Vegetable oil
1 3/4 cups walnuts
1 cup whole almonds
1/4 cup matzo cake meal
8 large eggs, separated
1 tablespoon grated lemon peel
1 tablespoon grated orange peel
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup sugar, divided
2 tablespoons orange juice
Syrup and compote
4 large oranges, peel of 1 orange removed in strips and reserved
1 cup pure unsweetened pomegranate juice
1 cup sugar
1 tablespoon fresh lemon juice

Steps:

  • For cake:
  • Preheat oven to 350°F. Brush 13x9x2-inch metal baking pan with oil. Combine walnuts, almonds, and cake meal in processor; grind nuts finely.
  • Using electric mixer, beat egg yolks, lemon peel, orange peel, cinnamon, and salt in large bowl until beginning to thicken, about 3 minutes. Gradually add 1/2 cup sugar, beating until very thick and light in color, about 2 minutes longer. Beat in orange juice; fold in nut mixture. Using clean dry beaters, beat egg whites in another large bowl until soft peaks form. Gradually add remaining 1/2 cup sugar, beating until stiff but not dry. Fold egg whites into yolk mixture in 3 additions.
  • Transfer batter to prepared pan. Bake cake until puffed and deep golden and tester inserted into center comes out clean, about 35 minutes. Cool cake in pan on rack (center of cake will fall).
  • For syrup and compote:
  • Place large sieve over bowl. Cut off all peel and pith from oranges. Working over sieve, cut oranges between membranes to release segments into sieve. Squeeze any juice from orange membranes over. Let oranges drain while preparing syrup.
  • Bring pomegranate juice, sugar, lemon juice, and reserved orange peel to boil in medium saucepan over medium-high heat, stirring until sugar dissolves and thin syrup forms. Remove from heat.
  • Holding orange peel back with spoon, pour 3/4 cup syrup into small bowl. Spoon over cake; let stand at least 1 hour.
  • Add drained orange juice to remaining syrup in pan. Boil syrup with peel until reduced enough to coat spoon, about 8 minutes. Discard peel. DO AHEAD Cake can be made 1 day ahead. Cover and let stand at room temperature. Place orange segments in bowl. Cover and refrigerate orange segments and syrup separately.
  • Add syrup to orange segments; let compote stand 15 minutes. Trim edges of cake. Cut cake lengthwise into 2 1/2-inch-wide strips. Cut strips on diagonal into diamonds; place on plates. Spoon compote over and serve.

Moira Hodgson rooted this classic out of Claudia Roden's terrific cookbook, "Everything Tastes Better Outdoors," and brought it to The Times in 1987: a flourless orange and almond cake that goes beautifully with blueberries or peaches, and is the perfect thing to carry along on a picnic. Extremely moist, it consists of two seeded oranges (peel and all), ground almonds, sugar and eggs - and no flour. Baked in a hot oven, it will be done in just about an hour or so, longer if the orange pulp is extremely wet. Opening the oven door to check will not harm it.

  • Wash the oranges and simmer them, unpeeled, in water to cover for 2 hours. Cool, cut them open and remove the seeds. Puree the oranges, including the peel, in a food processor.
  • Heat oven to 400 degrees. Beat the eggs in a food processor or large bowl. Add the remaining ingredients, including the orange puree, and mix thoroughly. Pour into a buttered and floured cake tin, with a removable base if possible.

1/2 cup/120 milliliters extra-virgin olive oil, plus more for greasing the pan
1 cup/130 grams all-purpose flour, plus more for dusting the pan
1 cup/100 grams toasted, chopped walnuts
2 teaspoon baking powder
1/4 teaspoon fine sea salt
4 large eggs, separated
1 cup/200 grams granulated sugar
1/2 cup/120 milliliters buttermilk
1/2 teaspoon vanilla extract
2 teaspoons orange zest
1/2 cup/100 grams granulated sugar
1 cup/240 milliliters orange juice (from 3 medium oranges)
1 (1-inch) cinnamon stick
3 whole cloves
1 cup crème fraîche, lightly whipped cream or thick yogurt, for serving (optional)
1 cup pomegranate seeds (arils)

Steps:

  • Heat oven to 350 degrees. Lightly oil sides and bottom of a 9-inch springform pan or cake pan. Place a parchment circle in bottom of pan and lightly oil parchment. Dust with flour and shake off excess. Set pan aside.
  • Add the walnuts to a food processor and grind to a coarse powder. Place ground walnuts in a bowl, and add 1 cup flour, baking powder and salt. Stir and set aside.
  • In the bowl of a stand mixer, beat the egg whites until stiff. With a rubber spatula, transfer the whites to a sheet of parchment or to a separate bowl.
  • Put egg yolks in the bowl of stand mixer fitted with the whisk attachment. Add sugar and whisk on low speed until sugar is dissolved. Then increase speed and continue beating, scraping down sides of the bowl as necessary, until the mixture is pale yellow and thick, about 5 minutes.
  • Beat in buttermilk, vanilla extract and orange zest, then slowly add the flour mixture at low speed. Slowly add 1/2 cup/120 milliliters olive oil and beat for a minute or so to combine. Using a rubber spatula, quickly fold in the reserved beaten egg whites. (First, fold in 1/3 of the whites to lighten the batter, then fold in remaining whites.) Scrape batter into prepared cake pan, put pan on a baking sheet and place in oven on middle shelf.
  • Bake for 50 minutes to 1 hour, until a skewer inserted in the cake comes out clean. Cool in the pan on a rack, then invert onto a cake plate.
  • Meanwhile, make the syrup: In a small saucepan, put sugar, orange juice, cinnamon stick and cloves. Simmer over medium heat until slightly thickened, about 10 minutes. Let cool. Spoon half the syrup over top of cooled cake. Cut cake into wedges and serve with a dab of crème fraîche, if desired. Spoon more syrup over each portion. Sprinkle with pomegranate seeds.

1 ¾ cups almond flour
2 tablespoons white sugar
1 cup white sugar

  • Place orange in a saucepan. Cover with water and bring to a boil. Reduce heat to low and simmer until orange is soft, about 30 minutes. Drain.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch cake pan and coat the pan with a handful of the almond-sugar mixture.

Try this one when you are looking for something a bit unusual and out of the ordinary. A recipe by British chef Antony Worrall Thompson which I saw prepared on a BBC cooking program. I was intrigued by boiling then using the oranges whole, but admit that it makes for a well-flavored cake. I love the mascarpone cream as well because I cannot eat whipped cream but the mascarpone gives me very nearly the same mouth feel, and I find it delicious ! Preparation time includes the time to boil the oranges, but remember to PLAN in ADVANCE! As for the vanilla sugar, there are several recipes here on 'Zaar if you are unable to buy this at your local grocery.

200 g sugar
200 g ground almonds
1/2 teaspoon baking powder
6 eggs
1/2 lemon, juice only
250 g mascarpone
2 tablespoons vanilla sugar

Steps:

  • FOR THE CAKE:.
  • Place the whole oranges in a pan and cover with cold water.
  • Bring to the boil, then turn down the heat and simmer for two hours.
  • Check periodically that they don't boil dry and add water if needed.
  • Remove from the heat and allow to cool.
  • Preheat the oven to 200°C Grease and line with baking paper (including sides) a 20 cm (8 inch) springform pan.
  • Remove the oranges from the water; cut in half and remove any pips.
  • In a bowl, combine the sugar, ground almonds, and baking powder until well mixed.
  • Place the oranges in a food processor, skin and all, along with the lemon juice, and puree till the oranges are well broken down.
  • To the food processor, add half of the eggs and half of the almond/sugar mixture; process until well combined.
  • Add the remaining three eggs and the remaining almond mixture and process till thoroughly combined, scraping sides of bowl, as necessary.
  • Transfer batter to the springform pan and bake for 45 minutes.
  • Let cake cool before serving, and serve with a generous dollop of the mascarpone cream.
  • FOR THE MASCARPONE CREAM:.
  • Transfer the mascarpone to a bowl, and soften with a spatula until smooth.
  • Add the vanilla sugar and incorporate completely.
  • It is now ready to serve!

Steps:

  • Preheat oven to 350°F.
  • Butter and flour 13x9x2-inch metal baking pan. Bring 1 cup sugar, 1 cup water and 1/2 tablespoon orange peel to boil in heavy small saucepan, stirring often; boil 2 minutes. Refrigerate syrup uncovered.
  • Finely grind all nuts, graham cracker crumbs, cinnamon, and 1/3 cup sugar in processor. Using electric mixer, beat egg yolks, vanilla, 1/3 cup sugar, and remaining 1 tablespoon orange peel in large bowl until very thick, about 4 minutes.   • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch tube pan.
  • Whisk flour, baking powder, and baking soda together in a bowl.
  • Beat butter and sugar together in a bowl until creamy. Add marzipan. Add eggs one at a time, beating well after each addition. Beat half-and-half into butter mixture.
