1/2 cup barbecue sauce
1/4 cup lemon juice
1/4 cup pineapple preserves
4 teaspoons soy sauce
1/2 teaspoon ground ginger
30 uncooked large shrimp, peeled and deveined (about 2 pounds)
1 to 2 large green peppers, cut into 1-inch pieces
1/2 pound fresh mushrooms, halved

Steps:

  • In a small saucepan, combine the first five ingredients; bring to a boil over medium heat, stirring frequently. Remove from the heat; cool. Set aside 1/2 cup for basting. Place remaining sauce in a large resealable plastic bag; add shrimp. Seal bag; refrigerate for 30 minutes. , Drain and discard marinade. Thread the shrimp, green peppers and mushrooms alternately on six metal or soaked wooden skewers. Grill, uncovered, over medium-hot heat for 2 minutes on each side. Turn and brush with reserved sauce. Continue grilling for 4-8 minutes or until shrimp turn pink, turning and basting several times.

6 tablespoons chicken stock or water
3 tablespoons ketchup
3 tablespoons sugar
3 tablespoons pineapple or orange juice
2 tablespoons vinegar
2 teaspoons soy sauce
3/4 teaspoon crushed red pepper flakes
2 teaspoons cornstarch
1 pound shrimp
2 teaspoons minced ginger
2 teaspoons minced garlic
2 tablespoons peanut or vegetable oil
1 cup thinly sliced onions
1 cup 1-inch chunks green bell peppers
1 cup pineapple chunks
12 maraschino cherries
6 tablespoons thinly sliced green onions
Hot white rice, accompaniment

Steps:

  • To make the sauce, in a bowl, combine 1/4 cup of stock, the ketchup, sugar, juice, vinegar, soy, and 1/2 teaspoon of the pepper flakes. Set aside.
  • In a small bowl, combine the cornstarch with the remaining 2 tablespoons of stock and stir to dissolve. Set aside.
  • In a bowl, toss the shrimp with the ginger, garlic, and remaining 1/4 teaspoon pepper flakes. Set aside for 10 to 20 minutes.
  • Heat a large wok over high heat. Add the oil, swirling to coat the sides and bottom of the pan. Add the shrimp, garlic, and ginger and stir-fry until pink, about 2 minutes. Remove from the pan. Add the onions and peppers and stir-fry until crisp-tender, about 2 minutes. Add the sauce and cook, stirring, until the sugar dissolves. Add the cornstarch mixture and bring to a boil. Return the shrimp to the pan and add the pineapples, cherries, and green onions. Cook until the sauce is thick, about 1 minute.
  • Remove from the heat and serve over rice.

1 pound bag of 61/70 shrimp, I used peeled with the tails on
1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1/4 cup low sodium soy sauce
2 teaspoon minced garlic
zest of 1 orange
juice of 1 orange, approx 1/4 cup
wooden skewers

Steps:

  • Coat grill with cooking spray, preheat to medium high.
  • Combine all ingredients exluding shrimp and let melt while grill is heating.
  • Thread shrimp onto wooden skewers.
  • Baste shrimp skewers with sauce, place on grill, continue basting while grilling 2-3 minutes.
  • Turn skewers over, baste, grill 2-3 minutes more or until browned and cooked through.

1/4 cup rice wine vinegar
1/4 cup lime juice
1/2 cup canola oil
1 lime, zested
2 cloves garlic, smashed

1/4 cup freshly chopped basil leaves
Pinch salt
1 1/2 pounds large shrimp (16/20 per pound), peeled and deveined
2 limes, cut into wedges
Gina's Chili Cocktail Sauce, for dipping, recipe follows
1 teaspoon sweet chili sauce
1 cup peach preserves
4 tablespoons hot Chinese mustard

Steps:

  • Whisk all the marinade ingredients together in a small bowl. Add the shrimp to a large resealable plastic bag and pour in the marinade. Refrigerate for 20 minutes.
  • Preheat the grill to medium-high heat.
  • Oil the grill rack with a clean kitchen towel dipped in olive oil.
  • Skewer the shrimp, adding 1 or 2 wedges of lime onto each skewer. Grill for 1 1/2 minutes on each side. Remove from grill to a platter and serve with the Chili Cocktail Sauce.

2 tablespoons rice vinegar

  • In a small saucepan warm the peanut oil over medium heat.

  • Remove from heat and set aside at room temperature.

  • In a large bowl mix the oil, salt, chile powder, paprika and pepper.
  • Add the shrimp to the bowl and mix thoroughly to coat the shrimp evenly with the spices.
  • Thread shrimp onto metal skewers or you can also use a fish basket.
  • Heat grill to 500 to 550 degrees (high heat).
  • With the grill lid closed, grill shrimp over Direct high heat until just opaque in the center and firm to touch, 3-5 minutes, turning once.
  • Serve warm with as much sauce as you like drizzled over the top or use as a dipping suace.

These sweet and savory shrimp skewers are layered with mango, red pepper, and red onion.

¼ cup sweet chili sauce, such as mae ploy divided, plus 2 tablespoons, divided
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon fresh lime juice
1 ½ teaspoons liquid smoke
2 cloves garlic, grated
1 red bell pepper, cut into 16 1 in (2 cm) pieces
1 medium red onion, cut in to 1 in (2 cm) pieces
16 large shrimps, peeled, deveined, and tails removed
1 large mango, peeled and cut into 16 1-inch (2 cm) pieces
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon fresh cilantro, for garnish
Lime wedge, for serving
wooden skewer, 10 in (25 cm)

Steps:

  • Soak the wooden skewers in cold water for at least 30 minutes before using.
  • Arrange one rack in the center and one rack in the upper third of the oven. Preheat the oven to 450°F (230°C).
  • Make the sauce: Add ¼ cup (60 ml) sweet chili sauce, the honey, soy sauce, lime juice, liquid smoke, and garlic to a small bowl and whisk to combine. Set aside.
  • Build the skewers: Onto each wooden skewer, thread 1 piece of bell pepper, 2-3 pieces of red onion, 1 shrimp, and 1 piece of mango. Repeat to make a second layer. Continue with the remaining ingredients and skewers.
  • Arrange the skewers on a rimmed baking sheet and season on both sides with the salt and pepper. Brush both sides of the skewers with the smoky sweet chili sauce.
  • Transfer to the center oven rack and bake for 5 minutes. Turn the oven to broil and move the pan to the upper rack. Broil for 3-5 minutes, until lightly charred in spots.
  • Remove the skewers from the oven and brush with the remaining 2 tablespoons of sweet chili sauce. Transfer to a platter, sprinkle with the cilantro, and serve with lime wedges alongside.
