ITALIAN WALNUT PILLOW COOKIES
My grandma's famous cookies - miniature nut roll cookies covered in a simple icing.

- 1. Preheat the oven to 350°. Line two cookie sheets with parchment paper.
- Make the Dough: In a medium bowl, whisk together the flour, baking powder and salt.
- Using an electric mixer on medium speed, cream together the sugar and shortening. Add the egg and vanilla and combine well. Add in the remaining ingredients, alternating between the flour mixture and milk, starting and ending with the flour mixture and making sure all of the ingredients are well incorporated. (The dough will be soft.) Divide the dough into four even pieces, wrap each in plastic wrap, and refrigerate for at least 1 hour.
- Make the Filling: In a large bowl, stir together the chopped nuts and the sugar. Add the melted butter and stir until evenly moistened. Add the egg whites and mix well until completely combined.
- Assemble the Cookies: On a well-floured surface, roll out a piece of dough into a rectangle measuring about 6 inches by 18 inches. Using an offset spatula, spread one-quarter of the nut filling onto the dough, leaving a small border around the perimeter of the dough. Roll up as you would a jelly roll, with the short ends to the left and right of you, and seal the ends. Cut the roll into 1-inch pieces and place on the prepared baking sheet cut-side-up. Repeat with the remaining pieces of dough and filling (you should be able to fit all of the cookies on two baking sheets.) Bake until the cookies are a light golden brown, about 30 minutes. Transfer the cookies to a wire rack and cool completely.
- Ice the Cookies: Once the cookies are cooled, whisk together the powdered sugar, vanilla and milk in a small bowl. Dip the tops of the cookies into the icing and let any excess drip off. Allow the icing to set completely before storing. The cookies can be stored in an airtight container at room temperature for up to 2 weeks. These cookies also freeze incredibly well.

- In a large bowl, cut butter and cream cheese into flour until mixture resembles coarse crumbs. Blend mixture together until smooth dough forms, about 3 minutes. Pat into a rectangle; wrap in plastic. Refrigerate for 1 hour or until firm. For filling, combine the walnuts, sugar, milk and vanilla. , Unwrap dough and place on a lightly floured surface. Roll into a 17-1/2x10-in. rectangle; cut into 2-1/2-in. squares. Place a level teaspoonful of filling in the center of each square. Moisten edges with water; fold in half and seal with a fork. Place 1 in. apart on ungreased baking sheets. Brush with egg. , Bake at 375° for 10-12 minutes or until edges are golden brown. Remove to wire racks to cool. Dust with confectioners' sugar.

WALNUT PILLOW COOKIES RECIPE

- To make the dough, put the flour, 1/2 cup sugar, baking powder, salt, and lemon zest in the bowl of a food processor and pulse a few times to combine. If mixing by hand, whisk together in a large mixing bowl.
- Add the cold butter and pulse until the mixture appears sandy with pea-sized bits of butter. If mixing by hand, cut in the cold butter using a pastry blender or two knives.
- Pulse in the egg and the egg yolk. When the dough starts to form large clumps, transfer the dough to a floured work surface. Using floured hands, fold the dough into itself until fully incorporated. The dough should come together easily and should not feel too sticky.
- Form the dough into a ball and divide in half. Shape each half into 1-inch-thick rectangles. Wrap each in plastic wrap and refrigerate for at least 1 hour.
- To make the walnut filling, process the walnuts, milk, melted butter, cinnamon, the egg white, and the remaining 1/2 cup of sugar in a food processor until the walnuts are finely ground and the filling is thick.
- Preheat the oven to 350 degrees Fahrenheit.
- Take the dough out of the refrigerator. Roll out each piece of dough on a floured work surface to a long rectangle, about 24 inches long by 5 inches wide.
- Spread half of the filling lengthwise down the center of each.
- Starting on the long side, fold the dough over the filling. Brush the opposite edge with water and fold over the top. Gently press the seams to seal.
- Cut each rectangle into 1-inch strips. Place them seam-side down on parchment-lined baking sheets, spacing them about 1 to 2 inches apart. They won't spread much in the oven.
- Bake the cookies for 20 minutes, or until the edges are golden brown. Cool for 5 minutes before removing from pans and transferring to wire racks to cool completely.

This recipe is a classic and has always been well-received at the cookie swap. I measure out my dry ingredients on a piece of parchment paper and this makes it easier to add into the mixer. I also make large batches of the dough and keep it in the fridge during the holidays so I always have freshly baked cookies on hand when company drops in.

- In a medium bowl, sift the flour, cocoa, baking powder, and salt onto a piece of parchment or wax paper. Set aside. In a mixer, beat the butter and sugar until fluffy, about 2 to 3 minutes. - Position the racks in the top and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment. Whisk together the flour, baking soda, cinnamon, salt and allspice in a large bowl.
- Beat the butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until light and fluffy, scraping down the sides of the bowl occasionally. Beat in the eggs 1 at time until blended, then beat in the vanilla.
- Reduce the speed to low and beat in the flour mixture in 3 additions until smooth. Stir in the oats, raisins and walnuts with a rubber spatula. Drop heaping tablespoons of the dough onto the prepared sheets about 2 inches apart.

- Make the filling: In a large bowl, combine the nuts with the butter, rose water, orange blossom water, sugar, cinnamon and cloves; stir to thoroughly coat the nuts. Set aside.
- Make the dough: In a large bowl, combine the semolina, farina and flour. Sprinkle the mastic and mahlab over the dry ingredients. Make a well in the middle of the dry ingredients and add the yeast and sugar to the well. Add 3 tablespoons warm water to the yeast mixture and let sit until it begins to foam, about 1 minute. Pour in the milk and, with a fork, gradually mix the wet and dry ingredients together until a dough forms.
- Transfer the dough to a clean work surface and knead until it is pillow soft and workable. If the dough becomes too stiff to work with, gradually sprinkle in water to bring it to a workable consistency. Return the dough to the bowl and set aside on the counter for 1 hour, covering the bowl with a clean kitchen towel to prevent the dough from drying out as you shape the cookies.
- Preheat the oven to 370°F. Prepare two baking sheets with parchment paper.
- Place about 3 tablespoons dough in the palm of one hand and use the other palm to roll it into a ball. Make an indentation in the ball with your finger. Spoon 1 1/2 tablespoons of the nut mixture into the indentation, then bring the edges of the dough up around the filling. Pinch the edges all around to seal in the filling. Flip the cookie over into the other hand, seam-side down, and gently press until the seam side is flattened. Place the cookie on a prepared baking sheet and repeat with the remaining dough.
- Bake until the cookies are pale blond, 12 to 15 minutes. Transfer to a wire rack to cool. The cookies can be stored at room temperature for 2 days; they will keep in an airtight container in the refrigerator up to 2 weeks or in the freezer up to 3 months. Before serving, dust liberally with confectioners' sugar.

I invented this recipe last year and my family continues to beg for more. If you like, you can substitute pecans for the walnuts.

PILLOW COOKIES
I found this in my collection of cookies that I have made in the past for Christmas. I am not sure where the original recipe came from. On the recipe I wrote, "made in '93 - VERY Good!" They are a little labor intensive & I think that is why I don't make them every year. I think I will be making them this year. NOTE: Prep time does not include "resting time" overnight in the refrigerator. NOTE: Estimated yield (can't recall).

- Dough:.
- Sift flour, then measure. Cut the butter into the flour.
- Beat egg yolks well & mix with the cream. Add to flour mixture.
- When dough is well-mixed, shape into small walnut-sized balls.
- Place in the refrigerator overnight.
- Filling:.
- Beat the egg whites stiff, then beat in the icing sugar slowly.
- Add the nuts and mix well.
- To Assemble Cookies:.
- Preheat oven to 375*. Roll out each dough ball "thin" on a floured surface.
- Place 1 teaspoon filling on each.
- Fold the dough over to the shape of a pillow.
- Bake @ 375* for 10 minutes. The cookies will stay a very light colour.
- Dust with icing sugar.

- Preheat oven to 350 degrees F ( 175 degrees C ). Line baking sheets with parchment paper.
- In a small bowl mix together the egg whites, sugar, and nuts until well blended. Drop dough by teaspoonfuls, three inches apart, onto the lined cookie sheets. Using the back of a spoon, dipped in water, flatten into rounds about 1.5 inches in diameter. Bake for 8 to 10 minutes in the preheated oven. Cookies should be lightly browned. - In a large bowl, cream butter and cream cheese until blended. Gradually beat flour into creamed mixture. Divide dough into 3 portions. Shape each into a disk.
