My grandmother's Woman's Club would hold bake sales, and this pie was always a hit. Hope you enjoy it.

3 eggs
¼ teaspoon salt
¾ cup white sugar
2 teaspoons vanilla extract
¾ cup light corn syrup
1 cup chopped walnuts
¼ cup butter
1 (9 inch) deep dish pie crust

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Beat the eggs in a large bowl. Mix in sugar, salt, vanilla, and corn syrup. Melt the butter and whisk it into the egg mixture. Stir in the nuts. Pour filling into pie shell.
  • Bake in preheated oven for 10 minutes. Reduce heat to 300 degrees F (150 degrees C), and continue baking for 35 to 45 minutes.

I have had this recipe for many many years. I believe it originally came from a Karo syrup bottle. I make this every year for Thanksgiving and Christmas dinner. Pecan pie and walnut pie are my favorite pies. The walnut pie has a toasted nut flavor.

2 tablespoons all-purpose flour
1 cup light corn syrup or 1 cup dark corn syrup

Steps:

  • Mix together eggs, sugar, flour, corn syrup, butter and vanilla, mixing well.
  • Pour into pie shell.
  • Sprinkle walnuts all over top, arranging them where needed.
  • Bake in preheated 400°F oven for 15 minutes.
  • Reduce heat to 350°F and bake for 35 to 45 more minutes, or until center is set.
  • Cool before serving.

2 tablespoons granulated sugar
1/2 teaspoon fine salt
2 tablespoons vegetable shortening
4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
1 large egg
1 1/2 cups walnut pieces
1 stick unsalted butter
3 large eggs
1 cup light corn syrup
1/4 cup packed light brown sugar
1/4 cup granulated sugar
1/4 teaspoon kosher salt
3 tablespoons walnut or hazelnut liqueur
1 1/2 teaspoons pure vanilla extract
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Make the crust: Pulse the flour, granulated sugar and fine salt in a food processor until combined. Add the shortening and pulse until incorporated. Add the butter and pulse until the mixture looks like coarse meal with pea-size bits of butter. Beat the egg and 1 tablespoon ice water in a small bowl; add to the food processor and pulse once or twice to moisten the flour. Turn out onto a piece of plastic wrap; use the plastic to help form the dough into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate, then fold the overhanging dough under itself and crimp the edge with your fingers. Refrigerate at least 30 minutes.
  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Make the filling: Spread the walnuts on a baking sheet and bake until toasted, about 8 minutes; transfer to a bowl and set aside. Return the empty baking sheet to the lower oven rack. Heat the butter in a small skillet over medium-high heat until foamy and golden brown, about 5 minutes; remove from the heat. Whisk the eggs, corn syrup, brown sugar, granulated sugar, kosher salt, liqueur and vanilla in a medium bowl. Gradually whisk in the browned butter until smooth.
  • Scatter half each of the walnuts and chocolate in the prepared crust. Pour in the filling, then top with the remaining walnuts and chocolate. Transfer the pie to the hot baking sheetin the oven. Bake until the crust is golden and the nuts have browned, about 30 minutes. Cover the pie loosely with foil; continue baking until the filling is set and the center is slightly puffed, 25 to 30 more minutes. Transfer to a rack to cool completely.

3 ounces unsweetened chocolate, chopped
1 1/4 cups packed dark brown sugar (about 9 ounces)
3 eggs, at room temperature
3/4 cup flour
1/4 teaspoon fine salt
1/2 cup walnut pieces, toasted
Biscotti Crumb Crust, recipe follows
Walnut halves, optional
Ice cream or sweetened whipped cream, optional
One 5.5-ounce box biscotti (about 8), coarsely broken
1/2 stick unsalted butter, chilled and diced
1/4 cup packed dark brown sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk the butter and the chocolate over low heat in a heavy medium saucepan until the chocolate is almost melted. Remove the pan from the heat and whisk until the chocolate is fully melted and the mixture is smooth. Whisk in the sugar, then the eggs, one at a time. Stir in the flour and salt with a flexible rubber spatula. Stir in the nut pieces. Scrape the batter into the prepared Biscotti Crumb Crust. Press a ring of walnut halves, if using, into the batter around the top edge.
  • Place the pie on a baking sheet and bake until the outer 2 to 3 inches are slightly puffed and dry looking and the center is set, 35 minutes. A wooden skewer inserted into the center should come out with some moist batter still attached. Cool the pie completely on a rack.
  • Cut the pie into wedges and serve with ice cream or whipped cream, if using.
  • Preheat the oven to 350 degrees F. Blend the biscotti, butter and sugar in a food processor until the crumbs are moist and stick together when pressed. Firmly press the crumb mixture over the bottom and up the sides of a 9-inch glass pie dish, building up a high rim. Bake the crust until golden and feels firm to the touch, 15 minutes. Cool the crust completely.

Pie Crust:
180 g cake flour (all-purpose flour is okay too)
100 g unsalted butter - cut into cubes
1/ tsp salt
1 egg yolk
2 tbsp cold water
Filling:
100 g walnut
2 eggs
150 ml dark corn syrup
30 g unsalted butter - melted
40 g brown sugar
1 tsp cinnamon powder
⅛ tsp salt

Steps:

  • Pie Crust:
  • Sift the flour and salt together in a large bowl.
  • Add in cold cubed butter and use a pastry cutter or knife to cut them into the flour. They should resemble coarse crumbs.
  • Use a spatula and fold in egg yolk and 2 tbsp cold water.
  • Gently knead to form a round dough. Do not over mix.
  • Place in a clear plastic bag or onto a cling wrap and flatten into a round disc.
  • Refrigerate for at least 30 mins.
  • Filling:
  • Prepare the filling by whisking 2 eggs in a medium bowl.
  • Add in brown sugar, salt, dark corn syrup, melted butter and cinnamon powder. Mix well.
  • Roughly chop the walnuts into small pieces and set aside.
  • Assemble:
  • Preheat oven to 340°C/170°C.
  • Place the chilled dough onto a large sheet of non-stick baking paper lightly dusted with some flour.
  • Sprinkle some flour onto a rolling pin and the surface of the dough.
  • Roll the dough into a large disc about 2mm thick.
  • Gently lift the dough with the rolling pin and place it onto an 8-inch round pie pan. I'm using one with removable base.
  • Press and shape the dough to the pan.
  • Remove excess dough around the edges.
  • Distribute chopped walnuts evenly all over the pan and pour in the filling.
  • Bake in preheated oven for 30 mins or until a skewer inserted in the middle comes out clean.
  • Allow to cool on a cooling rack for 20 mins before removing the pie.

  • Make the crust: Combine the flour, granulated sugar and salt in a food processor and pulse to combine. Add the shortening and pulse until it looks like cornmeal. Add the butter and pulse a few times until the butter is in pea-size pieces. Add the vinegar and 1 tablespoon ice water; pulse until the dough starts coming together but is still crumbly, adding 1 more tablespoon ice water if necessary. Turn the dough out onto a piece of plastic wrap; shape into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Put a baking sheet on the middle oven rack and preheat to 425 degrees F. Meanwhile, roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp with your fingers or a fork. Refrigerate until firm, at least 30 minutes.
  • Meanwhile, make the filling: Whisk the eggs, brown sugar, corn syrup, melted butter, bourbon, vanilla, salt, walnuts and chocolate chips in a large bowl until smooth. Pour the filling into the crust. Carefully place the pie plate on the hot baking sheet in the oven and reduce the temperature to 350 degrees F. 4 large eggs
1 cup sugar
1 cup corn syrup
1 teaspoon pure vanilla extract

4 ounces walnuts, toasted and chopped (1 1/4 cups)
Whipped Cream, for serving

Steps:

  • Preheat oven to 325 degrees. On a lightly floured surface, roll pate sucree into an 11-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Trim edges, leaving a 1-inch overhang. Tuck overhang under dough so edges are flush with rim, and crimp edges. Lightly pierce bottom of dough with a fork. Freeze until firm, about 15 minutes.
  • Stir eggs, sugar, corn syrup, vanilla, and salt in a medium bowl until well combined. Stir in walnuts, and spread mixture evenly over dough in dish.
  • Bake, rotating halfway through, until filling is just set in the center and crust is golden brown, about 1 hour and 10 minutes. Let cool completely in pie dish on a wire rack. Serve with whipped cream.

4 1/2 ounces/130 grams whole raw, unsalted walnuts (about 1 1/2 cups)
1 cup plus 1 tablespoon/255 milliliters light corn syrup
Zest of 1/2 navel orange (about 1 teaspoon) and 1/4 cup juice (from the whole orange)
1 tablespoon blackstrap molasses
1/4 teaspoon ground ginger

3 ounces/85 grams crustless white bread (crusts removed or reserved for another use), torn into small pieces, then pulsed in a food processor until very fine (about 2 lightly packed cups)

Steps:

  • Prepare the Shortcut Pie Crust through Step 3.
  • Once the dough has chilled, working over a 9-inch pie dish, prepare the crust through Step 4, then chill, at least 30 minutes or up to 2 days. (This can be done ahead.)
  • When you're ready to bake the pie, heat the oven to 350 degrees and arrange two racks near the center of the oven. Place the chilled pie crust on a sheet pan, and the walnuts on a separate sheet pan. Transfer both to the oven. Bake until the walnuts are evenly golden throughout, 12 to 15 minutes. (Do not boil.) Add the bread crumbs and toasted walnuts to the warmed mixture, stir and let sit until slightly cooled.
  • In a medium bowl, whisk the heavy cream and eggs together with a fork to combine, then fold it into the cooled walnut mixture. Pour into the pie crust and bake on a sheet pan until the center of the pie just sets, about 25 minutes. Serve at room temperature or just above, with plenty of heavy cream for drizzling.

1/4 teaspoon baking powder

1 cup coarsely chopped walnut halves
1/2 cup semisweet chocolate chips
3/4 cup packed dark brown sugar
1/2 cup all-purpose flour
6 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/3 cup light corn syrup2 tablespoons bourbon
1 teaspoon vanilla extract
2 large eggs
1/2 cup hot water
1 teaspoon baking soda

Steps:

  • 1. Pulse the flour, sugar, salt and baking powder in the bowl of a food processor until combined. Add half of the butter and pulse until the mixture resembles fine cornmeal. Add the remaining butter and continue pulsing until it is the size of small peas. Add the bourbon and pulse until moistened. Pour in 1 to 2 tablespoons ice water, a bit at a time, until the dough just comes together and holds its shape when squeezed. Turn the dough out onto a large sheet of plastic wrap, gather into a disc and wrap well. Chill until firm, at least 1 hour or overnight.
  • 2. Preheat the oven to 350 degrees F. Roll out the dough on a lightly-floured surface to an 11-inch circle and fit into a 9-inch pie plate, crimping the edges. Chill to set the crust, 20 minutes.
  • 3. Prick the bottom and sides of the crust with a fork. Fit the crust with aluminum foil and weigh it down with pie weights or dry beans. Bake until the edge of the crust is just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is lightly golden and no longer shiny, 10 to 15 minutes longer. Cool completely.
  • 1. Pour the walnuts and chocolate into the bottom of the cooled crust. Combine the sugar, flour, butter and salt in a small bowl until smooth and set aside. Lightly whisk together the corn syrup, bourbon, vanilla and eggs in a large bowl. Stir together the hot water and baking soda before whisking into the egg mixture. Stir in the flour mixture and then pour over the nuts and chocolate. Bake until the crust is golden and the filling is just set, about 45 minutes. Cool completely on a rack. Serve with whipped cream if desired.

This deep-dish crumb-topped pie combines several winter fruits and confirms that the whole is greater than the sum of its parts. The pears become soft, the apples remain slightly firm, the figs add texture and sweetness, and the tart cranberries pop in your mouth, making this rustic pie a sensory treat. 3/4 cup (3 3/4 ounces) all-purpose flour
3/4 cup packed (5 3/4 ounces) brown sugar
3/4 cup (3 ounces) raw walnuts, coarsely chopped
1 1/2 teaspoons ground cinnamon
1/4 teaspoon fine sea salt
6 tablespoons (3 ounces) unsalted butter, melted
Fruit Filling
1 cup (5 1/2 ounces) dried figs
4 small apples, peeled, cored, and sliced 1/2 inch thick (12 ounces prepped)
4 pears, peeled, cored, and sliced 1/2 inch thick (1 1/4 pounds prepped)
1 cup (4 ounces) cranberries, fresh or frozen
1/2 cup (3 1/2 ounces) granulated sugar
2 tablespoons cornstarch

Steps:

  • To make the pie pastry, put the flour, sugar, and salt in a bowl, stir to combine, then put the bowl in the freezer for 10 minutes.
  • Add the butter to the flour mixture and toss to evenly coat. Cut the butter into the flour mixture using a pastry blender, a food processor, an electric mixer, or your hands, just until the mixture becomes coarse and crumbly and the butter is the size of peas. Stir the water and lemon juice together, then pour over the dry ingredients and stir just until the dry ingredients are moistened.
  • Dump the dough onto a well-floured work surface and press it into a 6-inch disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  • Roll the chilled dough into a 14-inch disk, then line a 9 or 10 by 3-inch springform pan with the rolled-out dough. Patch any holes and trim off any dough that hangs over the edges of the pan. Chill for an additional 30 minutes while you prepare the crumb topping and the fruit filling.
  • To make the walnut crumb topping, mix the flour, brown sugar, walnuts, cinnamon, and salt together in a bowl. Stir in the butter, then work it in with your hands until the texture of crumbs. Put the topping in the refrigerator while you make the fruit filling.
  • Position a rack in the lower third of the oven and preheat the oven to 375°F.
  • To make the fruit filling, remove the stem from each fig, then boil the figs in 1 cup of water for 5 minutes. Drain and set aside until cool enough to handle.
  • Slice each fig into 4 to 5 pieces, put them in a large bowl, and add the apples, pears, and cranberries. Separately, rub the sugar and cornstarch together, then add to the fruit and gently toss until evenly coated.
  • Transfer the filling to the pie shell and top with the walnut crumb. Bake in the lower third of the oven for 60 to 75 minutes, or until the crumb is golden, the fruit juices are bubbling thickly around the edges, and the fruit is tender when pierced with a wooden skewer. If the crumb is getting too dark, cover it with foil.
  • Storage: Covered with a tea towel, the pie will keep at room temperature for up to 3 days. Spooned into a bowl and drizzled with chilled cream, it makes a wonderful breakfast.

2 1/2 cups finely chopped walnuts

3/4 cup honey
1 tablespoon lemon juice
1/2 pint heavy whipping cream

Steps:

  • Heat oven to 325°F Spray 9-inch glass pie pan with cooking spray. Make pie crusts as directed on box for Two-Crust Pie using sprayed pie pan.

4 ounces white chocolate, melted
3 large eggs
3/4 cup light corn syrup
2/3 cup (packed) light brown sugar
1/4 cup plus 2 tablespoons barley malt syrup
1/4 cup malted milk powder
1 tablespoon malt vinegar
3/4 teaspoon kosher salt
1/2 teaspoon vanilla extract
1/4 cup (1/2 stick) unsalted butter
Unsweetened whipped cream (for serving; optional)

Steps:

  • Place a rack in middle of oven and preheat to 325°F. Pulse graham crackers in a food processor until very fine crumbs form (you should have about 2 cups). Add raw sugar, flour, and salt and pulse to combine. Add butter and pulse until mixture is the consistency of wet sand.
  • Transfer mixture to a 9" pie dish. Using a measuring cup, press firmly onto bottom and up sides of dish. Place pie dish on a rimmed baking sheet and bake crust, rotating halfway through, until dry and set, 20-25 minutes. Transfer pie dish to a wire rack and let crust cool.
