1 pound scallops

Steps:

  • In a medium sized bowl combine olive oil, lemon juice, garlic, and Italian seasoning.
  • Salt and pepper the scallops and add to the bowl and toss in marinade to coat. Let marinate in the fridge for about 30 minutes.
  • Place the scallops on a grill over medium high heat. Let cook on each side for about 2 minutes or until cooked throughout and slightly charred.

These scallops have a light and refreshing marinade and an extremely fast grill. They are perfect for a special family occasion.

1 lb Sea Scallops
2 tbsp Lemon Juice
2 tbsp Orange Juice
1 tbsp Honey
1/4 cup Olive Oil
2 cloves Garlic (minced )
Salt and Pepper (to taste)

Steps:

  • Combine the lemon juice, orange juice, honey, garlic and olive oil into a bowl and stir.
  • Pour the marinade into a Ziploc bag and add the scallops.
  • Make sure the scallops are fully coated and let it marinate in the refrigerator for about one hour.
  • Heat the grill to 375 degrees and use direct heat. Because this dish will grill so quickly, make sure the grill is fully up to temperature before adding any of the skewers.
  • Remove the scallops from the marinade and add four to five scallops on a flat metal skewer, leaving a little space in between to make sure there is air flow. Sprinkle a little salt and pepper.
  • Brush the grill with a little olive oil so the scallops don't burn and will release easily.
  • Lay the skewered scallops on the grill and cook each side for about 2-3 minutes. Don't overcook the scallops. You won't need more than a total of six to seven minutes. Look for the meat to turn an opaque white.
  • Remove and serve!

24 large sea scallops
3 tablespoons sesame seeds

Steps:

  • In a shallow dish, combine the pineapple juice, soy sauce, ginger, lime zest and lime juice. Add the scallops, turn to coat, and set aside for 30 to 40 minutes. Build a hot charcoal fire or preheat a gas grill. Toast the sesame seeds in a small skillet over medium heat until they turn one shade darker, about 4 minutes. Thread the scallops on four metal skewers, placing them so that the flat surfaces are exposed. ¾ cup butter
⅔ cup chopped onions
3 cloves garlic, chopped
¼ cup fresh lemon juice
1 pinch salt
1 ½ pounds sea scallops
⅓ cup chopped fresh parsley

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Melt butter in a saucepan over medium heat. Cook onion and garlic until soft and translucent, about 5 minutes. Remove from heat, and stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture. Let stand for about 2 minutes.

Steps:

  • Preheat a cleaned, oiled grill.

Steps:

  • In a blender blend olives, roasted pepper, garlic, mustard, vinegar, lemon juice, with salt and pepper to taste until smooth. With motor running, add 3 tablespoons oil in a stream and blend vinaigrette until emulsified.
  • Discard small tough muscle from side of each scallop if necessary and in a small bowl toss scallops with remaining tablespoon oil and salt and pepper to taste.
  • Heat a well-seasoned ridged grill pan over high heat until hot and grill scallops until just cooked through, 2 to 3 minutes on each side. Transfer scallops to a plate and keep warm. Grill tomatoes over high heat until tender and lightly charred, 1 to 2 minutes on each side.
  • Toss arugula with half the vinaigrette and divide between 2 plates. Top arugula with scallops and tomatoes and serve with remaining vinaigrette if desired.

zest and 2 Tbsp. juice from 1 lemon

18 sea scallops (1 lb.)
2 cups instant brown rice, uncooked
1/2 cup slivered almonds, toasted
3 Tbsp. chopped Italian parsley, divided

Steps:

  • Mix dressing, mustard, lemon zest, juice and pepper until blended. Reserve half the dressing mixture for later use. Pour remaining dressing mixture over scallops in shallow dish; turn to evenly coat both sides of scallops.
  • Refrigerate 30 min. to marinate. After about 15 min., prepare rice as directed on package, stirring in reserved dressing mixture before the final standing time.

1 green pepper
1 large Spanish onion
16 medium mushrooms, whole
4 tablespoons fresh ginger, minced

3/4 cup olive oil
1/4 lb butter, melted

1 1/2 pounds sea scallops (about 30)
About 30 fresh rosemary sprigs (each 3 to 4 inches long)
3 ounces prosciutto, sliced paper thin
3 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
Coarse salt and freshly ground black pepper

Steps:

  • Pull off and discard crescent-shaped muscle on side of each scallop that has one. Strip leaves off bottom 2 inches of rosemary sprigs (slide them off with your thumb and forefinger). Reserve leaves, and set sprigs aside. Cut prosciutto into strips just large enough to wrap around scallops (about 1 by 3 inches).
  • Lay a scallop flat on a work surface. Wrap a piece of prosciutto around it. Skewer a rosemary sprig through prosciutto and scallop to other side. Repeat with remaining scallops. Arrange scallops in a baking dish. Drizzle olive oil and lemon juice on both sides, sprinkle with rosemary leaves and season with salt and pepper. (Go easy on salt, as prosciutto is fairly salty.) Marinate for 15 minutes, while you light grill.
  • Set up grill for direct grilling, and preheat to high. Brush and oil grate. Arrange scallops on grate, and grill until just cooked, about 2 minutes a side. Serve at once.
