Steps:
- Heat grill to medium. Rub the chicken all over with 1 tsp of the olive oil and the paprika. Cook for 4-5 mins each side until lightly charred and cooked through.
- Mix the salad ingredients together, season and add the rest of the oil. thickly slice the chicken and serve with salad.

CUMIN CHICKEN & AVOCADO SALAD
A pinch of chili gives this a nice kick, perfect in the garden with a few Mexican beers. This has a slightly Mexican flavour, combining warm chicken tossed with cumin and chili powder, kidney beans and creamy avocado. The tomatoes are slightly cooked too, so their juice bursts into the Caesar dressing as you cut into them - delicious.

Steps:
- Mix the oil and spices in a large bowl, then use the mixture to coat the chicken.
- Pan-fry the chicken (without extra oil) in a large non-stick frying pan for a few mins each side.
- Toss the tomatoes into any spiced oil left in the bowl, then add them to the pan.
- Cover and cook for 5 mins more until the chicken is cooked and the tomatoes are warm and starting to soften.
- Meanwhile, toss the onion, lettuce, cilantro and avocados in the Caesar dressing and pile onto a large platter.
- Top with small handfuls of the beans and scatter with the tomatoes.
- Slice the warm chicken and pile on top.
- Serve with crusty bread or crunchy tortilla chips.

Steps:
- In a medium bowl, combine all the ingredients for the chicken marinade.
- Toss in the chicken thighs and marinate for at least one hour.
- In a cast-iron skillet, cook chicken on high heat until there is a nice sear on the surface of the chicken, and the inside is no longer pink. Roughly four minutes each side. Set chicken aside.
- Place chopped lettuce, tomatoes, red onion, and avocados in a large salad bowl.
- Slice cooked chicken thighs and add to the salad bowl.
- In a small bowl, combine all the ingredients for the dressing. Mix well.
- Toss the salad with the dressing and serve immediately.

- Heat oven to 200C/fan 180C/gas 6. Spread the chunks of chicken and baguette over a shallow roasting tray. Drizzle with 2 tbsp olive oil and toss to coat. Season, then put in the oven for 15 mins until the chicken is cooked through and the bread is golden and crisp.
- Whisk together the remaining olive oil and balsamic vinegar to make a dressing. Split the bag of leaves between two serving plates, add the beetroot, then scatter the cheese over. Toss with the warm chicken and bread, drizzle with the dressing, then serve straight away.

- Heat 2 tbsp of the oil in a large non-stick frying pan. Fry the ciabatta for 8-10 minutes, tossing occasionally, until starting to crisp and brown, then tip into a large salad bowl.
- Lay the chorizo in the pan and dry-fry for 2 minutes until it gives out a red oil. Toss in the tomatoes and cook over a high heat for 1-2 minutes until they start to soften. Drizzle over the vinegar, add the sugar and season well.
- MIX TOGETHER Gently toss the avocado, salad and remaining olive oil with the croutons. Spoon over the chorizo and tomatoes and drizzle with any pan juices. Serve immediately.

- In a large bowl combine 1 tablespoon of olive oil, lemon juice, cumin, 1/2 of the garlic, and a little salt. Stir well, add the chicken breast and coat completely. Set aside.
- In a large skillet set over high heat, add 2 tablespoons of olive oil, remaining garlic, peppers and onions. Stir well and add the hot sauce. Sautee for about 10 minutes, stirring occasionally.
- While the peppers are cooking, heat another skillet over high heat and add remaining olive oil. Add the chicken and cook each side for about 7 minutes or until cooked through. Remove from heat when cooked.
- Divide the salad among two plates. Staring with the peppers, topped with chicken, tomato and avocado slices. Sprinkle over a little fresh cilantro and serve.
