Before I retired, this recipe was a mainstay in our house. I could prepare the ingredients the night before, and then on the way out the door in the morning I could throw everything in the slow cooker. 2 cans (14-1/2 ounces each) Mexican diced tomatoes, undrained
1 can (15 ounces) black beans, rinsed and drained
2 cups frozen corn, thawed
1 cup salsa
1 medium zucchini, cut into 1/2-inch pieces
1 medium green pepper, coarsely chopped
1 small onion, coarsely chopped
1 celery rib, chopped
3 tablespoons chili powder
1 teaspoon dried oregano
2 garlic cloves, minced
3/4 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Sour cream, shredded cheddar cheese and sliced jalapeno pepper, optional

Steps:

  • In a 4-qt. slow cooker, combine the first 15 ingredients. Cover and cook on low until vegetables are tender, 8-10 hours. If desired, top with sour cream, cheese and jalapeno pepper.

2 tbsp sunflower oil
400g beef mince
1 onion, chopped
2 garlic cloves, crushed
1 tbsp cumin seeds
1 tsp ground coriander
1 tsp dried oregano
1 tbsp cider vinegar
1-2 tsp chipotle paste
1 tbsp tomato paste
400g can chopped tomatoes
¼ tsp yeast extract
1 beef stock cube
400g can black or kidney beans
cooked rice
soured cream
sliced jalapeños from a jar, drained
handful of coriander leaves
1 small onion, chopped

Steps:

  • Heat the oil in a casserole or shallow saucepan over a medium heat, then fry the beef for about 10 mins until any fat has been released and the beef has started to brown. Add the onion and fry for another 8-10 mins until the onions have softened and started to brown slightly. Add the garlic and stir for another minute.
  • Stir in the cumin seeds, ground coriander, oregano and a good grinding of black pepper, and continue to fry the mixture for a few minutes until fragrant. Add the vinegar, then the chipotle and tomato pastes, and stir everything together. Tip in the tomatoes and a can of water, then add the yeast extract and crumble in the stock cube. Stir well and bring the mixture to a simmer. Cook for 20 mins, stirring occasionally.
  • When the chilli has thickened, tip in the beans and half the liquid from the can. Simmer for 20 mins more, taste for seasoning, then serve with rice, and top with the soured cream, jalapeños, coriander leaves and onion.

2 tbsp vegetable oil
8 sausages of your choice
1 large onion (red or white), finely chopped
2 peppers (red, orange or yellow, or a mixture), sliced
3 garlic cloves, crushed
1 tbsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1 heaped tbsp chipotle paste (optional)
400g chopped tomatoes
2 tbsp ketchup
400g can black beans, drained
handful of coriander, leaves picked, to serve (optional)
grated cheddar, natural yogurt or soured cream, and tortilla chips, jacket potatoes or rice, to serve

Steps:

  • Heat half the oil in a large pan and cook the sausages for 12-15 mins over a medium heat until brown all over and cooked through. Remove to a plate.
  • Drizzle the rest of the oil into the pan and cook the onion and peppers for 10 mins, over a low heat stirring often until all the veg has softened.
  • Stir in the garlic, all the spices and the chipotle paste, if using, and cook for another minute. Add the tomatoes, a canful of water, the ketchup and some seasoning. Bring to a simmer and cook for 20 mins half-covered with a lid or loosely covered with foil. Stir occasionally, topping up with water if the mixture starts to look too thick.
  • Slice the cooked sausages into thick coins and return to the pan, then tip in the beans. Cook for another few minutes until heated through, then spoon into bowls and scatter with coriander leaves, if using, some grated cheese and a dollop of yogurt or soured cream. Serve with tortilla chips for scooping, as a filling for jacket potatoes, or over rice.

This is a family favorite. Guests have always loved it, too. It has a great texture and mild taste (without the chiles). To turn up the heat, add the chiles and increase the hot pepper sauce to taste. I often double or even triple the recipe. I modified this recipe from a pillsbury cookbook I received at my bridal shower 16 years ago...and I've been making it ever since! Enjoy!

1 1/2 lbs ground beef
1 medium onion, chopped
1 green bell pepper, chopped
3/4 cup water
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sugar (or splenda)
1/4 teaspoon hot pepper sauce (i.e. red hot)
2 garlic cloves, minced
1 (28 ounce) can tomatoes, undrained, cut up**
1 (10 3/4 ounce) can condensed tomato soup
1 (6 ounce) can tomato paste
1 (4 ounce) can green chilies (optional)
2 (15 1/2 ounce) cans kidney beans, undrained (light & dark)

Steps:

  • In a large sauce pan or pot, brown ground beef with onion; drain. (While the beef is browning, chop veggies, etc.)
  • Add remaining ingredients, EXCEPT kidney beans, to the ground beef and onion.
  • Bring to a boil then reduce heat to low.
  • Cover and simmer for about 90 minutes. (stir occasionally to avoid any chili sticking on the bottom of the pot.).
  • Stir in undrained kidney beans and simmer until heated through (about 15 minutes).
  • **For a smoother chili (my preference) I pour the 28oz. can of tomatoes into my "ultmate chopper" (mini food processor) and blend em up. I also chop the onions and peppers quite small. This minimizes chunks which makes it more "kid-friendly.".

This is the cover-page recipe for the Jan/Feb 2009 Cooking Light Magazine. I made it for dinner tonight, letting it simmer all day on low in my slow cooker. It is definately my favorite chili recipe I have tried so far. The flavors are wonderful! I'm definately going to try it out with both beef and chicken too. Just beware, the prep is a little more time-consuming than your average slow cooker recipe. But it's well worth the extra effort when you open the door after a long day at work and have the wonderful smells greeting you! Note, I did make some minor changes, based on what I had at hand (used just cubed pork, omitted tomato paste, added a can of green chilies), but I'm posting the original recipe, as I don't think my changes affected the flavor much.

1 lb pork, ground
1 lb pork shoulder, cut into 1/2-inch pieces
3 cups onions, chopped
1 3/4 cups green bell peppers, chopped
3 garlic cloves, minced
3 tablespoons tomato paste
1 cup beer (lager-style such as Budweiser)
1/2 teaspoon salt, divided
3 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons dried oregano
3/4 teaspoon fresh ground black pepper
6 tomatillos, quartered
2 bay leaves
2 (14 1/2 ounce) cans plum tomatoes, undrained and chopped
1 (15 ounce) can no-salt-added pinto beans, drained
1 (7 3/4 ounce) can tomato sauce, Mexican hot-style (such as El Paso)
1 smoked ham hock (about 8 ounces)
1 1/2 tablespoons sugar
1/2 cup cilantro, finely chopped
1/2 cup green onion, finely chopped
1/2 cup queso fresco, crumbled (2 ounces)
8 lime wedges

Steps:

  • 1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ground pork to pan; cook 5 minutes or until browned, stirring to slightly crumble. Drain well. Transfer pork to an electric slow cooker.
  • 2. Recoat pan with cooking spray. Add pork shoulder; cook 5 minutes or until lightly browned, turning occasionally. Transfer pork to slow cooker.
  • 3. Recoat pan with cooking spray. Add onion and bell pepper; sauté 8 minutes, stirring frequently. Add garlic; sauté 1 minute. Add tomato paste; cook 1 minute, stirring constantly. Stir in beer; cook 1 minute. Transfer onion mixture to slow cooker. Add 1/4 teaspoon salt, chili powder, and next 9 ingredients (through ham hock) to slow cooker. Cover and cook on HIGH 5 hours or until meat is tender. Remove bay leaves and ham hock; discard. Stir in remaining 1/4 teaspoon salt and sugar. Ladle about 1 1/3 cups chili into each of 8 bowls; top each serving with 1 tablespoon cilantro, 1 tablespoon green onions, and 1 tablespoon cheese. Serve each serving with 1 lime wedge.
  • Note: You can also cook the chili in a slow cooker on LOW for 8 hours. For cooking chili on the stovetop, use a total of 12 ounces beer and simmer, covered, for 2 1/2 to 3 hours or until the pork shoulder is tender.

  • Preheat your grill or smoker to 225 degrees with thin blue smoke from soaked wood chips or chunks.
  • While your grill preheats, prepare your meat and vegetables for smoking. Lay a large piece of aluminum foil on a baking sheet. Evenly spread the onions, peppers, and garlic across the foil and drizzle with the olive oil. Set an elevated cooling rack over the vegetables. Gently spread your ground beef into a large patty, about 1/2 inch thick, and set on the cooling rack.
