Here is a delicious recipe for Gluten Free Pumpkin Muffins to be enjoyed anytime of year. Feel free to adjust the spices to accommodate your family's particular tastes. We also like to add chocolate mini chips or pepitas to shake things up a bit.

240g (8.5 oz) Flour Farm Organic Gluten Free Flour Blend (about 2 1/4 C spoon & level)
1 1/4 tsp Baking Soda (7.5g)
1 tsp Ground Cinnamon (3g)
1 tsp Pumpkin Pie Spice (2.5g)
1/2 tsp Ground Allspice (1.5g) - or add up to 1 tsp if you like more spice (3g)
1/2 tsp Extra Fine Pink Himalayan Salt (3g)
255g (9 oz) Pumpkin Puree (1 C)
113g (4 oz) Brown Sugar (1/2 C)
2 Large, Pasture Raised Eggs (100g)
57g (2 oz) Unsweetened Applesauce (about 1/4 C)
118 ml (4 fl oz) Avocado or Sunflower Oil (1/2 C)
57g (2 oz) Plain Greek Style Yogurt or Sour Cream (1/4 C)
1 tsp Pure Vanilla Extract (5 ml)
1 T Turbinado Sugar (Raw) or Coconut Sugar - Optional (about 20g)

Steps:

  • Bring eggs to room temperature (preferred)
  • Preheat the oven to 425 degrees Fahrenheit (218 C)
  • If using liners, place 12 liners in muffin wells. If not using liners, spray or grease muffin wells. (try our non-stick baking Goop)

Gluten Free Pumpkin Muffins are soft and fluffy, made with pumpkin puree and classic pumpkin pie spices, and ready in under 45 minutes!

1 1/4 cup gluten free 1-to-1 all-purpose flour
3/4 cup light brown sugar
2 teaspoons baking powder (double acting)
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup pumpkin puree
2 large eggs (room temperature)
1/4 cup unsalted butter (room temperature )
1/4 cup half and half

Steps:

  • Preheat oven to 400°F. Grease a muffin pan and set aside.
  • Whisk together dry ingredients in a mixing bowl. In a separate bowl beat eggs, then add to dry ingredients.
  • Add half and half, butter, and pumpkin puree to dry ingredients. Stir all ingredients together (or use a stand mixer) until well combined. Be careful not to over-mix.
  • Add muffin batter to greased muffin tin evenly among 9 of the cups. (You can spread them among 12, but the muffins will be slightly smaller).
  • Bake for 20-25, or until muffins are golden brown and a toothpick comes out clean.

½ cup tapioca flour
½ cup brown rice flour
¾ cup white rice flour
¼ cup sorghum flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
1 (15 ounce) can pumpkin puree
3 eggs
½ cup packed brown sugar
¼ cup milk
¼ cup butter, melted
1 ½ cups confectioners' sugar
¼ cup butter, melted
2 tablespoons milk, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 18 muffin cups.
  • Whisk tapioca flour, brown rice flour, white rice flour, sorghum flour, baking powder, baking soda, salt, cinnamon, cloves, ginger, and nutmeg in a bowl until thoroughly combined. Mix pumpkin, eggs, brown sugar, milk, and 1/4 cup melted butter in a separate bowl; beat for 2 minutes. Gradually mix dry ingredients into pumpkin mixture to make a smooth batter; scoop batter into the prepared muffin cups, filling them 3/4 full.
  • Bake in the preheated oven until muffins are lightly browned and a toothpick inserted into the middle comes out clean, 25 to 30 minutes. Cool muffins on wire racks.
  • Stir confectioners' sugar with 1/4 cup melted butter in a bowl until thoroughly combined. Stir milk into the glaze, about 1 teaspoon at a time, until the glaze is thin and runny. Drizzle glaze on top of cooled muffins.

9 ounces pumpkin
1/3 cup maple syrup
1 teaspoon gluten-free vanilla extract (I use a little less vanilla paste)
2 cups all purpose gluten-free flour (Use your favorite mix)
1 teaspoon guar gum
1 cup brown sugar (you may use 3/4 cup if you prefer it less sweet)
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon powdered ginger
1/4 teaspoon ground allspice
2 eggs (or Ener-G egg replacer)
1/3 cup canola oil
1/2 cup orange juice
1 cup granulated brown sugar
1 teaspoon cinnamon

Steps:

  • Combine all dry ingredients into a mixing bowl.
  • Make a well in the middle and add the wet, stir with a mixing spoon softly until combined--don't stir a lot just blend.
  • Gently fold in pumpkin mixture until blended.
  • Let it rest for 7-10 minutes and put cupcake papers in pan, oil them.
  • Fill each paper cup very well for nice voluminous muffins.
  • Top with topping mixture and bake at 350F for 20-25 minutes or until done.
  • Place on wire rack until cool.
  • Enjoy!

If you are making this recipe in the United States - use unsweetened canned pumpkin. These quick, easy muffins can be prepared in less than 10 minutes and are totally scrumptious!

1 cup brown rice flour
1 cup white rice flour
1 1/2-2 tablespoons gluten free baking powder
1/2 teaspoon baking soda
1 teaspoon xanthan gum
1/2 teaspoon fine celtic sea salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 cup agave nectar
1 cup sultanas or 1 cup raisins
1 organic egg
1/4 cup cold pressed canola oil
1/2-1 cup of plain mashed pumpkin
1/2 cup organic almond milk or 1/2 cup soy milk

Steps:

  • Sift flours, baking powder, baking soda, xanthan, salt and spices in a bowl and stir together mixing evenly.
  • Break an egg into the mixer and gradually add in the oil, milk, and then the pumpkin, until mixed through.
  • Add in the dry ingredients and mix until a thick batter forms.
  • Fold in the raisins and spoon into well greased muffin pots.
  • Bake in a moderate oven - about 170C/325 F for approximately 20 minutes.
  • Serve warm, with butter and honey, eat cold as a snack, or enjoy with a warm bowl of soup or zesty salad.

1 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda

1 cup vegetable oil
1 1/3 cups milk

Steps:

  • Preheat oven to 350 degrees F and spray or grease muffin tins.
  • In a large bowl combine flour, brown sugar, baking powder, baking soda, and salt.
  • Stir until well blended and set aside.
  • In a separate bowl combine pumpkin, oil, and milk.
  • Gently stir liquid mixture into dry ingredients, just until blended. DO NOT OVERMIX.
