Steps:
- In a small bowl, mix beans, tomatoes and green onions. Spread half the tortillas with bean mixture. Sprinkle with cheese; top with remaining tortillas., Heat a griddle over medium heat. Place tortillas on griddle in batches. Cook until golden brown and cheese is melted, 2-3 minutes on each side. If desired, serve with sour cream and salsa.

SPINACH AND FETA QUESADILLAS
Quesadillas inspired by the flavours of spanakopita, Greek spinach pie with spinach, fresh herbs, feta and plenty of melted cheese.

Steps:
- Mix the spinach, herbs, green onions and feta in a bowl.
- Melt a touch of butter in a pan.
- Place a tortilla into the pan, swirl it around in the butter and repeat with the second tortilla.
- Sprinkle half of the cheese on the tortilla followed by the filling, the remaining cheese and finally the other tortilla.
- Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side. (Tip: To easily flip the quesadilla place a plate onto the quesadilla in the pan and flip it from the pan to the plate and then slide it back into the pan.)
WHITE BEAN, TOMATO AND GOAT-CHEESE PIZZA

- Position oven rack on lowest shelf and preheat oven to 500°F. Lightly oil a 17- by 14-inch heavy baking sheet (without sides) and sprinkle with cornmeal, tapping off excess.
- Pulse beans with garlic, broth, and 1 teaspoon oil in a food processor until coarsely chopped and season with salt and pepper.
- Dust pizza dough and your hands with flour. Holding 1 edge of dough in the air with both hands and letting bottom touch work surface, move hands around edge (like turning a steering wheel), allowing weight of dough to stretch it roughly into a 10-inch round. Flour backs of your fists and with them stretch dough from center of underside, turning dough to maintain a rough circle, until 13 to 14 inches.
- Place on baking sheet.
- Spread bean purée over dough, leaving a 1-inch border around edge. Top purée with tomatoes and onion, then sprinkle with rosemary and dot with cheese. Season with salt and pepper.
- Bake pizza on bottom oven rack until crust is browned and crisp and topping is bubbling, 12 to 15 minutes.
- Toss greens with remaining 1/2 teaspoon oil and salt and pepper to taste and sprinkle over pizza.
- Cut pizza into 8 slices.
PINTO BEAN AND FETA CHEESE QUESADILLAS

- Combine first 6 ingredients in processor. Process until very chunky purée forms. Transfer to bowl and season with salt and pepper. Place one tortilla on work surface. Spread with ⅓ of the bean mixture. Top with ⅓ of the cheese, then another tortilla. Heat heavy medium skillet over medium heat. Brush with oil. Add quesadilla; cook until beans are heated and tortillas are brown, about 4 minutes per side. Repeat with remaining tortillas, beans and cheese.

REFRIED BEAN QUESADILLAS
Quesadillas using refried beans? Oh yeah! Delicious! These refried bean quesadillas are chock-full of homemade refried beans, plenty of cheese, corn and chips. They're crispy on the outside and so tasty inside. Sure to be a favourite!

- Preheat oven to 200 degrees Fahrenheit so you can keep your quesadillas warm while you are preparing your batches.
- To assemble quesadillas, spread half of the mozzarella cheese and half of the cheddar cheese on one half of each tortilla.
- Spread refried beans on top of cheese (about 1/3 cup of refried beans for each tortilla). If you move some of the cheese while spread out the refried beans, no biggie.
- Distribute corn on top of refried beans. Top refried beans with crumbled feta, remaining half of mozzarella cheese, remaining half of cheddar cheese and corn chips. Fold over each tortilla so it's a half-moon shape.
- To cook quesadillas, heat 2 teaspoons of olive oil or vegetable oil in a large non-stick frying pan over medium-low heat. Gently swirl the oil around the pan so you get good coverage.Note: Cook the quesadillas in batches, two quesadillas at a time, adding more oil to the pan between batches as necessary.
- Place two quesadillas in the pan. Cook quesadillas for about 2 to 3 minutes on one side.
- Carefully flip quesadillas to the other side and continue to cook for another 2 to 3 minutes or until the outside is crispy and golden, the inside is heated through, and the cheese is melted (carefully watch to ensure they don't burn). Transfer cooked quesadillas to a sheet pan and place into a preheated oven to keep warm while you are continuing to cook the remaining quesadillas.
- Repeat process with remaining quesadillas.
- Once all batches are done, cut each tortilla in half so you have 12 pieces in total. Serve as is or with your favourite dipping sauces (salsa, sour cream and guacamole are all yummy). Enjoy!Note: Properly store leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days. Reheat before serving.
BEAN AND CHEDDAR CHEESE QUESADILLAS

- Melt 1 tablespoon of the butter in a large skillet, over medium-high heat, with the cumin, coriander, and toast the spices until fragrant, about 30 seconds. Add the beans and mash with a potato masher into a thick paste. Mix in 1/2 teaspoon salt and transfer to a bowl. Rinse and dry the skillet.
- Lay out half the tortillas on a work surface. Spoon and spread the beans evenly onto the tortillas. Scatter the cheese evenly over the beans, and top with the remaining tortillas.
- Halve, seed and dice the avocado. Toss with the tomato and season with salt and pepper, to taste.
- Melt about 1/2 tablespoon of the butter over medium heat in the skillet. Cook the quesadillas one at a time, until golden and the cheese melts, about 1 1/2 to 2 minutes per side. (Add a bit more butter, if needed when they are turned.) Transfer to a cutting board and cool briefly before cutting into wedges. Serve warm with the avocado mixture and the sour cream, if desired.
GRILLED FETA QUESADILLAS

- 1. Place beans, tomatoes & seasoning in food processor and process until well incorporated. (It doesn't need to be perfectly smooth)
- 2. Spoon about 1/4 cup of mixture onto one tortilla.
- 3. Cook quesadilla on a griddle until golden on each side. If desired you can spread each side with butter before cooking.
BEAN AND CHEESE QUESADILLA
This is a kid pleaser recipe, especially served with ranch dressing for dipping. We often eat these for lunch along with chips and salsa. For a lower fat version, just microwave them instead of frying. They just lack the buttery crispy edges, but my kids still like them.
