Streuselkuchen, a classic German yeast cake, is soft on the inside and loaded with sweet and crumbly Streusel or "crumbles" on the top! It's the perfect cake to go with coffee or tea!

2/3 cup milk (warm)
3 cups all-purpose flour
2 1/2 teaspoons dry instant yeast
1/3 cup granulated sugar
1 teaspoon vanilla extract
a pinch of salt
1/3 cup butter (room temperature)
1 medium-sized egg (room temperature)
milk or water for brushing
1 cup butter
2/3 cup sugar
1 2/3 cups all-purpose flour
powdered sugar (optional)

Steps:

  • Warm the milk in the microwave or on the stove. It needs to be warm but not hot or boiling.
  • In a large mixing bowl, add the flour and the instant dry yeast (check the instructions on the package to be sure it doesn't have to be dissolved in water or milk first). Add the sugar, and then the lukewarm milk. Knead the contents of the bowl together using the spiral dough hooks of your hand mixer until everything is mixed together.
  • Then add the vanilla extract, soft butter, egg, and a pinch of salt to the bowl. Keep kneading the dough for another 5 minutes until the dough no longer sticks to the sides of the bowl. Use your hands to form it into a nice ball. If your dough is too sticky, you can add a bit more flour. If the dough is a little too dry and crumbly, add a little more milk to the mix.
  • Take a towel or a lid and place it over the bowl with the dough inside. Set the bowl in a warm place without a draft to allow the dough to rise. This should take approximately one hour.
  • Around the 55 minute mark of the dough rise timeline, get your baking pan ready by lining it with parchment paper or by greasing it.
  • Once the hour is up and the ball of dough has increased in size noticeably, remove it from the bowl. Sprinkle your countertop with flour and give the dough a quick knead with your hands. Then roll out the dough using a rolling pin to fit your baking sheet/pan. We typically use a baking pan that is around 13.5 x 9.5 inches. Once the dough is rolled to size, place the dough onto the baking sheet. Let it rest for another 15 minutes.
  • In the meantime preheat the oven to 350 degrees Fahrenheit and prepare the streusel for the topping. For this, place butter, sugar, and flour into a bowl. Using the spiral dough hooks or your hands, quickly knead the ingredients until small crumbs form. Press them together lightly with your hands, then set them aside.
  • Once the 15 minutes of rest are up, lightly brush the dough with some water or milk. This will allow the streusel to stick better.
  • Then evenly place the streusel on top of the dough.
  • Bake the cake on the middle rack of your oven for around 25-30 minutes until the crumbs are lightly golden brown.
  • Remove the cake from the oven and let it cool. You can dust the cake with powdered sugar before serving.

1 pound almond paste
1 box confectioners' sugar
1/4 cup light corn syrup
Vegetable shortening, for hands

Steps:

  • Combine almond paste, confectioners' sugar, and corn syrup in a large mixing bowl. You may need to work the mixture with your hands to ensure that it is well mixed. To prevent the mixture from drying as you work with it, rub hands with a light coating of vegetable shortening. Wrap tightly in plastic until ready for use.

2 eggs
1 cup butter
2 cups white sugar
1 cup sour cream
1 tsp vanilla extract
2 cups bread flour (all purpose is fine)
1 1/2 tsp baking powder
1/8 teaspoon salt
Filling and topping:
2/3 cup flour
1 cup brown sugar
4 tbsp melted butter
1 tbsp cinnamon
1 tube Marzipan (refrigerated)

Steps:

  • Preheat oven to 350 F. Cream together the butter and white sugar until fluffy. Beat in the eggs one at a time. Add vanilla and sour cream. Mix the baking powder, salt and flour together and slowly incorporate it into the mixture. Pour half of the batter into a greased 9" spring-form pan. Mix the ingredients for the topping in one bowl and spread half of it over the batter in the spring-form. Shred marzipan using either a cheese grater or cuisinart and add over center streusel mixture. Pour the remaining batter on top and cover the cake with the remaining streusel mixture. Bake approx. 50 minutes. If the top begins to look too dark, remove the cake.

1 3/4 cups confectioners' sugar
4 tablespoons corn syrup
Food coloring

Steps:

  • In the bowl of an electric mixer, add the almond paste and beat just to break up the almond paste some. Add about 1 cup of the sugar and mix until it is incorporated. Add the remaining sugar and beat until incorporated. The mixture will look like coarse bread crumbs at this point. Add the corn syrup and mix to combine well. The mixture will still be very crumbly.
  • Turn the mixture out onto a clean work surface and knead until it makes a smooth dough. If the dough seems too sticky, knead in a little more confectioners' sugar. The dough can be tightly wrapped and refrigerated at this point. If you want to color the marzipan, break off the amount of dough you want colored. Add a drop and knead in. For more intense color, add more food coloring. Shape into desired shapes.

Steps:

  • Preheat oven to 400°.

  • With processor on, slowly add the oil and corn syrup through food chute, processing until the mixture resembles coarse meal.

  • Stir yogurt mixture into margarine mixture in a large bowl until blended.
  • Spoon batter into a 9-inch round cake pan coated with cooking spray.
  • Sprinkle half of streusel mixture evenly over batter.
  • Top with plums, arranging in a circular pattern.
  • Sprinkle the remaining streusel mixture evenly over the plums.
  • Bake kuchen at 400° for 45 minutes or until a wooden pick inserted in center comes out clean.
  • Cool on a wire rack.

1 1/4 cups white flour
1 teaspoon baking powder
2 teaspoons sugar

1 egg

3/4 cup sugar
1 1/2 tablespoons white flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

  • For streusel:

  • Position rack in center of oven and preheat to 325°F. Butter and flour 10-inch-diameter springform pan. Toss apple slices, cinnamon, and cloves in medium bowl. Sift flour, cornstarch, baking powder, and salt into another bowl. Combine butter, powdered sugar, and lemon peel in large bowl; scrape in seeds from vanilla bean.
  • Using electric mixer, beat butter mixture until well blended. Add eggs 1 at a time, beating until well blended after each addition; beat in egg yolk. Add flour mixture and beat just until blended. Spread batter evenly in prepared pan (cake layer will be thin). Slightly overlap apple slices atop batter in concentric circles. Sprinkle streusel evenly over apples (streusel will cover apples).
  • Bake cake until streusel topping is crisp and tester inserted into center of cake comes out clean, about 1 hour 20 minutes. Cool cake in pan on rack 15 minutes. Remove pan sides; cool to lukewarm. Serve lukewarm or at room temperature. DO AHEAD Can be made 1 day ahead. Cool completely. Wrap cake in foil and store at room temperature.

4 egg yolks
1 lb butter (4 sticks)
1/2 cup sugar
1.5 (18 ounce) jars apricot-pineapple jam
butter-flavored cooking spray (or additional butter to coat the pan)

Steps:

  • In a food processor, add 2 cups flour, 1/4 cup sugar, 2 egg yolks, and 1/2 lb. butter (2 sticks, cut up into pieces).
  • Pulse until mixture is crumbly and butter is incorporated into the flour (be careful not to overdo it).
  • Put mixture in a 13x9 pan which has been sprayed with butter-flavored cooking spray (or, use additional butter).
  • Spread mixture and pat down.
  • Heat open jars of jam in the microwave for a minute or two so that jam will spread easily over the crumb mixture.
  • Spread the 1.5 jars of jam over the mixture in the pan. (Pro Tip: buy three jars so you have enough jam for two batches!).
