Another light great tasting pasta. I love all the garlic. You can adjust the heat by playing with the pepper flakes!

10 -12 cloves garlic
1 cup chicken stock
7 ounces angel hair pasta
2 tablespoons water
1 lb broccoli floret
1/2 cup white onion
1/2 lb uncooked medium shrimp, peeled,deveined and halved
1/2 cup fresh dill, chopped
1/8 teaspoon red pepper flakes (more for a bit more kick)
salt
pepper

Steps:

  • Put the garlic and stock in a small sauce pan and bring to boil.
  • Reduce the heat to low and cover.
  • Simmer for about 20 minutes or until the garlic is soft enough to mash with a fork.
  • Transfer the contents of the pan to a food processor or blender and puree until smooth.
  • Set aside Bring large pot of water to boil.
  • Add the pasta, stirring to make sure the strands don't stick together, and cook over high heat to desired tenderness.
  • Meanwhile, put 1 Tbs of the water in a nonstick frying pan and bring to a boil over medium.
  • Add the broccoli and onion, reduce the heat to low, cover, and cook for 3 minutes.
  • Add the shrimp, dill, and the remaining Tbs of water.
  • Stir, recover and cook for 4-5 minutes until shrimp is pink.
  • Remove from heat When the pasta is done, drain and return it to the pot over very low heat.
  • Add the garlic puree and mix well to coat the pasta.
  • Add the broccoli shrimp mix and the seasonings.
  • Toss together until well blended and serve immediately.

Steps:

  • Cook spaghetti in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 2 min.
  • Meanwhile, heat dressing in large skillet on medium-high heat. Add shrimp and garlic; cook and stir 3 to 4 min. or until shrimp turn pink.
  • Drain spaghetti mixture; return to pan. Add shrimp mixture and cheese; mix lightly.

1 large bunch broccoli, cut into about 4 cups florets and 1 cup thinly sliced stems from close to the base
Kosher salt
Ice
1 pound spaghetti
1/2 cup extra-virgin olive oil
2 teaspoon red pepper flakes
6 cloves garlic, minced
Juice of 1/2 lemon
1 cup freshly grated Parmigiano-Reggiano

Steps:

  • Add the broccoli florets to a large pot of boiling, salted water and cook until al dente, 3 to 4 minutes. Prepare a bowl of ice water. Remove the florets from the pot, reserving the cooking water. Stop the cooking process by shocking them in the ice water. Remove the florets and pat dry.
  • Add the spaghetti in the same pot of water. Cook until al dente, about 8 minutes.
  • Meanwhile, add the oil, sliced broccoli stems, red pepper flakes and garlic to a large skillet over medium-low heat and sprinkle with salt. Cook until the garlic is lightly toasted and fragrant, about 8 minutes. Add the florets, toss to coat and warm through.
  • Drain the pasta in a colander set in the sink, and add the pasta to the skillet. Increase the heat to medium-high. Toss the ingredients and adjust the seasoning if needed. Transfer the pasta to a large serving bowl. Squeeze the lemon juice over the top and sprinkle with the Parmigiano-Reggiano. Serve.

I used to love shrimp scampi, with its rich butter, parsley and garlic sauce.

8 ounces dried spaghetti
2 tablespoons extra-virgin olive oil
3 to 4 medium cloves garlic, minced (about 2 tablespoons)
8 ounces broccoli florets, cut into bite-size pieces
1 pound large (26- to 30-count) raw shrimp, peeled and deveined
2/3 cup dry white wine, such as sauvignon blanc
1/8 teaspoon salt
Freshly ground black pepper
Leaves from 2 stems of flat-leaf parsley, finely chopped (about 2 tablespoons)

Steps:

  • 1 Cook the pasta according to the package directions in a large pot of salted water
  • 2 While the pasta is cooking, heat 1 tablespoon of the oil in a large saute pan over medium heat
  • 3 Add the garlic and reduce the heat to low
  • 4 Let the garlic cook until it softens but does not brown
  • 5 Ideally, it will cook for 3 to 4 minutes
  • 6 Meanwhile, steam the broccoli in the microwave or on the stove top in a steamer or a covered pot with just a half-inch of boiling water
  • 7 It should take about 4 to 5 minutes on the stove top
  • 8 When the garlic has softened, increase the heat to medium-high and let the pan heat up
  • 9 Add the shrimp and cook for 2 to 3 minutes, turning the shrimp over until they have lost their raw look
  • 10 Add the wine, and add the salt
  • 11 Cook for 3 to 4 minutes; the shrimp will be cooked through and the wine will have reduced by about one-third
  • 12 Season with the pepper to taste and add the steamed broccoli pieces; toss to combine
  • 13 Drain the pasta, then transfer to a large serving bowl
  • 14 Add the shrimp mixture and toss to combine
  • 15 Drizzle the remaining tablespoon of oil over the pasta and sprinkle the parsley on top; serve hot

I got this from an Italian co-worker after having it at a work pot-luck. The flavor is really intense, and this can be served as either a side-dish or a meatless meal-in-itself. You can really use any type of pasta you prefer, I first had it with spaghetti, so that's always my preference. Really easy recipe. Edited: Psst.. please use real garlic, not the chopped stuff in the jar.. I repeat - use FRESH GARLIC, not the stuff in the jar, else you will be doomed to a bland result with no flavor. If made as directed, you will have a robustly flavorful pasta dish!

1 bunch fresh broccoli
4 garlic cloves, minced
1/4 cup olive oil
1/2 teaspoon black pepper (I like more!)
1 cup water
salt, to taste
8 ounces spaghetti, cooked
4 ounces parmesan cheese, freshly grated (optional)

Steps:

  • Chop the broccoli fine and add it to a sauce pan.
  • Add garlic, olive oil, pepper and the water and bring to a boil.
  • Reduce the heat and simmer, partially covered, for 30 minutes.
  • Break up the broccoli as it cooks so that the end result is a mushy, slightly chunky green sauce.
  • You may need to add more water or oil to keep it at a 'wet', pourable consistency if the liquid evaporates too quickly. You basically want it to be the thickness of a tomato pasta sauce. Add salt to taste; I only add the salt at the end, because if you do so earlier on, the saltiness may become more intense when the mixture reduces.
  • Serve over cooked spaghetti. Sprinkle with parm if desired.

2 ½ tablespoons butter, divided

2 tablespoons grated Parmesan cheese
2 teaspoons salt, divided

1 dash Worcestershire sauce
1 dash hot sauce
½ (16 ounce) package frozen broccoli florets, thawed
1 pound jumbo shrimp, peeled and deveined
3 cloves garlic, minced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt 1.5 tablespoons butter in a medium saucepan over medium heat. Stir in flour and cook for 2 minutes. Slowly stir in milk and cream; simmer, stirring constantly, until thickened. 1 tablespoon vegetable oil
1 pound medium shrimp - peeled and deveined

  • Cook pasta in a large pot of boiling water with vegetable oil until al dente.
  • Meanwhile, place the shrimp in boiling salted water for 3 to 5 minutes, just until they turn pink. Cooking time will depend on the size of the shrimp. Remove the tails, and place in a bowl of warm water.
