This recipe was posted on the box of rice noodles, and I'm posting here so I don't lose it. It's slightly modified for our taste.

4 ounces rice noodles, cooked, rinsed and drained as directed on package
5 cups chicken broth or 5 cups vegetable broth
2 stalks lemongrass, crushed and thinly sliced diagonally (use only bottom third to half of the stalk)
1 cup shiitake mushroom, sliced (or button mushrooms)
1/2 cup onion, thinly sliced
1/2 lb medium shrimp, cleaned and deveined
1 tablespoon fish sauce (or slightly more to taste)
2 1/2 tablespoons fresh lime juice
1 cup fresh bean sprout, trimmed and rinsed
2 green onions, thinly sliced
2 fresh jalapeno chilies, seeded and thinly sliced
2 tablespoons fresh cilantro, roughly chopped
2 tablespoons fresh basil, roughly chopped

Steps:

  • In a large pot, bring broth, lemongrass, mushrooms, and onion to a boil.
  • Add shrimp, fish sauce and lime juice to the pot.
  • Cook until shrimp is opaque (1 - 2 minutes).
  • Add rice noodles and heat another minute.
  • Serve in soup bowls with garnishes as desired.

This is a recipe that I have had for many years and for the life of me, cannot remember where I got it. But I do remember that it tastes very much like the soup I adored from South Vietnam, a small Kingston, Ontario Vietnamese restaurant. This is one of those foods that is great during the winter or also great when one feels the start of the cold. And by the way, don't skip the coriander leaves as garnish, they really add to the soup!

450 g medium shrimp, peeled and deveined
5 ml cornstarch, for dusting
45 ml peanut oil
1 1/2 liters chicken stock
30 ml tamarind paste
80 ml water
2 stalks celery, thinly sliced
350 g pineapple, fresh, peeled and cubed
1 large tomatoes, chopped
250 ml okra, thinly sliced
2 red chilies, thinly sliced
200 g bean sprouts
30 ml Thai fish sauce
10 ml ginger, thinly sliced
1 garlic clove, crushed and roughly chopped
20 ml sugar
2 ml salt
2 shallots, minced
125 ml fresh coriander leaves

Steps:

  • Whisk tamarind with 80 ml water and set aside.
  • Dust shrimp with cornstarch. Heat 30 ml/2 tbsp of oil in large frying pan over medium heat and stir-fry shrimp just until pink, 2-3 minutes. Remove from heat and set aside.
  • In large saucepan, heat stock and tamarind juice over medium heat. Add celery, pineapple, tomato, okra, ginger, garlic and chilies; bring to a boil. Reduce heat to low; add sprouts. Stir in fish sauce, sugar and salt.
  • Heat remaining 15 ml/1 tbsp oil in frying pan and stir-fry shallots until golden, taking care not to burn, about four minutes.
  • Add shrimp to soup, stirring to combine. Remove from heat and serve, garnished with shallots and fresh cilantro. Serves 6-8.
  • Note: Try to use fresh pineapple, not canned, for this dish. It makes all the difference.

This has lots of different flavors going on, and is a very special soup to serve your guests. The spicy hot comes from the white pepper, and the sour comes from the vinegar.

5 dried wood ear mushrooms
4 dried shiitake mushrooms
8 dried tiger lily buds
4 cups chicken stock
⅓ cup diced bamboo shoots
⅓ cup lean ground pork
1 teaspoon soy sauce
½ teaspoon white sugar
1 teaspoon salt
½ teaspoon ground white pepper
2 tablespoons red wine vinegar
2 tablespoons cornstarch
3 tablespoons water
½ (16 ounce) package firm tofu, cubed
1 egg, lightly beaten
1 teaspoon sesame oil
2 tablespoons thinly sliced green onion

Steps:

  • Soak the dried mushrooms and tiger lily buds in warm water for 20 minutes. After trimming off any tough stems, slice the mushrooms. With the fingers, shred the tiger lily stems.
  • Place the mushrooms, tiger lily buds, stock, bamboo shoots, and shredded pork into a saucepan. Bring to a boil, and simmer for 10 minutes.
  • Stir in soy sauce, sugar, salt, white pepper, and vinegar. Combine cornstarch with 3 tablespoons water. Add a little of the hot soup to the cornstarch, and then return all to the pan. Heat to boiling, stirring. Add the bean curd, and cook 1 to 2 minutes.
  • Just before serving, turn off the heat. Stir the egg in gradually. Mix in sesame oil. Sprinkle each serving with scallions.

3 1/4 pounds meaty oxtails, patted dry
2 large onions, chopped
1 large carrot, peeled, chopped
3 stalks lemongrass,* chopped
2/3 cup chopped peeled fresh ginger
8 garlic cloves, chopped
7 whole star anise (star-shaped spice)*
1 tablespoon black peppercorns
12 cups water
7 cups canned beef broth (about four 14 1/2-ounce cans)
3 tablespoons fish sauce (nam pla)*
1 12-ounce package fresh udon noodles (refrigerated Japanese wheat noodles)* or fresh linguine
1 tablespoon oriental sesame oil
3 cups bean sprouts
6 radishes, thinly sliced
4 green onions, thinly sliced
4 serrano chilies, thinly sliced
6 tablespoons chopped fresh basil
6 tablespoons chopped fresh mint
6 tablespoons chopped cilantro
Lime wedges
Additional fish sauce (nam pla)

Steps:

  • Heat peanut oil in heavy large pot over medium-high heat. Sprinkle oxtails with salt and pepper. Add oxtails to pot and brown on all sides, about 20 minutes. Transfer oxtails to large bowl. Add onions and next 6 ingredients to same pot. Sauté until vegetables are tender, about 8 minutes. Return oxtails to pot. Add 12 cups water, beef broth and 3 tablespoons fish sauce. Cover and simmer gently until oxtails are very tender, about 3 hours.
  • Using tongs, transfer oxtails to large bowl. Strain broth into another large pot; discard solids. Remove meat from oxtails; discard bones. Add meat to broth.
  • Refrigerate overnight. Spoon solid fat off top of soup. Cook noodles in large pot of boiling salted water until tender. Drain; rinse under cold water. Return to same pot. Toss noodles with sesame oil.
  • Bring soup to boil. Divide noodles, sprouts and next 6 ingredients among 6 bowls. Ladle soup into bowls. Serve with lime wedges and additional fish sauce.

  • Bring 1 cup (240 ml) of the water to a boil in a small pot. Add the tamarind paste and simmer for 2 minutes. Remove from the heat and stir well to dissolve the tamarind. Set aside while you chop the fruits and vegetables.
  • Heat a medium-sized pot over medium heat. Add the oil and garlic. Fry, stirring constantly, until the garlic is golden brown. Be very careful not to burn it. Remove the garlic to a small plate with a slotted spoon, keeping the oil in the pot. Add the shallots to the pot and fry until soft. Finally, add the one diced tomato and fry for a couple of minutes, breaking it up with your spoon to form a paste.
  • Add the remaining 4 cups of water to the pot. Pour the reserved tamarind liquid into the pot through a sieve. Use a spoon to press as much tamarind pulp through the sieve into the soup as possible, discarding the seeds and fibre. Add the soy sauce, sugar and salt to the pot and bring to a boil. Add the pineapple, okra and celery and simmer over medium heat for 2 – 3 minutes. Remove the pot from the heat and add the tomato wedges, bean sprouts and tofu.
  • Taste the soup and adjust the balance of salt and sugar, if necessary. Serve the soup into bowls and garnish with the reserved fried garlic slices, sliced chili pepper and fresh cilantro.
