This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

Number Of Ingredients 8

1 lb ground beef
2 eggs
salt (to taste)
pepper (to taste)
1 onion, chopped (Optional, I usually omit it or use a teaspoon of dried minced onion. You also don't need the whole o)
2 -3 tablespoons ketchup, heaping
1 tablespoon yellow mustard, heaping
1 cup saltine crumbs, crushed. (This is usually most of one sleeve of saltines.)

Steps:

  • Mix all together; I generally use my hands.
  • Form mixture into a loaf shape.
  • Put in a baking dish (I use a pie plate).
  • Bake at 350 for 1 hour.
  • NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the ground beef, sausage, bread crumbs, onion, mushrooms, soup and egg. Mix together well and place in a 5x9 inch loaf pan.
  • Bake at 375 degrees F (190 degrees C) for 50 minutes.

1 medium onion, chopped
2 teaspoons canola oil
2 large eggs, lightly beaten
1/3 cup 2% milk
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
2/3 cup finely crushed cheese crackers
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1-1/2 pounds ground beef
1/2 pound ground pork
3/4 cup ketchup
1/4 cup packed brown sugar

Steps:

  • Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. Crumble beef and pork over mixture and mix well. Shape into a loaf; place in a greased 11x7-in. baking dish., Bake, uncovered, at 350° for 1 hour. Combine ketchup and brown sugar; spread half of sauce over meat loaf. Bake 15-20 minutes longer or until no pink remains and a thermometer reads 160°. Let stand for 10 minutes before slicing. Serve with remaining sauce. Freeze option: Bake meat loaf without sauce. Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf and place in a greased shallow baking pan. Prepare sauce as directed; spread half of sauce over meat loaf. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Serve with remaining sauce.

There are probably a thousand meatloaf recipes on this site. This was the one that my grandmother used to make. It's not the typical brick-of-meat variety; it almost falls apart on the plate. I make this every once-and awhile, and think of granny. Meatloaf is comfort food at its finest.

1 1/2 lb freshly ground sirloin
1/2 c ketchup, homemade, if possible
4 Tbsp ketchup, homemade, if possible
1 1/2 c panko bread crumbs
1 1/2 Tbsp yellow mustard
3 Tbsp sweet relish
4 Tbsp milk
1 medium egg, beaten
1 medium yellow onion, cut in half, pole to pole
1 Tbsp vegetable oil
1/4 c brown sugar
2 Tbsp brown sugar
1 Tbsp worcestershire sauce

Steps:

  • 1. Chef's Note: Homemade Ketchup When I talk about using ketchup in this recipe, I would really hope you choose a homemade variety. Otherwise you are making a condiment out of a condiment.   • 2. Shred one of the onion halves using the large holes of a box grater.
  • 3. Using a few paper towels, press against the grated onion, to absorb most of the onion juice, and reserve the onions.
  • 4. Thinly slice the other onion half, and reserve.
  • 5. Mix the 1/2-cup ketchup. 1/4-cup brown sugar, and the Worcestershire, in a small bowl, and reserve.
  • 6. In a large bowl, combine the ground sirloin, breadcrumbs, mustard, sweet relish, whole milk, shredded onion, egg and 4 tablespoons of ketchup. Mix until just combined. Do not over mix.
  • 7. Chef's Note: The best tools of the chef are his/her hands... mix with your hands, but don't over do it.
  • 8. Chef's Tip: Why Panko Breadcrumbs? Traditional breadcrumbs, unless you're making a panade, will absorb too much of the liquid and make for a much dryer meatloaf. Panko breadcrumbs will not absorb much liquid, and therefore create a juicer meatloaf with a distinct mouthfeel.
  • 9. Place the meatloaf mixture into a loaf-size pan.
  • 10. Chef's Tip: My favorite pan for this type of baking is the type that has the insert that raises the meatloaf off the bottom of the pan. This keeps the meatloaf from cooking in its own grease.
  • 11. In a skillet, add the 1-tablespoon of oil, and heat over medium high heat until the oil is shimmering. Add the sliced onions, and the 2 tablespoons of brown sugar.
  • 12. Cook onions until softened, and just beginning to brown, about 5 to 8 minutes.
  • 13. Place rack in bottom third of oven, and preheat to 355f (180c).
  • 14. Spread the ketchup/brown sugar/ Worcestershire mix evenly over the top of the meatloaf.
  • 15. Add the cooked onions to the top, and cover the pan with a sheet of aluminum foil.
  • 16. Bake for 35 minutes, in the preheated oven, and then remove the foil.
  • 17. Increase the temperature to 375f (190c), and bake an additional 25 minutes.
  • 18. Chef's Note: The internal temperature of the meatloaf should be 155f (68c). Once removed from the oven, and allowed to rest, the internal temperature will raise to 160f (71c), which is safe for beef products. If you allow the temperature to rise much above this recommendation, it will begin to dry out the meatloaf.
  • 19. Serving Tip: To make this dish even homier, I like to serve it with some rustic smashed potatoes, and maybe some green beans... enjoy.
  • 20. Keep the faith, and keep cooking.

4 tablespoons Worcestershire sauce
1/2 cup grated onion
2 eggs, slightly beaten
2 cups breadcrumbs
1 cup milk
1 cup tomato juice (for topping) or 1 cup ketchup (for topping)

  • Mix everything together very well and shape into 2 loaves.
  • You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.

Steps:

  • 1. Preheat oven to 350 degrees. Mix all ingredients well and shape into a loaf. Place in a bread pan. Bake for 35 minutes. Remove meatloaf briefly from oven and drain as much grease from pan as possible. Top meatloaf with 2-4 tablespoons more catsup. Return to oven and continue to bake for 10-15 more minutes or until done.

1 pound ground beef, 80/20
1 tablespoon Montreal Steak Seasoning
1 tablespoon garlic, minced
1/4 cup minced onions
2 eggs
3/4 cup milk
3/4 cup old fashioned rolled oats (regular or gluten free oats)
1 tablespoon Worcestershire sauce
2 tablespoon ketchup
1 15-ounce can tomato soup, divided

Steps:

  • Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it's OK. Some brands of oats suck up all the milk while others do not.
  • In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 tablespoon of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more tablespoon of oats (don't worry if they aren't soaked). If too dry, add in the milk 1-2 tablespoon at a time. If you have no milk left as your oats sucked it all up just add more milk or water. You want the mixture to be pretty moist but firm enough to hold a shape.
  • In the bowl gently press together.
  • Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 30 minutes, remove from the oven, and spread the remaining tomato soup on top of the meatloaf.
  • Continue baking for another 30 minutes.
  • Remove from the oven and allow to rest for 10-15 minutes before serving.

Steps:

  • Preheat oven to 350 F.
  • Heat olive oil in a large skillet.
  • Add onions, peppers and celery and saute until tender.
  • Add garlic and cook just until fragrant.
  • Remove from heat and let cool. Set aside.
  • In a large bowl, add breadcrumbs and just enough milk to moisten the crumbs.
  • Add remaining ingredients, except for the beef.
  • Mix these ingredients well.
  • Add the beef. Use your hands to mix it in. Don't be alarmed if the mixture seems a bit too wet at first. Handle the beef as little and as gently as possible to prevent it from becoming tough when baked. Mix JUST until everything is combined.
  • Optional: Fry a tiny piece of the mixture to check the taste and adjust the seasonings if desired.
  • When all of the ingredients are well combined, spoon the mixture into a loaf pan and smooth to an even layer. Set aside.
  • To make the glaze, combine all glaze ingredients and spread half on top of meatloaf.
  • Bake for 30-35 minutes and then top with remaining glaze. ( you don't have to use all of the glaze. You can save some to use when serving the meatloaf of desired)
  • Continue baking for another 30-35 minutes or until internal temperature reaches 160 F. or to your desired (safe) doneness. ( I like to flip the oven to broil for the last few minutes to get the glaze a bit sticky but watch it carefully if you decide to do this)
  • Remove from oven, drain off the fat and let meatloaf rest before slicing. (If meatloaf is steaming hot when you cut into it, it will fall apart)

Steps:

  • Pre heat oven to 350 degrees.
  • Spray a 9 x 5 inch loaf pan with non stick cooking spray.
  • Stir beef, eggs, onion, ketchup, salt and pepper, oatmeal, 1/2 of tomato soup, and 1 Tablespoon Worcestershire sauce with hands (it really is easier that way).

Number Of Ingredients 13

Preheat oven to 375
1 lb. ground beef, grassfed
1 lb. sweet Italian sausage
1 Tbl. garlic puree
1 Tbl. Nutritional Yeast
3 tsp. cajun seasoning mixture
1/3 cup vegetable cream cheese
2 eggs
¼ cup worcestershire sauce
1 ¼ cups breadcrumbs
½ cup ketchup
2 Tbl. gochujang, can substitute sriracha or hot sauce, reduce amount to taste
¼ cup fresh parsley, chopped

Steps:

  • In a large mixing bowl, combine the beef, sausage, garlic, nutritional yeast, cajun seasoning, cream cheese, eggs, worcestershire and breadcrumbs. Work together with a wooden spoon for a few minutes. Then mix together with your hands (make sure they're clean!). Place the meatloaf mixture on a parchment paper covered cookie sheet. Mold into a 'loaf' shape. Create on the top a slight indentation with a 'lip' around it. Combine the ketchup and gochujang sauce and spread on top. Bake in a preheated 375 oven for 30 to 35 minutes. Remove. Loosely cover with foil and let the meat rest about 5 minutes. Sprinkle the parsley on top and serve.

1 medium sized onion (diced)
2 cloves garlic (minced)
1 tablespoon butter
2 pounds ground beef
1 large egg
1 cup panko bread crumbs
1 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon thyme
1 teaspoon kosher salt
1/2 cup ketchup
1 tablespoon brown sugar
1 tablespoon spicy brown mustard

Steps:

  • Preheat oven or grill to 350 degrees F. Line a baking sheet with parchment paper for easy clean up.
  • Melt butter in saute pan over medium heat. Cook onions until fragrant and slightly brown while stirring occasionally, about 3-5 minutes. Reduce heat to low and add garlic, cook for 2-3 minutes. Remove from heat and set aside to cool.
  • In large bowl, combine ground beef, egg, bread crumbs, milk, Worcestershire sauce, thyme, salt and cooked onions and garlic. Use hands to mix well, but try not to over work the meat. Shape into loaf on parchment lined baking sheet. Use sharp knife to cut a criss cross pattern on top.
  • Bake uncovered in the preheated oven 40 minutes. While meatloaf is cooking, combine ketchup with mustard and brown sugar in a bowl. Set aside.

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

2 pounds lean ground beef
1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten
2 tablespoons minced dried onion
¼ teaspoon granulated garlic
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
  • Remove from the oven and spread ketchup over top. Serve with additional ketchup.

2 Tbsp. chopped fresh Italian parsley
1 tsp. dried oregano
1 small onion, finely chopped
4 cloves garlic, minced
¼ cup + 2 Tbsp. Romano cheese, optional
½ cup dried bread crumbs
½ cup ketchup
½ cup egg substitute
1 tsp. black pepper
1 tsp. kosher salt

Steps:

  • In a large mixing bowl, mix together ground beef, parsley, oregano, onion, garlic, optional cheese, bread crumbs, ketchup, egg substitute, pepper, and salt. Roll mixture into a large ball. Place in well-greased 9x13-inch baking dish or roaster, flattening slightly. Bake at 375°F for 1 hour. Keep in oven 5 more minutes with oven off and door closed. Remove meatloaf from oven. Let stand 10 minutes before slicing to allow meatloaf to gather its juices and firm up.

1 1/2 pounds ground beef, or a combination of ground beef and pork
3/4 cup​ quick or old-fashioned oats
1/4 cup chili sauce, or ketchup
1 tablespoon​ Worcestershire sauce
1 1/2 teaspoon salt
1 large​ egg, beaten
3 tablespoons water, or milk

Steps:

  • Preheat the oven to 350 F
  • Heat the oil in a large skillet over medium heat. Add the chopped celery and onion; cook until the vegetables are tender, or for about 7 to 9 minutes, stirring frequently.
  • In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
  • Pack the meatloaf mixture into a 9-by-5-by-3-inch loaf pan or shape it and bake it free-form in a 9-by-13-by-2-inch baking pan or 10-by-15-by-1-inch jelly roll pan.
  • Bake at 375 F for 1 hour.
  • Using 2 spatulas, carefully move meatloaf to a serving plate and slice.
