1 cinnamon stick (3 inches)
1 teaspoon whole cloves
2 cardamom pods, crushed
4 cups apple cider or juice
4 cups unsweetened pineapple juice
1-1/2 cups apricot nectar
1 cup orange juice
1/2 cup rum, optional

Steps:

  • Place the cinnamon stick, cloves and cardamom on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag., In a large saucepan, combine the apple cider, pineapple juice, apricot nectar and orange juice. Add spice bag. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until flavors are blended. Discard spice bag. Stir in rum if desired. Serve warm.

1 (48 ounce) bottle cranberry juice
1 gallon apple cider
1 ½ cups cinnamon red hot candies
1 tablespoon ground cinnamon

Steps:

  • Pour the pineapple juice, cranberry juice and apple cider into a large pot. Heat until almost boiling, then stir in the red hot candies. Continue stirring until they dissolve so that they do not end up stuck to the bottom of the pot. Set the heat to low, and let it simmer all day if you like. Ladle into glasses or cups, and dust with cinnamon before serving.

2 1/2 cups water
2 orange pekoe tea bags, regular size
3/4 cup pineapple juice
1 (6 ounce) can frozen orange juice concentrate, thawed
2 tablespoons honey
1/2 teaspoon lemon juice
3 whole cloves
1 cinnamon stick

Steps:

  • Bring the water to a boil in a saucepan. Add tea bags and cover; steep 10 minutes and discard tea bags.
  • Add the remaining ingredients in the saucepan. Cook over medium-low heat for 15 minutes or until well heated.
  • Discard cloves and cinnamon stick and pour into mugs.

SLOW COOKER WASSAIL

4 cups cranberry juice
4 cups orange juice
1/3 cup honey
2 teaspoons whole cloves
3 cinnamon sticks
One 2-inch knob ginger, peeled and sliced into coins
1 lemon, sliced
1 orange, sliced
1 cup fresh cranberries, for garnish

Steps:

  • Combine the juices, honey, cloves, cinnamon sticks, ginger, lemons and oranges in the slow cooker.
  • Cook on low 6 to 8 hours or on high 3 to 4 hours. The longer it cooks, the more the flavor from the spices will permeate the wassail.
  • If desired, remove the cinnamon, citrus slices, cloves and ginger with a slotted spoon before serving. Float the cranberries in the tops of the glasses for garnish and serve warm.

1 gallon apple cider or 1 gallon apple juice
4 1/2 cups pineapple juice (fresh frozen)
4 cups orange juice (fresh frozen)
1 (12 ounce) can frozen lemonade
2 (12 ounce) cans apricot nectar
2 sticks cinnamon
2 teaspoons whole cloves
1 teaspoon whole nutmeg

Steps:

  • Combine spices and tie in cheesecloth; add to all ingredients in large Dutch oven.
  • Bring to a boil.
  • Cover and simmer 30 minutes.
  • Uncover and simmer an additional 30 minutes.
  • Remove spices.
  • This can be put in a crockpot to keep warm.
  • Serve hot.

⅔ cup white sugar
7 cups water
2 cinnamon sticks
1 tablespoon whole allspice
1 tablespoon whole cloves

1 (6 ounce) can frozen orange juice concentrate

Steps:

  • In a large pot over medium heat, combine the cranberry juice, sugar and water. Bring to a boil and stir until sugar is dissolved.
  • Place the cinnamon, allspice and clove into a cheesecloth bag and tie shut. Add to the liquid and simmer 20 minutes.
  • Remove spice bag. Just before serving, add fruit juices. Serve steaming hot.

  • Place all the spices into the top.
  • Perculate according to the directions of your pot.
  • You could also tie the spices up in cheese cloth and simmer in a pot on the stove if you don't have a perculator.
