Nonstick cooking spray, for greasing the pan
Kosher salt and freshly ground black pepper
1 pound spaghetti
1 pound ground beef (85 percent lean)
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cups marinara sauce, homemade or store-bought (I like Rao's)
1/2 cup whole-milk ricotta cheese
2 tablespoons minced fresh flat-leaf parsley
3 large eggs
1/2 cup plus 2 tablespoons grated Parmesan
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
  • Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
  • In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
  • In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cooked spaghetti, beef and onions and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and sprinkle with the remaining 2 tablespoons Parmesan.
  • Bake until the cheese is bubbling and golden brown, 25 to 30 minutes. Let rest for 5 minutes, then cut into wedges and serve.

Spaghetti pie--a traditional Italian dish often made using leftover pasta--gets bumped up to center stage with just-cooked spaghetti, two types of cheese and tons of fresh herbs. A few shortcuts, including jarred sauce and cubed pancetta, make it easy to assemble for a crowd.

1 pound spaghetti
One 24-ounce jar tomato-basil sauce
2 cups cubed fontina cheese (about 8 ounces)
1 cup milk
1/2 cup fresh basil leaves, chopped
1/2 cup fresh parsley leaves, chopped
3 large eggs, lightly beaten
2 cups grated Asiago cheese (about 8 ounces)
One 6-ounce package cubed pancetta

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of well-salted water to a boil. Cook the spaghetti according to the package instructions for al dente. Drain well and let cool slightly.
  • Whisk together the tomato sauce, fontina, milk, basil, parsley, eggs, 1 cup of the Asiago, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the spaghetti and toss to coat.
  • Heat a 12-inch cast-iron skillet over medium-high heat and add the pancetta. Cook until golden and crispy, about 5 minutes. Transfer to the bowl with the pasta and toss to combine. Let the skillet cool for 5 minutes.
  • Pour the pasta mixture into the skillet and sprinkle the remaining 1 cup Asiago on top. Bake until the cheese is melted and bubbling and a knife inserted and turned in the center of the pie does not release any loose egg batter, 45 to 50 minutes.
  • Run a spatula underneath the pie to loosen the base. Slide it onto a serving plate and cut into wedges.

BEEFY CHEESY SPAGHETTI PIE

2 tablespoons extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, finely chopped
8 ounces 90 percent lean ground beef
One 15-ounce can crushed tomatoes
1/4 cup heavy cream
Kosher salt and freshly ground pepper

3 cups cooked cold spaghetti (about 6 ounces uncooked)
4 large eggs, beaten
1 cup cherry-size mozzarella (bocconcini or ciliegine), drained
1/4 cup grated Parmesan cheese
1/2 cup basil leaves, torn

Steps:

  • 1. Preheat the oven to 425 degrees F. Heat 1 tablespoon oil in a medium nonstick skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes. Add the beef and cook, breaking up the meat with a wooden spoon, until browned. Drain off any excess fat. Add the tomatoes and bring to a simmer. Stir in the heavy cream and season with 1 teaspoon salt and some pepper. Transfer to a bowl and reserve skillet.
  • 2. Add the cooked spaghetti to the beef mixture and toss well. Beat the eggs and add to the pasta along with the mozzarella and Parmesan cheese. Toss well to combine.
  • 3. Wipe out the skillet and heat the 1 tablespoon remaining oil over high heat. Add the spaghetti mixture and lightly press down. Cook until the bottom sets, about 5 minutes.
  • 4. Transfer the skillet to the oven. Bake until set in the center and crispy around the edges, about 15 minutes. Let stand at least 5 minutes. Scatter with torn basil leaves and serve warm or at room temperature.

1/2 pound dried spaghetti
2 teaspoons olive oil, plus 1 tablespoon
1 cup Basic Red Sauce, or store-bought pasta sauce, recipe follows
1/2 cup chopped green bell pepper
2 teaspoons minced garlic
1 teaspoon Essence, recipe follows
1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
1 1/2 cups cubed mozzarella (4 ounces)
1/2 cup chopped black olives, optional
4 ounces button mushrooms, wiped clean and thinly sliced, optional
4 large eggs
1/2 cup whole milk
3/4 cup sliced pepperoni
1/2 cup grated Parmesan
1 tablespoons olive oil
3/4 cup chopped yellow onions (1 medium yellow onion)
1/2 teaspoon minced garlic (2 cloves garlic)
1/4 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon ground black pepper
1 (28-ounce) can whole peeled tomatoes
1 (15-ounce) can tomato sauce
4 1/2 teaspoons tomato paste
1 cup water
1/2 teaspoon sugar
2 1/2 tablespoons paprika

Steps:

  • Bring a large pot of water to a boil over high heat. Add salt and spaghetti and stir to combine. Return to a boil, reduce heat to a low boil and cook until al dente, about 10 minutes. Drain spaghetti in colander. Return to the pot and toss with 2 teaspoons olive oil and set aside.
  • Preheat the oven to 375 degrees F. Lightly grease a 2-quart casserole dish with the remaining olive oil and set aside.
  • In a large mixing bowl combine the spaghetti, pasta sauce, bell pepper, garlic, Essence, Italian seasoning, crushed red pepper, and mozzarella and toss to mix well. If desired, also add chopped black olives and mushrooms, and mix to combine.
  • In a separate bowl, whisk the eggs and milk. Transfer the spaghetti mixture to the prepared dish and pour the egg mixture over the top. Arrange the sliced pepperoni in an even layer over the top, and sprinkle with Parmesan.
  • Bake until bubbly and golden brown on top, 20 to 25 minutes. Remove from the oven and let sit for 5 minutes before serving.
  • In a medium, heavy pot, heat the oil over medium heat. Add the onions, garlic, salt, basil, oregano and black pepper, and cook, stirring, until soft, 5 minutes.
  • Place the tomatoes in a large bowl and squeeze to break into small pieces. Add the tomatoes, tomato paste, water, and sugar to the pot and stir well. Bring to a simmer over medium-high heat.
  • Lower the heat to medium-low, and simmer uncovered for 45 minutes, stirring occasionally with a heavy wooden spoon.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

8 ounces spaghetti
2 large eggs
1/2 cup grated Parmesan cheese
1 pound ground turkey (or ground beef or chicken)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 cups Weelicious Tomato Sauce, recipe follows
1 cup ricotta cheese
1/2 teaspoon dried Italian seasoning
1 cup shredded mozzarella
1 tablespoon olive oil
1/2 onion, diced
1/2 teaspoon kosher salt
1 clove garlic, chopped
1/2 teaspoon dried Italian seasoning
One 15-ounce can tomato sauce
1 teaspoon sugar, honey or agave nectar

Steps:

  • Preheat the oven to 350 degrees F. Grease a deep-dish pie plate with olive oil.
  • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions until al dente. (This is a good time to make the tomato sauce.) Drain then transfer the spaghetti to a large bowl. Add 1 tablespoon of the olive oil and toss to coat. Set aside.
  • Whisk the eggs in a medium bowl, then whisk in 1/4 cup of the Parmesan cheese. Pour over the spaghetti and toss to coat. Transfer to the prepared pie plate and spread to make a "pie crust."
  • Heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add the turkey, 1/2 teaspoon salt, garlic powder and onion powder; cook, breaking up the turkey with a wooden spoon, until the turkey is cooked through, about 5 minutes.
  • Pour the tomato sauce over the turkey and stir to combine. Set aside.
  • Place the ricotta, Italian seasoning and the remaining 1/4 cup Parmesan in a bowl and stir to combine. Spread over the pasta, then layer on the meat sauce and finally, sprinkle with the mozzarella.
  • Place the pie plate on a rimmed baking sheet and bake until the pasta is golden brown and the cheese is bubbling, about 30 minutes.
  • Let the spaghetti pie cool slightly, then cut into wedges and serve.
  • Heat the olive oil in a small saucepan over medium heat. Add the onions and salt and cook, stirring occasionally, for 5 minutes.
  • Add the garlic and Italian seasoning and continue to cook, stirring, for 1 minute. Add the tomatoes and sugar and cook, stirring occasionally, until slightly thickened, 5 to 10 minutes.

COUSIN VINNIE'S TOMATO SAUCE



Cousin Vinnie's Tomato Sauce image

Not my cousin Vinnie, but someone's cousin Vinnie...The original recipe was only slightly different - I modified it for canning. Just keep in mind if you choose to can it - this recipe has NOT been laboratory tested for safety! If you're not a canning pro and not willing to take the risk, then store it in the refrigerator and use soon, or freeze for long term storage. This sauce should only be canned using a pressure canner. That said, this is a flavorful sauce that works well as is over pasta.

10 lbs fresh roma tomatoes
5 garlic cloves, unpeeled
1 medium sweet vidalia onion, peeled and left whole
1 large carrot
1 bunch fresh Italian parsley, large stems removed (optional)
8 -10 fresh basil leaves
4 tablespoons fresh oregano or 2 tablespoons dried oregano
1/2 cup dry chianti red wine
1 pinch crushed black pepper
1 pinch sea salt
lemon juice
1 pinch crushed dried red pepper

Steps:

  • Trim the stems from the tomatoes but leave on the skin.
  • Put the tomatoes, unpeeled garlic, peeled onion, and the trimmed carrot in a roasting pan.
  • Roast the vegetables at 375 degrees for 20 minutes.
  • Turn off the heat and let sit in the hot oven until the vegetables are cool enough to handle, about 1/2 to 1 hour, depending on your oven.
  • Squeeze the pulp out of the tomatoes into a large pot and discard the skins. Pour any juice that accumulated in the roasting pan into the pot.
  • Put the pot on the stove on medium heat, stirring occasionally.
  • Meanwhile, squeeze the garlic cloves out of their skins into a blender, cut up the onion and carrot into large chunks and add them to the blender. Also add the parsley, basil and oregano.
  • Blend until smooth, adding some of the measured wine as needed to make the mixture thin enough to blend. Add the spices and blend well.
  • When the mixture is ready, add it all to the pot, and add any of the measured wine that is left.
  • When the sauce reaches a boil, turn it down to a simmer and let it sit all day, stirring occasionally, or until it reaches the desired consistency.
  • For canning: Add one tablespoon of lemon juice to each pint jar, then add the tomato sauce, leaving 1/2 inch of space. Clean the rims, then put on new (unused) flat lids and rings.
  • Add the amount of water recommended for your canner into the canner, place the jars in the canner and seal the lid.
  • Follow the manufacturer's directions to process at 10 pounds for 15 minutes (for elevations up to 1000 feet). (If you don't have the manufacturer's directions then I strongly suggest you freeze your sauce instead. Following the proper directions is a must for safe canning.) Allow your canner to cool naturally, not by running it under cold water.
  • Check the seals on the jars before storing. Any that didn't seal should be refrigerated and used promptly.
