Steps:
- Heat oil in a medium saucepan over medium-high heat. Add onion, and cook, stirring, until translucent, about 5 minutes. Stir in rice and 2 teaspoons salt. Stir rice until coated with oil, then cook 1 minute. Add water, and bring to a boil. Reduce heat, cover, and simmer until water is absorbed, about 16 minutes. Turn off heat. Let rice stand, covered, 10 minutes.
- Meanwhile, bring a medium pot of water to a boil. Add zucchini, and cook until tender, about 2 minutes. Drain.
- Add zucchini and herbs to rice, and fluff with a fork.

- Beat egg and stir in rice, seasonings and cheese.
- Chill for an hour.
- Shape into balls and roll in bread crumbs.
- Deep fry until golden.
- You can make ahead and store in fridge for 12 hours. Just reheat in a 350 oven.

Steps:
- Heat the butter in a medium saucepan over medium heat. Add the scallions and saute for 2 to 3 minutes. Add the rice and stir until the rice is fully coated with butter.
- Add 3 cups water and bring to a boil. Add the salt and pepper, cover and reduce the heat to a simmer. Cook until the liquid is absorbed and the rice is al dente, 18 to 20 minutes.
- Remove from the heat; fluff the rice with a fork; and stir in the parsley and the lemon zest, if using.
HERBED RICE PUFFS
I found these in a 1970's Betty Crocker cookbook, a simple and tasty use for your leftover cooked rice. Prep time does not include one hour chill time.

- Beat egg; stir in rice, poultry seasoning, salt and cheese. Refrigerate at least one hour. Shape by rounded teaspoonfuls into fifteen balls. Roll in bread crumbs.
- Heat oil (2 to 3 inches) in 2 quart saucepan to 375°. Fry rice balls until golden brown; drain.

RICE PUFF TREATS
A healthier spin on the classic Rice Krispy Treats dessert. To make this as healthy as possible, try to get puffed rice cereal that has 50 or 60 calories per cup.

Steps:
- Spray a 9x12 pan with cooking spray.
- Melt the better spread in a large saucepan over low heat.
- Add marshmallows and stir.
- When marshmallows are almost completely melted, add vanilla.
- Stir until completely melted.
- Mix in rice puffs. stir until well coated.
- Spread the mixture evenly into the pan.
- Press the mixture into the pan with a sheet of wax paper. This will flatten them out.
- Refrigerate for 30 minutes.
- Remove the wax paper, cut with a butter knife.
