- In a large saucepan, heat oil over medium heat; saute garlic 1 minute. Add rice; cook and stir 2 minutes. Stir in broth and herbs; bring to a boil. Reduce heat; simmer, covered, until rice is al dente, about 10 minutes., Stir in frozen vegetables and beans; cook, covered, over medium heat until heated through and rice is tender, 8-10 minutes, stirring occasionally. Stir in spinach until wilted. If desired, serve with lemon wedges.

TEX-MEX BEAN SOUP WITH RICE

- Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Add the garlic, cumin, 1/4 teaspoon salt and a few grinds of pepper; cook until lightly toasted, about 1 minute. Add the tomatoes, black beans, pinto beans and 6 cups water. Bring to a boil, then reduce the heat to medium and stir. Simmer until slightly thickened, about 15 minutes.
- Remove 1/2 cup of the bean mixture to a bowl using a slotted spoon; mash with a fork, then return to the pot along with the rice and 1/4 cup cilantro. Cook until the soup thickens, about 5 more minutes. Season with salt and pepper. Warm the tortillas in a dry skillet or wrap in damp paper towels and microwave; wrap in foil to keep warm.
- Top each serving of soup with the cheese and the remaining 1/4 cup cilantro. Serve with the warm tortillas.

- Place all ingredients in the crock of a slow cooker. Stir gently.
- Place the lid on top and turn on the cooker. Cook for 6 hours on low or 3 hours on high.
- Place all ingredients in the pot of an electric pressure cooker. Stir gently.
- Press the saute button and allow the soup to simmer, for about 20 minutes, stirring occasionally.
- Place all ingredients in a medium stockpot. Stir gently.
- Cook over medium heat, simmering for about 20 minutes, stirring occasionally.
- Serve with toppings.

- Prepare marinated rice by mixing together the ingredients.
- Let marinate at room temperature, if making soup right away. Otherwise, cover, refrigerate, and marinate up to 1 day. Let rice come to room temperature before serving.
- Rinse beans in a strainer until canning juices run clear.
- Heat olive oil over medium high, and add onions. Saute for a few minutes.
- Add jalapenos, bell peppers and garlic; cook until softened.
- Stir in spices.
- Add broth, vinegar and beans.
- Cover and simmer 30 minutes (or longer, if desired), stirring occasionally.
- Taste for salt and spiciness. Add cayenne pepper, if more heat is desired.
- Serve soup in bowls over a scoop of rice. Top with cilantro and yogurt, if desired.
- Store left-over rice separately from soup, so liquid will not all be absorbed.

- Wash mung beans and rice until water is clear.
- Using a blender, put ginger, coconut, cilantro and 1/2 cup of water, blend till liquefied.
- Heat saucepan on medium heat, add ghee, cinnamon, cloves, cardamom, peppercorns and bay leaves.
- Add blended items to spices, then turmeric and salt, stirring until lightly browned.
- Add mung beans and rice and mix well, pour 6 cups of water, cover, bring to a boil (let boil for 5 minutes).
- Turn heat down low and cook, lightly covered, until mung and rice are soft (25-30 minutes).

ULTIMATE BLACK BEAN AND RICE SOUP
When I had my liver transplant in Denver, CO there was a Gunther Toody's Diner across the street from the hotel where I stayed. There was a Black Bean Soup on the menu that I just loved. After coming home to Oklahoma, I have searched, in vain, for a Black Bean Soup that came even close to what the diner served. I finally searched recipes and have come up with my version that best copies Gunther Toody's.

- In Dutch Kettle, saute onion, celery, carrot, garlic, red pepper and jalepeno pepper in olive oil until soft.
- Add beans, tomatoes, corn, water, boullion broth and spices. Simmer for 30-40 minutes.
- Add instant rice to mixture. Mix well. Continue cooking 5 minutes or until rice is tender.
- Chop fresh cilantro and stir into mixture before serving. Could top with a dollop of sour cream on top and a squeeze of lime.
- Use Hunts diced tomatoes with green chilies or a similar brand. Rotel comes in a 10.5 oz can and is much spicer than Hunts. So if you use Rotel, pair it with a can of regular diced tomatoes.

- Add ham bone to Dutch oven pan, or similar. Cover ham bone in water, and boil until water is reduced by at least half.
- Remove bone from water, and pull meat from bone; chop meat. Put meat back into water. Add beans w/ flavor packet, rice, chopped peppers, and diced onions. Add enough water to cover everything over. Cook per instructions on the bean package, or until beans are thoroughly cooked. Add salt and pepper, to taste.
- Serve, while warm, with cornbread or hot rolls. This usually makes enough leftovers for at least one more meal, for our family of 4.
