These Veggie Pizza Roll-Ups combine two of my favorite appetizer ideas into one easy and delicious recipe everyone is going to love.

Number Of Ingredients 8

1 package (8 ounce) cream cheese (softened)
1 cup sour cream
1 package powdered ranch dressing mix
1 cup finely chopped broccoli
1 cup finely chopped cauliflower
1 cup finely chopped carrots
1 cup finely chopped red pepper
6 each (8-inch) flour tortillas

Steps:

  • In a medium bowl beat together the cream cheese, sour cream, and ranch dressing mix until smooth.
  • In a large bowl combine the broccoli, cauliflower, carrots, and red pepper. Mix to combine.
  • Evenly divide your cream cheese mixture (about 1/3 cup each) onto your six tortillas. Spread into an even layer leaving about a 1/2" boarder clear around the edges.
  • Sprinkle each tortilla with the vegetable mixture.
  • Roll up tightly. Then place the rolls onto a plate. Cover with plastic wrap and refrigerate for at least 45-60 minutes. Once chilled, cut into 1/2" slices with a serrated knife.
  • Add the roll-ups to a dish or platter and you're ready to serve them!

2 (8 ounce) packages refrigerated reduced-fat crescent rolls
2 (8 ounce) packages low-fat cream cheese
1 cup light mayonnaise
1 (1 ounce) package Hidden Valley Ranch dip
2 1/2 cups shredded cheddar cheese
broccoli
cauliflower
carrot
onion
green pepper
red pepper
celery

Steps:

  • Press crescent rolls flat on a cookie sheet.
  • Bake as directed on package.
  • Mix together cream cheese, mayo, and ranch dip pack.
  • Chop up vegetables.
  • Spread cream cheese mixture on baked crescent rolls.
  • Put chopped up vegetables evenly over top.
  • Sprinkle cheese on top of vegetables.
  • Refridgerate 1 hour.

Transfer a loaf of frozen bread dough from freezer to refrigerator in the morning and it will be ready to use by dinner time.

Number Of Ingredients 6

1 loaf frozen bread dough, thawed, 1 lb
1/4 cup prepared pizza or 1/4 cup pasta sauce
1/2 cup shredded mozzarella cheese, divided
2 tablespoons finely chopped pepperoni
1 tablespoon olive oil
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450 degrees.
  • Generously coat a rimmed baking sheet with cooking spray.
  • Roll dough into a 10 inch square on a floured surface.
  • Spread pizza or pasta sauce over dough.
  • Sprinkle all but 2 tbsp mozzarella over the sauce.
  • Top with pepperoni.
  • Roll up dough jelly-roll style to enclose filling.
  • Cut roll crosswise into 10 slices.
  • Place slices, cut side down on baking sheet.
  • Brush tops with oil.
  • Sprinkle with parmesan and remaining mozzarella cheese.
  • Bake until golden brown, about 15 minutes.
  • Serve immediately.

  • Place the frozen veg into a large bowl or jug, cover with boiling water and cook for 1 minute in the microwave. Drain completely and allow it to dry on some kitchen roll to absorb as much water as possible.
  • Roll out the pastry and spread the tomato pizza sauce on top. Sprinkle on the cheese and finally add the vegetables.
  • Starting with the shorter side of the pastry, start to roll the pastry up, keeping it as tight and compact as possible. Once it has all been rolled up, cut it into 8 and divide them between the trays.
