CRANBERRY SAUCE WITH WALNUTS
Traditional cranberry sauce is nice, but this jazzed-up version is several steps above. It travels well, and all the women in my family serve it. The apricot preserves, lemon and toasted walnuts make it different. -Dee Buckley, Salado, Texas

Steps:
- In a large saucepan over medium heat, bring sugar and water to a boil. Simmer, uncovered, for 10 minutes. Stir in the cranberries. Cook until berries pop, about 15 minutes. , Remove from the heat. Stir in preserves and lemon juice. Transfer to a bowl. Serve warm, at room temperature or chilled. Stir in walnuts just before serving.

- Place tenderloin on a flat work surface. Slice lengthwise down the middle, being careful not to cut all the way through. Spread open the 2 sides like a book.
- Sandwich butterflied tenderloin between 2 pieces of plastic wrap. Flatten using a meat pounder to 1/4-inch thickness. Season generously with salt and pepper. Spread 2 teaspoons Dijon thinly over tenderloin. Sprinkle rosemary and sage on top; distribute evenly using a spoon. Dust the surface with bread crumbs. Sprinkle with walnuts and cranberries.
- Fold the ends in about 1 inch. Roll tenderloin up from the long side as tightly and neatly as possible, forming a tube. Wrap in plastic and refrigerate about 1 hour.
- Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Unwrap tenderloin and transfer to the prepared baking sheet. Lightly season with kosher salt, black pepper, and cayenne. Wrap tenderloin in a single layer of bacon, tucking the ends underneath.
- Roast in the center of the preheated oven until the bacon is browned and an instant-read thermometer inserted into the center of the tenderloin reads at least 145 degrees F (63 degrees C), 25 to 30 minutes.
- While tenderloin roasts, combine white wine, balsamic vinegar, and Dijon in a pan over medium heat. Cook, whisking occasionally, until sauce reduces by about half, 5 to 7 minutes. Turn off heat and swirl in butter, salt, and pepper, about 30 seconds.
- Remove tenderloin from the oven and let rest for 5 minutes. Slice at a slight angle and serve with sauce.

CRANBERRY MAPLE WALNUT SAUCE
This is a great cranberry sauce for the holidays. The recipe was given to us at a company Thanksgiving party over 15 years ago. We have made it a few times over the years and found it to be a hit always. The sweetness of the combination, Textures of the walnuts and zest of the orange not only make it good for Thanksgiving dinner but one of our guests used it as a topping for plain cheese cake and WOW! Have to try!

- Wash cranberries.
- Mix in heavy sauce pan the cranberries, maple syrup, cranberry-raspberry concentrate (do not add water), zest and the juice from the orange.
- On High heat bring to a boiling point then reduce to medium heat for 10 minutes or till the cranberries pop-up.
- Then add the walnuts and remove from heat.
- Mix well and chill.
- Can be prepared a day or two in advance.

I wanted to try something different last Christmas, and a friend had me try this. It is amazing !!! I made a double batch after the first and froze it in dinner portions. Just thaw and serve as a side any time ! Adults and kids love it ! Great mix of sweet and sour and nutty.

- Wash cranberries and set aside.
- Wash the orange, remove seeds, and chop fine peel and all ! set aside.
- Bring sugar and water to a boil.
- Add cranberries, orange or tangerines, and cloves.
- Simmer over a high flame, stirring frequently, until berries pop.
- Add crushed drained pineapple, chopped walnuts, and a pinch of ground cinnamon and blend.
- Cool and serve.

RED WINE CRANBERRY SAUCE WITH WALNUTS
No one will be able to detect the red wine in the recipe. It just adds this wonderful fruitiness and a very deep flavor. The peppercorns may sound odd, but they add a wonderful spiciness that is complemented by the cinnamon. If you are skeptical abotu using them, you can leave them out. This is my first year to cook Christmas dinner and this is the cranberry sauce recipe I plan to use! It beats all the others I've made in the past.

- Combine the first 5 ingredients and one cup water in a medium saucepan.
- Bring to a boil, and cook 1 1/2 minutes.
- Add cranberries and walnuts and reduce heat to medium-low.
- Simmer, stirring frequently, until berries burst and the mixture is reduced to 4 cups, about 15 minutes.
- Place in an airtight container and let cool completely.
- Remove the cinnamon stick, zest and peppercorns.
- Refrigerate until ready to serve.
- Especially tasty with ham and turkey, but also delicious chicken and beef!

- Preheat oven to 350°. Toast mustard seeds in a dry small saucepan over medium-low heat, rolling around in pan often, until seeds start to pop, about 3 minutes.
