FOOLPROOF PIE DOUGH

Foolproof Pie Dough image

Vodka is essential to the texture of the crust and imparts no flavor - do not substitute. This dough, which was developed by a test-kitchen team led by J. Kenji Lopez-Alt for "America's Test Kitchen," will be moister and more supple than most standard pie doughs and will require more flour to roll out (up to 1/4 cup).

Provided by The New York Times

Categories     dessert, side dish

Time 10m

Yield 2 pie crusts

Number Of Ingredients 7

2 1/2 cups unbleached all-purpose flour (12 1/2 ounces)
1 teaspoon table salt
2 tablespoons sugar
12 tablespoons cold unsalted butter (1 1/2 sticks), cut into 1/4-inch slices
1/2 cup chilled solid vegetable shortening, cut into 4 pieces
1/4 cup vodka, cold
1/4 cup cold water

Steps:

  • Process 1 1/2 cups flour, salt, and sugar in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogeneous dough just starts to collect in uneven clumps, about 15 seconds (dough will resemble cottage-cheese curds, and there should be no uncoated flour). Scrape bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl.
  • Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Divide dough into two even balls and flatten each into 4-inch disk. Wrap each in plastic wrap and refrigerate at least 45 minutes or up to 2 days.

2 tablespoons sugar
1 teaspoon salt
3/4 cup unsalted butter (cold)

  • Mix cold water and chilled vodka together. Slowly pour into the flour mixture (about 1 tablespoon at a time, stirring between additions, until just mixed together. Do not overwork.
  • Use your hands to gently press the dough into a ball. Divide dough into two equal pieces. Lay two 12-inch long pieces of plastic wrap onto the countertop. Transfer the dough onto the center of the plastic wrap.
  • Flatten each dough ball into a 2-inch disc. Wrap tightly with plastic wrap. Refrigerate for at least 1 hour before rolling. (Discs can be frozen for up to 3 months. Thaw in the fridge overnight before using.)

VODKA PIE CRUST DOUGH

  • Place the flour, sugar and salt in a metal or ceramic mixing bowl with high sides and mix together. If you plan ahead and have time for it, chill the mix for a couple of hours or even overnight.
  • If you have a food processor, you can use it to mix the pie dough. Place the flour mixture and cubed butter in food processor. Gently pulse until the flour changes from silky to mealy; this should only take a handful of pulses so watch it carefully.
  • If you don't have a food processor, you can easily cut in the butter by blending the flour mixture with either a pastry blender, two butter knives or even just by squishing it between your fingers, just be careful that the butter doesn't start to melt.

  • In a ziplock bag, add the flour, cornstarch, sugar, and salt. Shake the bag to combine fully. Place the bag into the freezer for two hours or overnight. This is an optional step but helps to keep the crust very flaky.
  • Meanwhile, grate the frozen butter, using a box grater, onto a small baking pan lined with parchment paper. Place the baking sheet into the freezer for at least 30 minutes.
  • In the bowl of a food processor, place the cold flour mixture and the frozen, grated butter. Pulse the flour and the butter until it looks like coarse crumbs. This will only take a few pulses. Don’t overmix the dough. If you don’t have a food processor, cut the butter into the flour using a pastry blender, 2 forks, or 2 knives. Try not to use your fingers, you don’t want to melt the butter.
  • While pulsing the food processor, slowly pour the vodka through the feed tube until it is just beginning to combine.

  • Gather, measure and prepare the ingredients as listed. For the most consistent results, we recommend using metric weight measurements whenever possible.
  • Combine flour, salt and sugar (if using) in a medium mixing bowl or food processor fitted with the blade attachment. Whisk or pulse to combine.
  • Add butter. With your hands, pastry cutter or food processor, cut butter into the flour mixture until a sandy texture with pea-sized crumbles are formed. If the butter begins to soften, return the dough to the refrigerator until chilled. Keep the dough cold throughout the entire process.
  • If using a food processor, transfer the butter and flour mixture into a medium mixing bowl. (See Note: e.) Then, using a rubber spatula, stir in the vodka. Add cold, ice water (just the liquid, no ice) into the dough a small splash at a time. Add just enough water until the dough will hold together when gently squeezed in your hand. The dough should be rather dry and slightly crumbly.

  • In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, salt, sugar and butter. On low speed cut the butter into the flour until you have some larger pieces but most of the butter has worked into the flour. You will notice that the flour will change color and be slightly darker.
  • Stop the mixer and pour the vodka over the top of the crust. Turn the mixer back on low and slowly pour the water over the crust. Mix on low until the flour has hydrated but a coheasive dough has not yet formed.
  • Turn out onto a countertop and press gently until a dough forms. It will be a little wet, but that is ok! Divide the dough in half. Press out into disks and wrap in plastic wrap.
  • Refrigerate until cold, at least 2 hours and up to 3 days. Alternatively you can freeze it for up to 2 months. Thaw it in the refrigerator before using. Make sure to keep it cold!
