Delicious, nutritious, protein-packed, and gluten-free, vegan sausage patties are crispy from the outside and moist on the inside. 1 package extra-firm tofu drained
1 cup breadcrumbs
1 cup walnuts or pecans, finely chopped
1/4 cup Bragg liquid aminos
2 tablespoons nutritional yeast flakes
2 tablespoons tapioca starch or cornstarch
1 tablespoon onion powder
2 cloves garlic minced
1/2 teaspoon Italian seasoning
1/4 teaspoon fennel
1/4 teaspoon sage
1 teaspoon salt
Oil for pan-frying

Steps:

  • Preheat oven 400 degrees F. Spray and lightly brush baking sheet covered with parchment paper with oil. Set aside.
  • Place walnuts in a food processor and process until finely ground.
  • Add the remaining ingredients, breadcrumbs, mashed tofu, Bragg's Liquid amino acid, nutritional yeast flakes, tapioca starch, onion powder, garlic, salt, Italian seasoning, fennel, and sage.
  • Process until a smooth thick batter is formed.
  • Divide the sausage batter into 12 equal pieces and form it into patties.
  • Place sausage patties on the prepared baking sheet., brush lightly with l Bake for 30 minutes, turning over patties half week during cooking.
  • Place oil in a large, heavy skillet over medium-high heat. Cook patties until golden brown, about 3 minutes. Flip them and cook them for another 3 minutes. Serve immediately

3/4 cup buttermilk
2-1/4 teaspoons kosher salt
1-1/2 teaspoons rubbed sage
1-1/2 teaspoons brown sugar
1-1/2 teaspoons pepper
3/4 teaspoon dried marjoram
3/4 teaspoon dried savory
3/4 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
2-1/2 pounds ground pork

Steps:

  • In a large bowl, combine the first 9 ingredients. Add pork; mix lightly but thoroughly. Shape into twenty 3-in. patties., In a large skillet coated with cooking spray, cook patties in batches over medium heat until a thermometer reads 160°, 5-6 minutes on each side. Remove to paper towels to drain. Freeze option: Wrap each cooked, cooled patty; transfer to an airtight container. May be frozen for up to 3 months. To use, unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° until heated through, about 15 minutes on each side.

1 pound ground pork (not lean)
1 tablespoon packed brown sugar
4 teaspoons finely chopped fresh sage
2 teaspoons finely chopped fresh thyme
1/2 teaspoon ground ginger
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil

Steps:

  • Mix the pork, brown sugar, sage, thyme, ginger, cayenne, 1 1/2 teaspoons salt, 1 teaspoon black pepper and 2 tablespoons water in a large bowl. Form into 2-inch patties; transfer to a baking sheet, cover and refrigerate at least 1 hour or overnight.
  • Preheat the oven to 300 degrees F. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat; add half the sausage patties and cook, flipping once, until browned, about 5 minutes. Transfer to a baking sheet. Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining patties. Transfer the patties to the oven and bake until cooked through, 3 to 5 minutes.

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

  • Add 2 tbsp olive oil to medium saucepan. Add onions and sauté on medium heat until onions are clear. Add mushrooms and continue to sauté mixture until mostly dry and starts to brown (8-12 minutes.)
  • Stir in walnut/sunflower mixture and continue to sauté for another 2-3 minutes, adding an additional 1 tablespoon olive oil if mixture begins to stick to the pan. Remove mixture and set aside in a mixing bowl.
  • To the same pan, add coconut oil, paprika, fennel seeds, ground sage, rosemary and heat on low until mixture begins to froth. Add coconut oil/cooked spices to the nut mixture and stir to combine. Allow to cool completely.
