2 tablespoons peanut oil
3 cloves garlic, minced
1 shallot, minced
1 serrano chili, seeded and minced
6 ounces shrimp, peeled, deveined and finely chopped
2 cups finely chopped fresh pineapple
1 cup pineapple juice
3 tablespoons Asian fish sauce
1 tablespoon Vietnamese or Thai chili sauce, or more, to taste
2 teaspoons fresh lime juice or rice vinegar
1/2 teaspoon black pepper
1/2 teaspoon sugar
3 tablespoons chopped fresh cilantro
Pinch of salt, if desired

Steps:

  • Heat oil in a wok or saute pan over medium heat. Add garlic, shallots and chili, and stir-fry until they just begin to brown, about 1 minute. Add shrimp, and stir-fry until opaque, 2 minutes. Stir in the pineapple and pineapple juice, and bring to a boil.
  • Stir in the fish sauce, chili sauce, lime juice, pepper, sugar and cilantro, and bring to a boil. Reduce heat, and simmer until sauce is thick and richly flavored, 3 minutes. If desired, add pinch of salt or dash of chili sauce. Puree sauce in a food processor. Serve at room temperature.

1 pineapple (preferably labeled "extra sweet"; about 3 1/2 lb)
About 2 qt water
2 skinless boneless chicken breast halves (3/4 lb total)
1/4 cup vegetable oil
4 (1-inch) fresh red Thai chiles*, minced, including seeds
3 tablespoons minced garlic
1/4 cup plus 2 tablespoons Asian fish sauce
1/2 lb fresh shiitake mushrooms, stems discarded and caps thinly sliced
2 large tomatoes, chopped (2 cups)
1 cup fresh mung bean sprouts (2 oz)
1/2 teaspoon black pepper
1/3 cup coarsely chopped fresh basil
1/3 cup coarsely chopped fresh mint
1/3 cup coarsely chopped fresh lemon verbena
1 tablespoon chopped fresh oregano
1/2 teaspoon salt
Accompaniment: rice

Steps:

  • Cut peel from pineapple in a thin layer and discard, then trim outer layer of pineapple, cutting just deep enough to remove eyes but allowing pineapple to remain intact, and transfer trimmings to a blender. Quarter pineapple lengthwise and cut out core, then coarsely chop core and transfer to blender. Purée with 2 cups water until smooth. Pour through a fine-mesh sieve into a 2-quart glass measure, pressing hard on solids (discard solids), then add enough water to measure 8 cups pineapple broth.
  • Cut remaining pineapple into 1/2-inch pieces and put in a bowl.
  • Place chicken between 2 sheets of plastic wrap. Gently pound chicken 1/4 inch thick with flat side of a meat pounder or with a rolling pin. Cut chicken across the grain into 1/4-inch-wide strips and transfer to a bowl, then chill, covered.
  • Heat 2 tablespoons oil in a 5- to 6-quart heavy pot over moderately high heat until hot but not smoking, then sauté chiles and 2 tablespoons garlic, stirring, until fragrant, about 30 seconds. Add 1/4 cup fish sauce and boil until sauce is reduced by half, about 2 minutes. (Fish sauce will be extremely pungent when first added but will have a mild flavor in soup.) Add pineapple broth and bring to a boil. Stir in pineapple pieces, mushrooms, tomatoes, bean sprouts, and 1/4 teaspoon pepper and return to a boil. Reduce heat and simmer, uncovered, stirring occasionally, 10 minutes. While soup simmers, heat remaining 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté remaining tablespoon garlic, stirring, until fragrant, about 30 seconds. Add remaining 2 tablespoons fish sauce and simmer until sauce is reduced by half, about 2 minutes.
  • Sprinkle chicken with remaining 1/4 teaspoon pepper and add to garlic mixture, then sauté, stirring, until just cooked through, about 4 minutes.

1/3 cup old-fashioned peanut butter, stirred
1 teaspoon finely grated lime zest
3 tablespoons fresh lime juice
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon hot chili sauce (Sriracha)
1/2 teaspoon grated fresh ginger
1 lb ground pork
3/4 lb shrimp, peeled and deveined
1/2 cup coarsely chopped fresh basil
1/4 cup panko breadcrumbs
2 large garlic cloves
1 tablespoon soy sauce
1/2 teaspoon fresh ground black pepper
1/4 cup vegetable oil

Steps:

  • In a medium saucepan, combine all sauce ingredients. Whisk constantly over medium heat until smooth and slightly thickened, 2-3 minutes; do not allow to boil or simmer. Remove from heat.
  • Put shrimp pop ingredients in food processor and pulse until a chunky paste is formed. Pour oil onto a sheet pan and spread evenly. Using 2 spoons, form paste into quenelles. Place quenelles on oiled sheet pan, turning to fully coat. Refrigerate 30-60 minutes until firmed up.
  • Preheat a grill (or grill pan) to high heat, or preheat broiler. Insert a skewer into each kebab. (If using broiler, do not use wooden skewers!).
  • Grill pops over direct heat, or on grill pan, or under broiler, 2-3 minutes on each side. Serve warm with sauce on the side.

¼ cup hoisin sauce
¼ cup low-sodium soy sauce
1 tablespoon sherry
1 tablespoon cornstarch

2 cups pineapple chunks, fresh or canned
1 medium red bell pepper, cored and sliced vertically
1 medium onion, vertically sliced
½ cup snow peas
2 teaspoons minced garlic
¼ teaspoon crushed red pepper flakes, or more to taste
2 medium scallions, sliced diagonally
1 teaspoon sesame seeds

Steps:

  • Whisk pineapple juice, hoisin sauce, soy sauce, sherry, and cornstarch together in a small bowl until well combined; set aside.
  • Drizzle vegetable and sesame oils around the top of a wok or large skillet to coat the sides. Heat over medium-high heat for 1 minute. Pat shrimp dry with a paper towel and add to wok. Stir-fry for 1 minute on each side and transfer cooked shrimp to a clean plate.
  • Add pineapple, red bell pepper, onion, and snow peas to the wok, and stir-fry for 2 to 3 minutes. Stir in garlic and red pepper flakes, and cook until fragrant, about 30 seconds.
  • Return shrimp to the wok, and stir-fry an additional 2 minutes. Whisk stir-fry sauce a couple of times and pour over shrimp and vegetables, stirring constantly until thickened, about 1 minute.
  • Serve immediately, garnished with scallions and sesame seeds.

I just made this and it is sooo delicious. It is a perfect summer salad with delicious shrimp, a fantastic dressing, and juicy pineapple. Enjoy! I have modified this from a recipe in a Dutch magazine called "libelle", No. 29, 2004.

1/4 cup coconut milk
1 1/2 tablespoons fish sauce
1 lemon, zest of
1 lemon, juice of
2 tablespoons finely chopped cilantro
4 -5 leaves fresh basil, finely chopped
1 finely sliced red pepper
1/2 teaspoon garlic powder
1/2 teaspoon crushed dried chili
1 teaspoon sugar
2 -3 cups shrimp, peeled, deveined
1 cup asparagus (new tiny asparagus is best)
1/4 head iceberg lettuce, chopped into slices
2 peaches, peeled and sliced
1 pineapple, hollowed out and cut into pieces
1 cup finely sliced cucumber

Steps:

  • Bring all of the ingredients in the dressing to a boil.
  • Stir occasionally until the sauce has thickened.
  • Taste the sauce and add salt/sugar as necessary: the sauce should be sweet/sour.
  • Place the shrimp in the sauce and allow to simmer.
  • Cook the asparagus.
  • The time for this will vary depending on how thick the asparagus is.
  • For tiny asparagus, 2-3 minutes.
  • Add the asparagus to the shrimp.
  • Take this mixture off of the heat and allow to cool.
  • Mix together the shrimp/asparagus/dressing, lettuce, peaches, pineapple, and cucumber together, and serve in the hollowed out pineapple halves.

One day I was reading some Internet memes about putting pineapple on pizza and realized that in North America pineapple is rarely used in savory dishes. So, I ventured out to make a savory pineapple dish with flavors that I knew would work...plus my daughter wanted shrimp.

12 jumbo shrimp (16/20 size), peeled with tail-on (about 12 ounces)
1 teaspoon finely chopped garlic
1 teaspoon finely chopped shallot
1 teaspoon fresh lemon zest
1/2 teaspoon ground coriander
1 teaspoon olive oil
Kosher salt
1/2 pineapple, peeled, cored and sliced into 6 spears
2 tablespoons chili oil
1/4 cup coconut milk
1 teaspoon honey
Fresh mint leaves, for garnish
Fresh basil leaves, for garnish

Steps:

  • Heat a grill or large grill pan to medium-high heat.
  • Pat the shrimp dry and place in a medium bowl. Add the garlic, shallot, lemon zest, coriander, olive oil, and 1/8 teaspoon salt, then very gently toss to combine. Refrigerate for at least 15 minutes (up to 1 hour) to marinate.
  • Using a pair of 12-inch metal skewers, thread 6 of the shrimp on both the tail and "head" side, leaving about 1/2 inch of space between each shrimp. You will end up with a total of 2 sets of skewered shrimp (6 per pair of skewers).
  • Place the pineapple on a large plate and drizzle with the chili oil. Gently flip the spears around to thinly and evenly coat the pineapple all over.
  • Grill the pineapple without moving the spears too much until nicely caramelized grill marks form, 3 to 4 minutes per side. Transfer to a large serving platter and finish seasoning with a touch of salt.
  • Grill the skewered shrimp over direct heat until pink and just firm at the thickest part, 2 to 3 minutes per side (they will continue to cook slightly as they cool, so try not to leave them on the grill too long!). Carefully remove the shrimp from the hot skewers and arrange them over the grilled pineapple.
  • Whisk the coconut milk and honey in a small bowl until the honey is fully dissolved. Drizzle over and around the shrimp and pineapple. Garnish with fresh mint and basil leaves and serve right away.
