SEAFOOD ENCHILADAS
You're going to love this cheesy seafood enchiladas recipe! Corn tortillas lightly fried, then filled with shrimp, crab, and corn, then topped off with a creamy chipotle sauce. The ultimate dinner option perfect for Cinco de mayo or year-round.

- Add some oil to a large skillet and cook over medium-high heat. Add the onions and jalapenos and cook for 3-4 minutes or until translucent. Stir in the spices and fresh garlic and cook for 30 seconds. Add the shrimp and cook the shrimp for 1-2 minutes or until the shrimp turn pink.
- Fold in the corn and crab gently, add some fresh lime, and season with salt and pepper. In a separate skillet, add some butter and cook over medium-high heat. Once the butter melts, add the flour. Whisk the butter and flour and cook for 1-2 minutes.
- Add the chipotle pepper and adobo sauce and cook for 20 seconds. Stir in the lobster stock and heavy cream. Mix well and reduce the heat to medium-low. Once the sauce thickens, season it with cumin, garlic powder, onion powder, salt, and pepper.
- Add about 1/4 cup of sauce to a 9x13 casserole dish. Fry the corn tortillas in vegetable oil for 10 seconds on each side. Add about 2-3 tbsp of the shrimp and crab mixture to each tortilla and roll them up tightly. Place them seam side-down in the casserole and repeat with the remaining tortillas.
- Place any left-over seafood on top of the rolled tortillas. Spoon chipotle cream sauce over the top of the rolled enchiladas and then cover with cheese. Bake at 375 degrees F for 20 minutes.

LOBSTER VELOUTE WITH CHILLED LOBSTER SALAD AND CAVIAR

- For the veloute: In a stockpot, combine cognac, onions, carrots, celery, lobster carcasses, leeks and fennel. Add 1 gallon water and bring to a simmer. Add the cream and simmer until thickened. Press through a fine-mesh sieve. Chill until ready to serve.
- For the lobster salad: Combine the lobster meat, creme fraiche, chives, parsley, tarragon, and lemon zest and juice in a bowl and chill.
- Serve the veloute in soup bowls, topped with some of the lobster salad and garnished with a teaspoon of caviar.
SEAFOOD ENCHILADAS
These crab and shrimp stuffed enchiladas taste like the ones served at a popular Mexican restaurant in my area. My husband just loves them. After sprinkling the cheese over the enchiladas before baking, you can also garnish with tomatoes, cilantro, olive slices, or whatever other garnish you enjoy.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, saute onions in 1 tablespoon butter until transparent. Remove the skillet from heat and stir in crabmeat and shrimp. Shred the cheese and mix half of it into the seafood. Place a large spoonful of the mixture into each tortilla. Roll the tortillas up around the mixture and arrange the rolled tortillas in a 9x13 inch baking dish.
- In a saucepan over medium-low heat, combine half-and-half, sour cream, 1/4 cup butter, parsley and garlic salt. Stir until the mixture is lukewarm and blended. Pour sauce over the enchiladas, and sprinkle with remaining cheese.
- Bake in preheated oven for 30 minutes.

LOBSTER ENCHILADAS W/WHITE WINE SAUCE
The main keys are use good live lobsters of course, and do not overcook! This is an elegant dish so don't skimp on the ingredients.

- Saute the lobster shells and onions in butter, then add garlic, paprika, and tomato paste.
- Cook out for a few minutes.
- Add the brandy and deglaze.
- Let the brandy reduce until dry.
- Now add the veloute, and simmer for 45 minutes.
- Strain sauce through a cheesecloth.
- Return the sauce to a simmer and add the heavy cream.
- Dice the lobster meat, saute, and add to the sauce, simmering gently for 5 minutes.
- Strain and reserve.
- Adjust the seasoning to taste with salt, pepper, Old Bay Seasoning, Backdraft and Worcestershire sauce.
- Add the white wine immediately before serving.
- Preheat oven to 375F degrees.
- Soften the tortillas (see TIP below) and roll tortilla into enchiladas, filling each with about 3 tablespoons Lobster and Brie mixture.
- Bake enchiladas for 8-10 minutes until cooked, but not crisped.
- Remove and serve two per person, covering each portion with plenty of sauce.
- TIP: To soften the tortillas, run them, one at a time, under running water.
- Shake off excess water, and then place in a hot non-stick frying pan over medium heat.
- In about 15 seconds, steam will begin to escape; flip the tortilla and heat the over side.
- Roll immediately.
- To soften in the microwave, wrap 5-10 tortillas in plastic bag, and sprinkle with 1/4 teaspoon of water.
- Heat for up 45-60 seconds.
- Roll immediately.

- Heat the clarified butter or oil in a pan over moderate heat.
- Add the flour all at once.
- Stirring constantly, cook over low heat until the roux is very pale ivory, about 8 minutes.

CRAB ENCHILADAS WITH CREAMY WHITE SAUCE

- To make the sauce, melt the butter in the saucepan on medium heat.
- Sauté the minced onion in the butter, about 5 minutes or until the onion turns a light golden color.
- Add the cream cheese in with the onion, stirring 'til it melts.
- Then add the sour cream, heavy whipping cream, green chiles, salt, pepper, shredded cheddar, and shredded Monterey Jack to the mixture.
- Let the sauce simmer, constantly stirring, 'til it begins to thicken. It'll probably take about 10 to 15 minutes.
- Then if you want to add tomatoes to your sauce, you can stir them in. At this point, you'll want to turn the heat to low and just keep your sauce warm while you make and assemble the crab enchiladas.
- Preheat the oven to 350° F and grease a 9"x13" baking dish with cooking spray.
- Heat the olive oil on medium heat in a skillet.
- Then sauté the minced garlic, onion, and red pepper in the oil, about 5 minutes, or 'til it's softened.
- Then in a large bowl, add the crab meat, the cooked veggies, lemon juice, seasoning, salt and pepper, 1/2 cup of the cheddar cheese, and 1/2 cup of the Monterey Jack cheese.
- Mix everything together really well.
- Warm the tortillas in the microwave by placing between a couple of damp paper towels and heating 'til warmed.
- Spread about a cup of the white sauce into the bottom of your greased baking dish.
- Add a heaping tablespoon of the crab meat mixture to each corn tortilla, loosely wrapping each one.
- Place each crab enchilada, seam side down, in the baking dish on top of the sauce.
- Spread the remaining sauce over the finished crab enchiladas, and sprinkle with remaining cheese.
- Bake your sour cream white sauce crab enchiladas at 350° F for about 40-45 minutes, or until the cheese melts and the enchiladas are cooked thru. Garnish with green onions, and serve with fresh tomatoes, avocado, salsa, and sour cream.

LOBSTER AND STONE CRAB ENCHILADO

- Place thawed lobster and fresh lime juice in medium bowl; toss to coat. Let stand 15 minutes, tossing lobster occasionally.
- Heat olive oil in heavy large pot over high heat. Add lobster pieces and any accumulated juices. Sauté until lobster shells turn bright orange, about 4 minutes. Using slotted spoon, return lobster to same bowl. Reduce heat to medium. Add chopped onion and chopped bell pepper to pot; sauté until soft, about 5 minutes. Add chopped garlic cloves, fresh parsley, and paprika and sauté 1 minute. Add diced tomatoes and tomato purée. Cook until juices thicken, stirring frequently, about 8 minutes. Add clam juice, dry Sherry, and bay leaf. Season to taste with salt. Add cayenne pepper. Bring mixture to boil, then add stone crab claws and reserved lobster with any accumulated juices. Reduce heat to medium-low, cover, and simmer until lobster meat is cooked through and tender, about 10 minutes.
