¼ cup fresh bread crumbs
¼ cup finely diced onion
1 egg
1 teaspoon dried parsley
1 teaspoon Worcestershire sauce
1 clove garlic, minced, or more to taste
1 pound ground beef
½ pound lean ground pork
2 tablespoons avocado oil
1 large onion, thinly sliced
1 (8 ounce) package sliced cremini mushrooms
¼ cup dry red wine
2 cups beef broth
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
4 tablespoons beef broth
2 tablespoons cornstarch

Steps:

  • Combine bread crumbs, onion, egg, parsley, Worcestershire sauce, and garlic in a large bowl. Stir well and add beef and pork. Mix gently and form 8 equal portions. Place patties on a plate, cover with plastic wrap, and refrigerate 1 hour. Remove from the refrigerator 30 minutes before cooking.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil. Add patties in batches to avoid overcrowding the pot. Saute 2 minutes per side. Transfer cooked patties to a plate. Add onions to the pot and cook until brown, about 2 minutes. Add mushrooms and cook 2 minutes more.
  • Pour wine into the pot and stir, scraping up all the brown bits from the bottom. Add broth, tomato paste, salt, and pepper; stir well. Return cooked patties and any accumulated liquid to the pot and turn to coat.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
  • Combine 4 tablespoons broth and cornstarch in a bowl and stir until dissolved. Add mixture to the pot slowly, stirring constantly. Select Saute function; cook until thickened, about 5 minutes.

1 lb ground beef
1/3 cup finely chopped onion
1/4 cup cracker crumb
1 egg, slightly beaten
1 1/2 tablespoons prepared horseradish
1 teaspoon salt
1 teaspoon pepper
2 tablespoons butter
1 medium onion, sliced, into, rings
8 ounces fresh mushrooms, sliced
3 tablespoons butter
3 tablespoons flour
salt
pepper
1/2 cup cream
3/4 cup chicken broth
1 dash Worcestershire sauce
1 dash hot sauce

Steps:

  • Combine ground beef, chopped onions, cracker crumbs, egg, horseradish, salt and pepper. Shape into patties.
  • Heat 2 tablespoons butter in skillet.
  • Cook patties till no longer pink inside - approx 8 minutes each side.
  • In separate pan, melt 3 tablespoons butter. Sauté onion rings and mushrooms til tender.
  • Remove patties from pan.
  • Stir flour into pan, scraping bottom of pan. Add dash of salt and pepper. Cook 2 minutes. Stir in cream to form a thick paste.
  • Slowly stir in chicken broth - stir till thick.
  • Add a few dashes of Worcestershire sauce and hot sauce. Stir till mixed well.
  • Simmer 5 minutes Add mushrooms, onions and patties.
  • Heat 10 minutes.

1/2 cup Italian bread crumbs
1 egg, lightly beaten
1/2 cup frozen chopped onions
1 teaspoon steak seasoning (recommended: Montreal)
1 tablespoon canola oil
2 tablespoons butter, divided
1/4 cup cognac
1 (8-ounce) package sliced fresh mushrooms
2 cups low-sodium beef broth
1 (1.2-ounce) packet brown gravy mix
Cooked rice, for serving

Steps:

  • In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning. Mix thoroughly and shape into 4 oval patties.
  • Heat oil and 1 tablespoon butter in large skillet over medium-high heat. Brown patties on both sides and transfer to a plate.

2 lbs ground beef
1/3 cup onions (chopped)
1 egg
1/2 cup bread crumbs
2 Tbsp Worcestershire sauce
1 tsp parsley
1 tsp pepper
1/2 tsp crushed red peppers
4 cups beef broth
3 Tbsp flour
2 cups onions, (chopped)
3 cloves garlic, (minced)
8 oz mushrooms, (sliced)
1 Tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper

Steps:

  • In a medium mixing bowl, mix ground beef, onions, egg, bread crumbs, Worcestershire sauce, parsley, crushed red peppers and pepper together. Divide into equal amounts and shape into oval patties about 1/2 inch thick. Should get 5 or 6.
  • Heat a cast iron pan or large frying pan over medium high heat and cooked each patty for about 4-5 minutes on each side.
  • Once cooked on both sides, remove from the pan and place on a plate.
  • Reduce heat to medium, add onions and garlic to the pan along with the steak drippings. Cook for 3-4 minutes. Stir in mushrooms and continue cooking for another few minutes.
  • Sprinkle flour over the mushrooms and onions, stir and cook for another minute or so.
  • Next, add beef broth, Worcestershire sauce, salt and pepper. Stir for a few minutes and place the Salisbury steaks back into the pan and cover with the gravy mixture.
  • Cover pan and cook for about 20-30 minutes gently stirring occasionally. The gravy will also thicken up as it cools so make sure not to cook it too long or your gravy will be too thick. If that happens, just add a little more beef broth to thin it out.
  • Serve over mashed potatoes with a delicious vegetable.
  • Enjoy!
  • *And if the gravy seems to thin, mix 1 tsp corn starch with 1/8 cup water, then add to pan, stir and let simmer for a few more minutes.

1/2 cup panko breadcrumbs ((or 1/3 cup ordinary breadcrumbs))
1 lb/500g ground beef (mince)
1 garlic clove (, minced)
1 egg
2 tbsp ketchup
1 beef bouillon cube (, crumbled)
1/2 tsp Worcestershire sauce
3 tsp dijon mustard (OR 2 tsp dry mustard powder)
1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
5 oz/150g mushrooms (, sliced)
2 tbsp unsalted butter
3 tbsp (35g) flour ((all purpose / plain))
2 cups (500 ml) beef broth / stock
1 cup (250 ml) water
2 tsp dijon mustard
2 tsp Worcestershire sauce
Salt and pepper

Steps:

  • Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
  • Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
  • Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
  • Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
  • If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
  • Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
  • Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
  • Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
  • Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
  • Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
  • Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

Steps:

1 egg
½ c almond meal
1 t black pepper
1 t paprika
1 t whole grain dijon mustard
½ t onion powder
6 oz sliced button mushrooms
1 small red onion
1 c beef stock
1 c red wine
1-2 t arrowroot powder
1 T grass fed butter or ghee

Steps:

  • Pre heat oven to 350F.
  • In a large mixing bowl place ground beef, 1 large egg, almond meal, salt, pepper, paprika, dijon mustard, and onion powder.
  • Mix ingredients with hands until well combined.
  • Make 4 inch patties and place on baking sheet.
  • Press fist into middle of patties to make a small "bowl."
  • Place in oven for 15 minutes and flip.
  • Place back in oven for 15 minutes.
  • Thinly slice red onion and mushrooms, and place in a hot skillet with melted butter.
  • Cook down till fragrant (about 3-5 minutes on medium-high heat).
  • Add beef stock, and wine.
  • Bring to soft bowl and reduce heat to low.
  • Slowly whisk in arrowroot powder till desire thickness is reached.
  • Once steaks are browned and reached an internal temperature of 165F, remove from oven.
  • Spoon gravy atop each steak and serve!

My homemade Salisbury steak is quick and satisfying. With a hearty, rich mushroom gravy, each savory bite is literally dripping with flavor.

1.5 lbs ground beef ((90/10 preferred))
1/4 cup onion (diced (See Note 1))
1 large egg (beaten)
2 tbsp ketchup
2 tbsp dijon mustard ((separated))
2 tbsp Worcestershire sauce ((separated))
1/3 cup Panko bread crumbs
1 tsp kosher salt
1/2 tsp black pepper
2 tbsp bacon fat or olive oil ((separated))
1 large white onion (sliced thin)
8 oz mushrooms (sliced)
2 tbsp all-purpose flour
2 cups beef broth
parsley to garnish (chopped)

Steps:

  • In a bowl combine the ground beef, onion, egg, ketchup, one tablespoon of mustard, one tablespoon of Worcestershire sauce, Panko breadcrumbs and salt and pepper. Knead by hand until combined. Form into 4 oval patties to give them a "steak" appearance (See Note 2).
  • Heat a cast iron pan or large skillet until very hot. Add 1 tablespoon of bacon fat or oil and then patties. Sear patties to a crispy brown, 3-5 minutes per side. Remove from pan and set aside on a paper towel lined plate and cover to keep warm or a casserole dish if serving later.
  • Add the other tablespoon of bacon fat or oil to the pan and sauté the onion until golden brown over medium heat. Add the mushrooms, remaining tablespoon of mustard and Worcestershire sauce and cook for several minutes. Mushrooms will release water so cook mixture down for several minutes. Season with salt and pepper.
  • Sprinkle flour over all and stir, cooking for another minute. Slowly add the beef stock, stir to mix and bring to a boil. Lower heat to simmer for several minutes, sauce will thicken. Season to taste.
  • Add the "steaks" back to the pan, cover and cook for 2-3 minutes to heat through. If in casserole dish to serve later: cover and cook 10 minutes in 350°F oven to heat through.
  • Serve over mashed potatoes and pour mushroom onion gravy over each salisbury steak. Sprinkle with parsley to garnish.

The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

1 pound 85% lean ground beef
½ teaspoon freshly ground black pepper
1 teaspoon dry mustard
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 large egg, beaten
1 pinch cayenne pepper, or to taste
½ cup plain bread crumbs
2 tablespoons salted butter
12 large white button mushrooms, sliced
1 cup diced onion
1 pinch salt
2 tablespoons all-purpose flour
2 tablespoons ketchup

3 cups high-quality, low-sodium beef broth

Steps:

  • Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
  • Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
  • While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
  • Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.

1/3 cup bread crumbs
2 teaspoons ketchup
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder

1 onion (small)
1 teaspoon oil
2 cups beef broth
4 tablespoons flour
1 teaspoon ketchup
1/2 teaspoons Worcestershire sauce

Steps:

  • If you want caramelized onions in your gravy, start by thin slicing a small onion. Cook with 1 teaspoon oil over medium-high heat until nicely brown. About 7-8 minutes. You can cook the optional mushrooms instead or in addition with the onions. Set aside in a bowl.
  • In a large mixing bowl, combine 1 pound of ground beef with 1/3 cup breadcrumbs, 2 teaspoons ketchup, 1 teaspoon mustard and Worcestershire sauce, and 1/2 teaspoon garlic powder. If not doing the onions, then add 1/2 teaspoon onion powder.
  • Divide the hamburger mixture into 3-4 equal portions. A quarter-size indent in the middle of one side to prevent puffing up of the patties and make cooking evener.
  • Place steak patties in a large frying pan with a teaspoon of oil over medium-high heat. Flip about every 5-6 minutes until an internal temperature of 165°. About 15-20 minutes depending on the thickness, the pan, and your burners.
  • Whisk 4 tablespoons flour with 1 cup beef broth. Remove the Salisbury steak to a plate and lightly tent. Pour out most of the liquid, leaving about 3-4 tablespoons of liquid. Allow the pan to cool some. Add 1 cup beef broth and bring to a light boil over medium heat.
  • Slowly add the flour-broth mixture while continuing to whisk. Add 1 teaspoon ketchup and 1/2 teaspoon Worcestershire sauce. Add salt and pepper to taste.
  • Whisk until nicely thickened, a few minutes. If using the caramelized onions or mushrooms, add them to the gravy and mix well.
  • Add steak back into the mixture, simmer for a few minutes until everything is hot.

8 oz mushrooms (sliced)

Steps:

  • By hand, combine the ground beef, breadcrumbs, Worcestershire sauce, garlic powder, onion powder, eggs, salt and pepper. Gently mix until all combined. Form into 6 oval patties and set aside.
  • Add butter and oil together in a large rimmed skillet on medium heat. Add patties and cook 3-4 minutes per side.
  • Remove from the skillet and drain any excess grease.
  • Reduce the heat to medium and add in the sliced onions and mushrooms to empty skillet. Stir and cook until golden brown and and tender. Whisk in the tomato paste and cook for about 3 minutes. Stir in the flour and cook for an additional minute. Slowly whisk in the beef stock and wine. Stir and allow the gravy to reduce and thicken for about 5 minutes.
  • Return the patties to the gravy. Cover with gravy, and let them simmer for 15 minutes.
  • Serve the steak topped with the onion mushroom gravy.

1/2 cup panko breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup chili sauce
1 Tbsp steak sauce
1 large egg
1 1/2 tsp Kansas City steak seasoning
1/2 tsp onion powder
1/4 tsp garlic powder
3 Tbsp olive oil
For the gravy:
1 medium onion sliced
8 oz sliced portabella mushrooms
1/4 cup all purpose flour
1 14 oz can low sodium beef stock or broth
3 Tbsp chili sauce
1 Tbsp steak sauce
1 tsp Kansas City steak seasoning
2-3 cloves garlic (minced)
black pepper to taste

Steps:

  • In a medium size bowl, mix together ground beef, breadcrumbs, Parmesan cheese, chili sauce, steak sauce, egg, steak seasoning, garlic and onion powders. Mix until blended.
  • Form into 4 large, 6 medium, or 8 small oval steaks. I use a spoon to roughly divide the mixture while it's still in the bowl.
  • To cook: Drizzle a large skillet with a few drizzles of olive oil. Brown the steaks over medium-high heat on both sides, then remove from the pan. (It's not necessary to cook them all the way through at this point, just brown.)
  • Reserve 2 tablespoons of drippings and discard the rest from the skillet. Add the sliced onion and mushrooms to the pan and cook over medium-high for 2-3 minutes scraping any brown bits from the bottom of the skillet.
  • To make the gravy: Add 1/4 cup of flour and stir well coating the vegetables.
  • To the skillet add broth, chili sauce and seasonings. Stir until blended and allow to bubble and thicken slightly for 2-3 minutes.
  • Lower the heat to simmer and return the Salisbury steaks to the gravy.
  • Cover and simmer for around 12-15 minutes or just until cooked through and no pink remains.
  • Uncover and check the gravy for thickness. If it needs thickening, dissolve 1 tablespoon of all purpose flour in cold water, and add it to the gravy, stirring constantly. Continue this process until you reach your desired consistency.
  • Serve immediately.

Steps:

  • Finely mince about ½ cup of the onion and slice the remainder of the onion. The minced onion will go in the ground beef mixture, the rest will be used for the gravy.
  • Add the ground beef, minced onion, breadcrumbs, egg, 1 Tbsp of the Worcestershire sauce (the remainder will go in the gravy), Italian seasoning, salt, and pepper to a large bowl. Use your hands to mix the ingredients together until they are evenly combined. Divide the mixture into four equal parts, and shape each into a flattened oval.
  • Add the cooking oil to a large skillet and heat over medium. Once the skillet is hot, add the shaped beef patties and cook for about 5 minutes on each side, or until they are well browned on each side. Transfer the cooked patties to a clean plate.
  • While the beef patties are cooking, slice the mushrooms. After removing the beef from the skillet, add the sliced mushrooms and the remaining sliced onion along with a pinch of salt and pepper. Continue to cook the mushrooms and onions over medium until they are soft. Allow the moisture released from the onions and mushrooms to help you dissolve any browned bits off the bottom of the skillet as you stir.
  • Once the mushrooms and onions have softened and most of the moisture has evaporated off the bottom of the skillet, add the butter and flour. Continue to stir and cook for about two minutes. The flour and butter will form a paste and begin to coat the bottom of the skillet.
  • Add the beef broth and one tablespoon of Worcestershire sauce to the skillet. Stir to dissolve the flour into the broth, making sure to dissolve any flour that is stuck to the bottom of the skillet. Allow the broth to come up to simmer (still over medium heat), stirring often. Once it reaches a simmer, it will thicken into a gravy.
  • Once the gravy is simmering, add the beef patties back to the skillet with the broth, mushrooms, and onions. Spoon the gravy over top, and continue to simmer the beef in the gravy for an additional five minutes. Taste the gravy and adjust the salt and pepper to your liking.

1 tablespoon Worcestershire sauce
1 small onion, diced
1 tablespoon steak seasoning (I use Montreal Steak spice)
1 cup sliced mushrooms
2 tablespoons butter
2 tablespoons flour
2 cups beef stock
salt and pepper

Steps:

  • Gently combine ground beef, worchestershire sauce, steak spice and onion - be careful not to overwork the meat mixture.
  • Shape the meat into oval patties, not too thin.
  • At medium to high heat, fry the meat patties approximately 6 mins on each side - turn only once.
  • Remove the cooked patties to a platter and cover with tin foil to keep them warm.
  • Add butter to the same pan and melt.
  • Add the mushrooms, salt and pepper to the pan, saute until nice a golden brown (approx. 3-5 mins).
  • Sprinkly the flour over the mushrooms and cook for 1-2 mins until flour has absorbed the butter (sometimes I added a little bit more butter at this stage).
  • Whisk in the beef stock and cook until thickened. Check for seasoning.
  • Serve gravy over the meat patties.

Steps:

  • Heat a little amount of oil in a small skillet and sweat the onion until soft.
  • In a large mixing bowl, combine beef, onion, breadcrumbs, egg, ketchup, mustard, and worcestershire sauce. Season with salt and pepper. Mix well and shape them into 4 patties.
  • Heat 1 tbsp of butter and olive oil in a heavy cast iron skillet over medium heat, add the beef patties and cook for 3-4 minutes on each side. It is okay if the patties are not fully cooked. Transfer the patties to a plate and set aside.
  • Add the 1 tbsp butter to the skillet and add the onion. Cook until just softened. Add the mushrooms and continue to cook until soft, seasoning with salt and pepper.
  • Sprinkle flour and toss well until you don't see the white flour. Pour the beef stock and stir to combine everything.
  • Return the patties to the skillet and simmer for 5 min or until the sauce thickens. Garnish with the parsley if you wish. Serve hot with mashed potatoes.

  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

  • Coat patties with 1 1/2 tablespoons of the flour. Melt butter in a large skillet over medium heat. Add patties and cook about 10 minutes, turning once, until crusty and no longer pink in the middle. Remove to a plate and cover to keep warm.

2 pounds lean ground beef (85% to 15%)
3 garlic cloves, grated or minced
4 tablespoons ketchup
1 tablespoon Worcestershire sauce

2 tablespoons chopped fresh parsley
1 tablespoon fresh thyme leaves
1/2 teaspoon salt
1/8 teaspoon black pepper
2 eggs
2 tablespoons olive oil or vegetable oil

8 ounces mushrooms, thinly sliced (white or brown)
1/2 cup chopped onion
2-3 garlic cloves, grated or minced

Steps:

  • Grate the onion into a large bowl, stir in the breadcrumbs and let sit for 5 minutes, stirring at least once.
  • Add the beef, garlic ketchup, Worcestershire sauce, mustard, herbs and seasonings.
  • In a small dish, lightly whip the eggs with a fork and pour over the mixture.
  • Blend the mixture together with your hands just until combined. Do not over-mix or the beef will be tough.
  • Divide the beef into 6 equal portions and shape each portion into a thick, oblong-size patty.
  • Add the olive oil to a large skillet set over medium-high heat and brown the patties on both sides, about 1 minute per side. Do not cook the patties completely as they will finish cooking in the gravy.
  • Remove the patties and reserve on a plate.
  • In the same skillet set over medium heat, add the oil and onions and cook for 2 minutes. Add the sliced mushrooms and sauté until the mushrooms are lightly browned and the onions are translucent, about 2 minutes. Stir in the garlic and cook briefly until fragrant.
  • Add the butter to the skillet and when it has melted sprinkle the flour over the mushrooms, stir and cook for 30 seconds to cook the flour.
  • Slowly add the beef broth while stirring continually until the gravy has thickened. Stir in the mustard and taste for seasoning.
  • Transfer the beef patties back into the skillet, reduce the heat to low and simmer for 8-10 minutes.
