These copycat Chipotle Black Beans are easy to make, inexpensive, and healthy! Add to burritos and salads or serve with rice for a tasty vegetarian meal.

2 tablespoons olive oil (or rice bran oil (see note 1))
2 medium yellow onions (chopped)
6 cloves garlic (minced)
1 pound dried black beans (rinsed, sorted, and soaked overnight (see note 2))
2 chipotle chilies (plus 2 teaspoons adobo sauce)
1 teaspoon ground cumin
1 teaspoon dried oregano ((see note 3))
2 bay leaves
6 cups water ((enough to cover beans))
fresh lemon juice (to taste)
fresh lime juice (to taste)
Salt and freshly ground black pepper

Steps:

  • In a Dutch oven or large pot over medium high heat, heat oil until shimmering. Add onion and cook until softened, about 5 minutes. Stir in garlic until fragrant, about 30 seconds.
  • Add beans, chipotle peppers and adobo sauce, cumin, oregano, and bay leaf. Add enough water to cover and stir to combine. Bring to a boil over medium high heat. Reduce heat and simmer until beans are tender, about 1 1/2 to 2 hours.
  • Remove from heat. Remove chipotle chilies if desired and bay leaf. Stir in lemon and lime juices, and season to taste with salt and pepper.

My friend Keni's love of smokey chipotle peppers inspired this recipe. It comes together perfectly and is a unique chili that will stand out against others. It is a spicy chili that at the same time is mellow. It gives you the kick without the lingering burn like many chilis do.

2 pounds ground beef
1 pound bulk Italian sausage
1 large onion, diced
1 tablespoon minced garlic
2 (16 ounce) cans kidney beans, rinsed and drained
2 (16 ounce) cans chili beans, undrained
2 (14.5 ounce) cans diced tomatoes
2 (14.5 ounce) cans crushed tomatoes
2 ribs celery, chopped
1 green bell pepper, coarsely chopped
½ red bell pepper, chopped
½ (7 ounce) can chipotle chiles in adobo sauce, finely chopped
½ (3 ounce) package bacon bits
1 tablespoon chili sauce
1 tablespoon hot pepper sauce (such as Frank's RedHot®)
1 tablespoon chili powder
2 teaspoons brown sugar
¼ teaspoon ground cumin
¼ teaspoon salt

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and sausage in the hot skillet until some of the fat renders, 2 to 3 minutes; add onion and garlic and continue to cook and stir until the meats are browned and crumbly, 5 to 7 minutes more. Transfer beef mixture to a slow cooker.
  • Stir kidney beans, chili beans, diced tomatoes, crushed tomatoes, celery, green bell pepper, red bell pepper, chipotle chiles, bacon bits, chili sauce, hot pepper sauce, chili powder, brown sugar, cumin, and salt with the beef mixture.
  • Cook on Low until vegetables are completely tender but the celery retains a slight bit of firmness, 6 to 8 hours (or 3 to 4 hours on High).

Slow Cooker Chipotle Tomato Beans With Prosciutto Crumb image

All good and decent breakfast spreads deserve some slow-cooked beans. These also freeze very well should you find yourself with leftovers.

Yield Serves 4-6

Number Of Ingredients 18

1 tablespoon olive oil
1 onion, finely chopped
7 garlic cloves, crushed
2 teaspoons cumin seeds, toasted and ground
2 bay leaves
1 cinnamon stick
1 chipotle chile in adobo, chopped
2 tablespoons brown sugar
2 tablespoons apple-cider vinegar
3 tablespoons tomato paste
200 g (7 oz; 1 cup) dried cannellini beans (or other white bean), washed thoroughly
750 ml (25½ fl oz; 3 cups) vegetable or chicken stock
200 g (7 oz) canned chopped tomatoes
4 slices prosciutto
1 teaspoon balsamic glaze
2 slices sourdough, blitzed to a rough crumb
Olive oil, for drizzling
Fresh avocado, yogurt or sour cream (optional), roughly chopped cilantro leaves

Steps:

  • Set the slow cooker to the sauté function. Add the oil and, when hot, add the onion and cook for 3-5 minutes, or until soft. Add the garlic, cumin, bay leaves and cinnamon and cook for a further 1-2 minutes. Add the chipotle in adobo, the brown sugar, vinegar, and tomato paste. Cook for another minute before adding the beans and stirring to coat. Pour over the stock and tomatoes, close the lid and set the heat to low. Cook for 10 hours, or overnight.
  • You want the beans to be pliable and the liquid to have reduced to a thick and rich sauce. Remove the bay leaves and cinnamon before serving.
  • Just before serving, prepare the prosciutto crumb. Preheat the oven to 180°C (350°F). Place the prosciutto slices on a baking tray lined with baking paper and drizzle over the balsamic glaze. Pop in the oven for 10 minutes, or until the prosciutto looks dark and golden. Remove and allow to cool, then blitz to a rough crumb in a food processor. Combine with the breadcrumbs, a drizzle of olive oil and a generous amount of salt and pepper.
  • Serve bowls of beans topped with the prosciutto crumb, a chunk of avocado and the yogurt or sour cream, if using, and garnish with cilantro.
