2 large red onions, thinly sliced
1 Tbsp. butter
1/2 cup KRAFT Classic Balsamic Vinaigrette Dressing made with Extra Virgin Olive Oil
2 cups KRAFT Finely Shredded Italian* Five Cheese Blend
1 tsp. finely chopped fresh rosemary
1/2 Pizza Dough Recipe
1 cup baby arugula
1/4 cup pine nuts, toasted

Steps:

  • Cook onions in butter in large skillet on medium-high heat 15 to 20 min. or until onions are tender, stirring occasionally. Add dressing; cook on medium heat 10 min. or until onions are caramelized, stirring occasionally. Stir in rosemary. Cool completely.
  • Heat oven to 450ºF. Press Perfect Parmesan Pizza Dough onto bottom of 15x10-inch pan sprayed with cooking spray. Let stand 10 min. Top with onions. Bake on bottom oven rack 15 min. or until crust is golden brown.
  • Top with cheese; bake 2 to 3 min. or until melted. Top with arugula and pine nuts.

1 tablespoon olive oil
1 medium red onion, cut in half and sliced thinly
4 cups baby arugula
salt and pepper, to taste
4 whole wheat tortillas (or 2 of the larger ones)
2 ounces goat cheese (I like chevre)

Steps:

  • Preheat oven to 400 degrees.
  • Heat the oil in a large skillet to med. heat and add onions. Cook until they are soft and golden in color, about 12-15 minute.
  • Add the arugula and cook until it is wilted, about 1 minute.
  • Season with salt and pepper.
  • Place tortillas on baking sheet and top with arugula mixture, crumble goat cheese over top and bake until tortillas are crisped and cheese is slightly melted, about 10-12 minute.

2 pounds onions, sliced
2 tablespoons olive oil
Pinch sugar
1/2 cup tomato sauce
2 prepared pizza crusts
1 cup grated mozzarella
1/2 pound gorgonzola cheese, crumbled

Steps:

  • Put the onions, olive oil, and sugar into a skillet over medium heat and cook, stirring frequently, until the onions are wilted and brown, about 15 to 20 minutes. Reduce the heat if the onions are browning too quickly. Set aside to cool a bit.
  • Heat the oven to 450 degrees F.
  • Spread half the tomato sauce onto 1 of the crusts. Top with half the caramelized onions and half the mozzarella. Repeat with the other crust. Bake the pies until the mozzarella is browned and bubbling, about 10 to 15 minutes. As soon as the pies come out of the oven, sprinkle over the gorgonzola. Slice and serve.

1 large Spanish onion
3 tablespoons vegetable oil
2 confit duck legs
7 ounces prepared pizza dough
Semolina flour, for dusting
1/2 cup grated fontina cheese
1/2 cup crumbled goat cheese
1/4 cup pine nuts, toasted
Freshly chopped rosemary leaves
Extra-virgin olive oil, for drizzling

Steps:

  • Cut the onion into very thin slices. Put the vegetable oil and onions into a large skillet and place it over medium-low heat. Cook, stirring frequently, until the onions become golden brown and caramelized, about 30 minutes.
  • Place a pizza stone onto the floor of the oven and preheat the oven to 450 degrees F.
  • Remove the bones from the duck legs and shred the meat; set aside. Place the dough on a floured surface. Flatten it slightly, sprinkle with more flour, and roll it into a 10-inch disk. Sprinkle a wooden pizza paddle with flour and transfer the dough to the paddle. Shake the board a little to make sure the dough doesn't stick. Spread the caramelized onions to within 1/2-inch of the edge of the dough and top evenly with the cheeses, pine nuts and rosemary. Drizzle with extra-virgin olive oil and transfer to the pizza stone. Bake until the crust is brown around the edges, about 10 to 15 minutes.

3 cups arugula, washed, dried and coarsely chopped

4 whole-wheat tortillas, 6-inches in diameter
2 ounces reduced-fat goat cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the oil and onions in a medium skillet and cook over very low heat, stirring occasionally, until onions are soft and caramelized, about 15 minutes. Turn the heat up to medium and add the arugula. Cook until the arugula is wilted, about 1 minute. Season with salt and pepper.
  • Place the tortillas on a baking sheet and top each with some of the arugula/onion mixture. Crumble some goat cheese on top of each, and bake for 10 minutes. Allow to cool for a few minutes and cut each pizza into 4 triangles.

1/2 yellow onion, thinly sliced
Homemade Pizza Dough (recipe follows), prepared through step 10
All-purpose flour, for dusting
1 tablespoon olive oil, plus more as needed
3/4 cup ricotta cheese
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, melted
1 garlic clove, minced or 1 teaspoon garlic powder
3 to 4 slices prosciutto
1 cup baby arugula
2 tablespoons balsamic glaze
Parmesan cheese, shaved
1 1/4 teaspoons active dry yeast
1/2 teaspoon sugar
1/4 cup warm water (95° to 110°F)
3 1/2 cups bread flour
2 teaspoons kosher salt
1/2 cup olive oil
1 cup plus 1 tablespoon room-temperature water
Cooking spray

Steps:

  • Preheat the oven to 500°F. Place a 12-inch cast-iron skillet in the oven to preheat for 15 to 20 minutes.
  • Meanwhile, in another large cast-iron skillet, melt the butter over medium-low heat until it bubbles. Add the onions and sauté, stirring occasionally, until golden brown, 20 to 25 minutes.
  • Stretch the pizza dough out into a 12-inch round. In the preheated cast-iron skillet, drizzle some oil, then add the dough round.
  • Drizzle with 1 tablespoon of oil. Spread the ricotta on top and season with salt and pepper. Bake until golden, 10 to 15 minutes.
  • When the pizza comes out, mix the melted butter, garlic, and a pinch of salt. Brush it along the crust of the pizza. Tear the prosciutto into small pieces or strips and place on top. Top with the arugula and caramelized onions. Drizzle with olive oil and balsamic glaze, then top with shaved Parmesan cheese.
  • Transfer to a cutting board and cut into 8 slices to serve.
  • In a small bowl, stir together the yeast, sugar, and warm water. Let stand until foamy, about 5 minutes.
  • Add the flour to the bowl of a stand mixer fitted with the dough hook. Sprinkle the salt over the flour and mix on low speed for 15 seconds to distribute the salt.
  • Add the olive oil, room-temperature water, and yeast mixture and mix on low speed for 1 to 2 minutes, then increase the speed to medium and mix until a ball of dough forms, about 5 minutes.
  • Spray a medium bowl lightly with cooking spray. Shape the dough into a ball and set it in the bowl seam side down. Cover the bowl with plastic wrap and place in a warm area until doubled in size, about 1 hour.
  • When the dough is almost risen, place a cast-iron pizza stone on the center rack of the oven and preheat the oven to 500°F.
  • When the dough has risen, remove the plastic wrap and push down on the dough to release the gases and bubbles. Shape it into a ball. (If using the dough later, cover with plastic wrap and place in the refrigerator for up to 12 hours. The dough will slowly proof during that time. Once you're ready to use it, set it out for 30 minutes to come to room temperature.)
  • Spread a piece of parchment paper about 1 1/2-feet long on a work surface. Stretch the dough into a 14-inch round on the parchment.
  • Top with your favorite toppings. Carefully pull the oven rack with the pizza stone halfway out of the oven and transfer the parchment and pizza dough to the stone.
  • Bake until the crust is golden, 13 to 15 minutes. Transfer the pizza to a cutting board and cut into 8 slices to serve.

  • To caramelize the onions, heat the olive oil in a large skillet over medium heat.

1 1/2 cups all-purpose stone ground whole wheat flour
1/4 ounce sachet dried yeast
1 teaspoon salt
4 tablespoons olive oil
20 ounces red onions, halved, thinly sliced
4 tablespoons picked thyme leaves
4 garlic cloves, crushed
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
4 1/2 ounces goat cheese, crumbled

Steps:

  • To make the pizza crust, place the flour, yeast and salt in a bowl. Add 3/4 cup lukewarm water and use a flat-bladed knife to mix until just combined. Turn out onto a lightly floured surface and knead until smooth. Place in a light oiled bowl, cover with plastic wrap and set aside in a warm place for 1 hour.
  • To make the caramelized onions, heat the oil in a large, non-stick frying pan over medium heat and add the onion, thyme and garlic, and stir to coat. Reduce heat to medium-low and cook, stirring occasionally, for 23-30 minutes, or until the onions are very soft. Add the sugar and vinegar, and increase the heat to high.   • Use your fist to pound the dough. Divide into two. Roll both portions and place on two bake proof trays.

  • In a food processor, combine flour, yeast and sugar. With the machine running, add the warm water and allow the dough to come together for around 20-30 seconds. Let the dough rest for 5 minutes, then add the olive oil, egg yolk and salt and run the machine for another 30 seconds. Place the dough in a large oiled bowl and cover. Allow the dough to double in size. Divide the dough in half. If you're only making one pizza, wrap half the dough in plastic and refrigerate. Place one or both circles of dough back in the bowl, cover, and allow to rest while preparing the onions and sauce.
  • Heat 2 tablespoons olive oil in a large skillet on low heat. Add onions and a pinch of salt. Have a measuring cup full of water nearby. Cook the onions on low heat, stirring frequently, until the onions begin to brown. Turn up the heat to medium and continue caramelizing the onions. As a glaze develops on the bottom of the pan, add a few tablespoons of water and scrape up the brown bits, incorporating them into the onions. The heat will cause the water to evaporate. Repeat this process for approximately 25-30 minutes, keeping a close eye on the onions to make sure they don't burn. When the onions have turned a dark brown color and are both bitter and sweet in flavor, remove from the heat and set aside.
  • Preheat the oven to 500 degrees F. Sprinkle some semolina flour on a large baking sheet. You can also use a pizza stone and peel if you prefer.
