pinch sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 extra-large egg yolk
1 cup good olive oil
Enough mixed salad greens for 6 servings
Olive oil and unsalted butter, for frying

Steps:

  • Slice the Montrachet into 12 (1/2-inch-thick) slices. (The easiest way to slice goat cheese is to use a length of dental floss.) Dip each slice into the beaten egg whites, then the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a rack and chill them for at least 15 minutes.
  • For the dressing, place the vinegars, sugar, salt, pepper, and egg yolk in the bowl of a food processor fitted with a steel blade and blend for 1 minute. With the motor running, slowly pour the olive oil through the feed tube until the vinaigrette is thickened. Season, to taste.
  • Toss the salad greens with enough dressing to moisten, then divide them among 6 plates.
  • Melt 1 tablespoon oil and 1 tablespoon butter in a saute pan over medium-high heat until just under smoking. Cook the goat cheese rounds quickly on both sides until browned on the outside but not melted inside. Top each salad with 2 warm rounds and serve.

  • Slice the goat cheese into four 1⁄2" disks (a piece of unflavored dental floss makes this job easy). If the cheese crumbles, use your hands to form it back into disks. Steps:

1 Goat's Cheese Round (approximately 150g per person)
Cos Lettuce
Kalamata Olives, pitted
1 Tomato, Sliced
1 Teaspoon of Garlic
Olive Oil (enough for the salad dressing)
Crack Pepper for serving

Steps:

  • Pre-heat the oven to 190C.
  • Cut the Cos Lettuce up and put it into a serving bowl.
  • Put the Goat's Cheese into the oven onto a tray or any dish. Keep an eye on it every few minutes by putting a knife through the middle to see if it is soft in the middle. You want the Goat's Cheese to be firm on the outside but slightly soft and warm on the inside.
  • Put some olive oil and minced garlic in a small frying pan. Heat for about 15-30 seconds till it is warm. Pour it over the lettuce. Leave a little bit of oil and garlic in the pan.
  • In the pan, heat (not cook) the sliced tomato on both sides and the olives. Then put the sliced tomato and olives on top of the salad. The sliced tomato should be spread round the outer of the salad bowl (so that the Goat's Cheese can be place in the middle)
  • Once the goat's cheese is ready, slide it on top of the salad. Cracked Black Pepper to serve.

1/4 cup extra virgin olive oil (or avocado, grapeseed, canola)
3/4 tsp dijon mustard
2 cloves garlic, chopped
1 tsp honey
Pinch of salt/cracked black pepper
1/2 cup walnuts, chopped
2 tbsp maple syrup
1/4 tsp cinnamon
3-4 pears, sliced
1/2 cup goat cheese, crumbled
4-5 cups lettuce (see above recommendations, I like artisan, spinach, arugula and spring greens)
Optional add in's: Beets, cucumber, avocado, mushrooms, pomegranate seeds.

Steps:

  • Make homemade balsamic dressing by adding all the ingredients to a mason jar. Shake well to incorporate. If you have an immersion blender, blend ingredients together until creamy.
  • To make the candied walnuts, combine all ingredients together in a small bowl. Stir until each walnut is coated. Place nut mixture on medium-low heat in a saute pan. Cook for 2 minutes, stirring frequently being careful not to burn. Remove from heat after 2 minutes and place aside to cool.
  • Layer lettuce, sliced pears and crumbled goat cheese on a serving platter or in a large bowl. Top with cooled candied walnuts and dressing with balsamic dressing prior to serving.

1 egg - beaten
