Yield Makes 8 (First course) servings

Number Of Ingredients 11

For crêpes:
5 tablespoons unsalted butter
1 cup whole milk
1/2 cup all-purpose flour
2 large eggs
1/4 teaspoon salt
2 tablespoons chopped chives
For purses:
16 to 20 long chives (from 1 bunch)
3/4 cup sour cream (preferably at room temperature)
4 ounces domestic caviar such as osetra or rainbow trout

Steps:

  • Make crêpe batter:
  • Melt butter in a 10-inch nonstick skillet over medium heat and set aside 2 tablespoons for cooking crêpes. Continue to cook butter remaining in skillet until it has a nutty fragrance and is golden brown, about 2 minutes. Blend brown butter with remaining crêpeingredients, except chives, in a blender until smooth. Add chives and pulse 1 or 2 times to just combine. Let batter stand 30 minutes.
  • Blend brown butter with remaining crêpe ingredients, except chives, in a blender until smooth. Add chives and pulse 1 or 2 times to just combine. Let batter stand 30 minutes.
  • Blanch whole chives:
  • Blanch chives in a small saucepan of boiling water 10 seconds. Drain and plunge into an ice bath. Pat dry.
  • Make crêpes:
  • Lightly brush skillet with butter, then heat over medium-high heat until hot but not smoking. Stir batter. With skillet off heat, add a scant 1/4 cup batter, tilting and rotating skillet to coat bottom. (If batter sets too fast, reduce heat slightly.) Cook until golden around edges, 15 to 30 seconds. Loosen with a heatproof plastic spatula, then flip crêpe over with your fingertips. Cook until underside is set, about 30 seconds. Slide onto a plate. Make more crêpes, brushing skillet with butter and stacking crêpes on plate.
  • Assemble purses:
  • Top each crêpe, browned side up, with about 1 1/2 tablespoons sour cream and 2 teaspoon caviar. Gather crêpe around filling and tie 1 or 2 blanched chives in a knot to close purse. Trim ends of chives if necessary.

APPLE, PEAR AND WALNUT STUFFED FRENCH TOAST

Apple, Pear and Walnut Stuffed French Toast image

Provided by Food Network

Categories     main-dish

Time 1h10m

Yield 12 slices

Number Of Ingredients 15

5 tablespoons unsalted butter, softened
2 Gala apples, peeled, cored and chopped
1 pear, peeled, cored and chopped
2 tablespoons finely chopped walnuts
1/2 teaspoon ground cinnamon
1 dozen large eggs, lightly beaten
2 cups whole milk
6 tablespoons granulated sugar
1 tablespoon ground cinnamon
2 teaspoons grated nutmeg
1/2 teaspoon salt
1 tablespoon pure vanilla extract
1 day-old (or slightly older) loaf challah bread, cut into 1-inch-thick slices
8 tablespoons (1 stick) unsalted butter, for cooking
Pure maple syrup, warmed, for serving

Steps:

  • For the fruit-nut mixture: Mix the butter with the apples, pears, walnuts and cinnamon in a medium bowl. Refrigerate to chill briefly.
  • For the French toast: Meanwhile, in a large flat dish, whisk together the eggs, milk, sugar, cinnamon, nutmeg, salt and vanilla.
  • Make a deep slice from the side into the center of each bread slice to form a pocket. Stuff a couple spoonfuls of the fruit-nut mixture into each piece (reserve any leftover fruit-nut mixture for serving). Dip the stuffed bread in the egg mixture to moisten on both sides (but not so much that the bread falls apart).
  • Heat a large skillet over medium heat and melt 1 tablespoon of butter. In batches, add the stuffed bread and cook until golden brown, flipping gently, 2 to 3 minutes per side. Continue cooking the remaining bread, adding additional butter as needed.
  • Put the extra fruit-nut mixture in the skillet and cook a few minutes over medium heat, just to soften the fruit. Spoon over the French toast and serve with warm maple syrup.

WARM APPLE & PEAR FRUIT BEGGARS PURSES

WARM APPLE & PEAR FRUIT BEGGARS PURSES image

Categories     Apple

Number Of Ingredients 9

2 tablespoon/s Margarine
3 Granny Smith Apples
2 Bosc Or Anjou Pears
2 Large Oranges Cut In Half
5 tablespoon/s Brown Sugar
3 tablespoon/s Corn Starch
1 box Phyllo Dough Defrosted
1 stick/s Margarine
6 Squares Of Bittersweet Chocolate

Steps:

  • Peel and core the apples and pears and cut into 1/2 to3/4- inch chunks. Preheat oven to 320F. In a large skillet, heat the margarine over a medium flame. Add the apples and pears. Saute for 3 minutes. Squeeze the juice of 1 orange half directly into the skillet; continue sauteing. Add the brown sugar to the pan. Mix with the fruit. Sprinkle with a few shakes of cinnamon. In a small bowl, combine the cornstarch and the juice of the remaining 1 1/2 oranges. Stir vigorously until smooth. Slowly add the cornstarch mixture to the pan, stirring or whisking continuously. The mixture will start to thicken and caramelize. You want the brown sugar to be sticky and thick, not runny. Remove from heat. Unwrap the phyllo dough, laying out the sheets horizontally in one stack in front of you. Cut the layered stack of dough lengthwise and width-wise to make 4 equal rectangular quarters. Take one phyllo rectangle and brush all around the edges with melted margarine. Lay the next rectangle of phyllo over the first but at an angle. Brush with margarine. Do this 4 more times for a total of 6 sheets. Place a small mound of caramelized fruit in the center. Add a square of chocolate. Lift one edge of the phyllo dough towards the middle, gathering and pleating the dough has you go around, pulling all the edges to the middle to form a purse. Make 8 purses this way. Brush and drizzle each purse with melted margarine. Place on a parchment - lined cookie sheet. Bake for 10 minutes, this will finish cooking the fruit. Raise the heat to 350F. Bake an additional 15 minutes, this will turn the phyllo nice and golden. When golden brown remove from oven. Serve warm.

APPLE-PEAR COMPOTE

Apple-Pear Compote image

Apples and pears are almost always popular, so this warm, comforting dessert recipe is great for potlucks or other get-togethers. I also like to add raisins or chopped nuts to the compote, and for a more adult flavor I add 1/3 cup brandy or rum.-Nancy Heishman, Las Vegas, Nevada

WARM APPLE AND APRICOT PHYLLO PURSES

Warm Apple and Apricot Phyllo Purses image

Created for RSC #6. Don't let phyllo dough scare you. This is a simple recipe, but with a very elegant presentation. If you make it ahead of time just rewarm it in the oven to warm the fruit and re-melt the chocolate. Prep time includes soaking time for the fruit in the wine.

WARM APPLE VINAIGRETTE WITH A ROASTED PEAR & SPINACH SALAD

Warm Apple Vinaigrette With a Roasted Pear & Spinach Salad image

This is one of my favorite vinaigrettes and salad. The dressing is warmed up with some shallots and fresh herbs and pureed until creamy; served over spinach, sweet roasted pears, dried cranberries and crunchy pecans.

Provided by SarasotaCook

Categories     Salad Dressings

Time 45m

Yield 4-6 Salads, 4 serving(s)

Number Of Ingredients 17

1 1/2 cups apple cider
1/4 cup cider vinegar
1/4 cup honey
1 cinnamon stick
1 large shallot, diced fine
1/2 teaspoon Dijon mustard
1 teaspoon fresh thyme
1/2 teaspoon vegetable oil
salt
pepper
1 (7 ounce) bag Baby Spinach
1 medium red onion, cut in quarters and thin sliced
2 bosc pears, cored and cut in wedges, skin on
1/2 cup dried cranberries
2 tablespoons melted butter
1/2 teaspoon allspice
1 cup toasted pecan halves

Steps:

  • This takes 4-5 steps, but you do a few steps ahead of time so then it is just a matter of warming up the vinaigrette and tossing the salad.
  • Pecans -- In a small dry saute pan, toast the pecan halves on medium heat for just a couple of minutes until they get lightly brown. You will actually start to smell their toasted flavor. Remove from the pan and cool on a paper towel and then place in a ziplock bag or small tupperware type container and keep until you are ready to make the salad.
  • Vinaigrette -- Make this a day or so ahead and then all you need to do is just reheat.
  • Step 1: In a small bowl, add add the apple cider, vinegar, honey, and cinnamon stick, cover with plastic wrap and refrigerate for at least 8 hours.
  • Step 2: In a small pot, add the oil and saute the shallots of medium heat until tender. Then add in the apple cider mix and bring to a boil. Continue to cook on medium for about 4-5 minutes to let it reduce slightly.
  • Remove from the heat and stir in the mustard and thyme. Add to a blender and puree until smooth and creamy. Check to see if it needs any salt or pepper. I usually use 1/2 teaspoon salt and 1/4 pepper, but season according to your taste.
  • The dressing is done. You can use it right then, or you can put in a small container and refrigerate until later.
  • If serving it at a later date, I just whisk the vinaigrette, or my favorite method (just shake it in a small tupperware container) or you can always put it back in the blender or even use and immersion blender and then just reheat in the microwave for 1 minute on medium heat.
  • Pears -- You need to make the pears a couple of hours before as I like to serve them chilled. In a medium size bowl, add the melted butter, allspice, and pears and toss well. Transfer to a baking sheet lined with parchment paper or foil and bake for 15-20 minutes in a 425 degree oven until tender but not too soft and then begin to get lightly brown. Depending on how thick you slice them, they can take anywhere from 10-20 minutes. Remove to a plate to cool. Then cover with plastic wrap and refrigerate.
  • Salad -- In a large bowl add the spinach, red onion, cranberries and set to the side.
  • Vinaigrette -- Reheat until warm. Medium heat in the microwave for 1-1 1/2 minutes.
  • Finish the Salad -- Add a spoon or two of the vinaigrette over the spinach, cranberries and onions and toss lightly. Divide the spinach between four plates. Finish the salad by topping it with the chilled pears and toasted pecans. Drizzle the warm vinaigrette over the salad and enjoy!
  • This will serve 4 large salads or 6 smaller salads.

APPLE VS. PEAR (DETAILED COMPARISON) - HOME STRATOSPHERE
Apple trees have upward branches with hairy stems that create a rounded top reaching up to 15ft. tall. Pear trees create a more lengthened illusion and can get to 56ft. Most varieties are hairless and often have thorns. Like the tree’s rounded top, the Apple fruit is crisp and round, while pears are slightly more lengthened and softer in texture.
