190g jar pesto
500g tub mascarpone
200g bag spinach , roughly chopped
250g frozen pea
small pack basil , leaves chopped, and a few leaves reserved to finish
small pack mint , leaves chopped
12 fresh lasagne sheets
splash of milk
85g parmesan , grated (or vegetarian alternative)
50g pine nuts
green salad , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Place the pesto, half the mascarpone and 250ml water (or vegetable stock if you have some) in a pan. Heat and mix until smooth and bubbling. Add the spinach and peas and cook for a few more mins until the spinach has wilted and the peas thawed. Add the herbs and season.
  • Place a third of the pesto mixture into a baking dish roughly 18 x 25cm. Top with 4 lasagne sheets, then repeat with 2 more layers of sauce and lasagne sheets, finishing with a layer of pasta. Mix enough milk into the remaining mascarpone to make a white sauce consistency, season, then pour over the top. Sprinkle with the Parmesan and pine nuts. Bake for 35-40 mins until golden brown on top and bubbling around the edges. Scatter over the reserved basil leaves and serve with a green salad, if you like.

2 tablespoons olive oil
1 small onion, chopped
1 (16 ounce) package frozen chopped spinach, thawed
7 ounces basil pesto
30 ounces ricotta cheese
1 egg
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
2 cups mozzarella cheese, shredded
9 ounces Alfredo-style pasta sauce
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
  • In large skillet over medium heat, saute onion in the olive oil until tender. Add spinach and stir. Remove from heat and stir in the pesto. In a large bowl mix ricotta cheese, egg, salt, pepper and nutmeg.
  • In a 3 quart greased baking dish, layer the noodles then the spinach mixture, followed by the ricotta mixture. Sprinkle with mozzarella. Repeat the layers ending with noodles on top. Spread the Alfredo sauce over the top and sprinkle with parmesan.
  • Cover with foil and bake in a preheated oven for 45 to 55 minutes.

12 lasagna noodles
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 large egg
2 cups whole milk ricotta
One 10-ounce package frozen chopped spinach, thawed and squeezed dry
2 1/2 cups shredded mozzarella
3/4 cup grated Parmesan
1 cup store-bought pesto
1 tablespoon extra-virgin olive oil
Crushed red pepper flakes, optional

Steps:

  • Position an oven rack to the middle position and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Cook the lasagna noodles 1 minute longer than the package directions for al dente. The pasta should be tender enough that it will roll without cracking. Drain well and rinse with cold water. Lay in a single layer on a baking sheet.
  • Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, until lightly toasted, about 2 minutes. Whisk in the milk, a large pinch of salt and a few grinds of pepper. Cook, stirring frequently, until the sauce thickens and is the consistency of a thin gravy, 6 to 8 minutes. Allow the bechamel sauce to cool slightly.
  • Beat the egg in a large bowl and then stir in the ricotta, spinach, 1 1/2 cups of the mozzarella cheese, 1/2 cup of the Parmesan, 1/2 cup of the pesto, a large pinch of salt and a few grinds of pepper. Stir the remaining 1/2 cup pesto into the slightly cooled bechamel sauce.
  • Brush a 13- by 9- inch baking dish with oil. Spread 1/4 cup of the pesto-bechamel sauce on to the bottom of the dish.
  • Lay half of the cooked lasagna noodles on a clean work surface and spread 1/3 cup of the ricotta mixture evenly over each. Starting with a short end, roll each noodle up. As you make the rolls, transfer them to the prepared baking dish seam-side down. Repeat with the remaining noodles and ricotta mixture. Spoon the remaining pesto-bechamel sauce over the lasagna rolls and sprinkle with the remaining 1 cup mozzarella and 1/4 cup Parmesan. Cover with foil and bake until the rolls are heated through and the sauce is bubbling, about 20 minutes. Remove the foil and bake until the cheese is browned on top, about 10 minutes. Sprinkle with crushed red pepper, if using, and let stand for 5 minutes before serving.

15 ounces fat-free ricotta cheese
1 large egg
3/4 cup grated asiago cheese, divided
1/4 cup fresh basil, minced

9 lasagna noodles
26 ounces marinara sauce (homemade or jarred)
3/4 cup part-skim mozzarella cheese, shredded
1/4 cup pesto sauce (homemade or jarred)

Steps:

  • Preheat grill.
  • Coat eggplants and zucchini with cooking spray. Sprinkle with 1/2 t salt and 1/4 t pepper. Grill eggplant and zucchini 1 1/2 min on each side or just until tender. Cool; combine in a large bowl.
  • Place bell peppers on grill, skin-side down; grill 3 min or til tender. Cut into 1 inch wide strips. Add bell peppers to eggplant mixture.
  • Combine ricotta, egg, 1/2 c asiago, basil, parsley, remaining 1/2 t salt, and 1/2 t pepper.
  • Cook pasta according to pkg.
  • Preheat oven to 375°F.
  • Spread 1/2 c sauce on bottom of 13x9 baking dish coated with cooking spray. Arrange 3 noodles over sauce. Top with half of the eggplant mixture. Spread half of ricotta mixture over eggplant mixture; sprinkle with 1/4 c mozzarella.
  • Arrange 3 noodles and 1 c sauce over cheese; cover with remaining eggplant mixture. Top with remaining ricotta mixture. Spread pesto over ricotta; sprinkle with 1/4 c mozzarella. Cover with remaining 3 noodles. Spoon 1 c sauce over noodles. Sprinkle with remaining 1/4 c asiago and mozzarella.
  • Bake at 375°F for 1 hour. Let stand 15 minutes before serving.

1.2l milk
100g butter , cut into pieces
100g plain flour
pinch of freshly grated nutmeg
500g baby spinach leaves
250g lasagne sheets - fresh is best
3 rounded tbsp good quality pesto
500g cherry tomato on the vine, two or three vines left whole
good handful of basil leaves (or one supermarket pack)
175g piece fresh parmesan (or vegetarian alternative), coarsely grated
2 x 150g balls mozzarella , preferably buffalo, torn into bite-sized pieces

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C. Put the milk, butter and flour in a medium pan and cook over a medium heat, whisking until thickened and smooth. Simmer for 1 minute. Take off the heat, season and add the nutmeg. Cool, stirring occasionally to stop a skin forming.
  • Put the spinach in a large heatproof bowl, pour over a kettle of boiling water and leave for 30 seconds. Drain into a colander, cool under the cold tap then squeeze it well to remove the excess liquid.
  • Spread a spoonful or two of the sauce on the bottom of a large ovenproof dish (about 30x20cm) and lay a third of the lasagne on top. Spoon over a third of the sauce and spread it out. Swirl a spoonful of pesto through the sauce with a knife and scatter over half the spinach with a third of the tomatoes, a few basil leaves and a third of the cheeses. Season with salt and pepper. Layer another third of the lasagne with a third of the sauce, a spoonful of pesto, the rest of the spinach, a third of the tomatoes and cheeses and some basil. Season.
  • Finish with a layer of lasagne, the last of the sauce, pesto, cheeses and the tomatoes, including those on the vine. Bake for 35-40 minutes until golden. Scatter with the last of the basil leaves and serve.

Each serving provides 602 kcal, 21g protein, 60g carbohydrate (of which 19g sugars), 29g fat (of which 15g saturates), 7g fibre and 1.3g salt.

2 yellow or red peppers, seeds removed, cut into roughly 2cm/¾in chunks
1 courgette, about 300g/10½oz, quartered lengthways and cut into roughly 2cm/¾in chunks
1 large sweet potato, peeled and cut into roughly 2cm/¾in chunks
3 tbsp extra virgin olive oil
1 large onion, finely chopped
½ tsp dried chilli flakes
2 garlic cloves, crushed
2 x 400g tins chopped tomatoes
2 tsp Italian seasoning or dried oregano
1 vegetable stock cube
200ml/7fl oz cold water
100g/3½oz young spinach leaves (optional)
9 -10 dried lasagne sheets
salt and freshly ground black pepper
75g/2½oz plain flour
75g/2½oz butter, cubed
750ml/1¼ pint milk, semi-skimmed or full-fat
125g/4½oz mature cheddar, coarsely grated
75g/2½oz grated mozzarella, or extra cheddar

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Put the peppers, courgette and sweet potato into a large baking tray. Drizzle with 2 tablespoons of the oil, season with salt and pepper and toss together.
  • Roast for 30 minutes, or until softened and lightly browned.
  • While the vegetables are roasting, heat the remaining oil in a large saucepan and gently fry the onion for 5 minutes, stirring regularly.
  • Add the chilli and garlic and cook for a few seconds more. Stir in the tomatoes, Italian seasoning (or dried oregano) and crumbled stock cube. Pour over the water and bring to a gentle simmer. Cook for 10 minutes, stirring regularly. Set aside.
  • For the cheese sauce, put the flour, butter and milk in a large saucepan and place over a medium heat. Whisk constantly with a large metal whisk until the sauce is thickened and smooth. (Use a silicone covered whisk if cooking in a non-stick pan.) Stir in roughly two-thirds of the cheeses and season to taste.
  • Take the vegetables out of the oven and add to the pan with the tomato sauce. Stir in the spinach and cook together for 3 minutes. Season with salt and lots of ground black pepper.
  • Spoon a third of the vegetable mixture over the base of a 2½ -3 litre/4½-5¼ pint ovenproof lasagne dish and cover with a single layer of lasagne. Top with another third of the vegetable mixture (don't worry if it doesn't cover evenly) and a second layer of lasagne.
  • Pour over just under half of the cheese sauce and very gently top with the remaining vegetable mixture. Finish with a final layer of lasagne and the rest of the cheese sauce. Sprinkle the reserved cheese over the top.
  • Bake for 35-40 minutes, or until the pasta has softened and the topping is golden brown and bubbling. Stand for 5 minutes before cutting to allow the filling to settle.

200 g egg lasagna sheets
700 g sheep ricotta
400 ml whole milk
150 g Parmigiano Reggiano (grated)
300 g fresh mozzarella
250 g basil pesto
Extra virgin olive oil
2 tablespoons breadcrumbs
salt
freshly ground black pepper

Steps:

  • Add the ricotta into a bowl and pour in the milk. Add also the grated Parmigiano Reggiano and stir thoroughly until you get a smooth batter. Season with salt and freshly ground black pepper to taste.
  • Tear the mozzarella with your hands into small pieces. Also keep the basil pesto and fresh pasta sheets at hand.
  • Now that all the ingredients are ready, prepare the lasagna and heat the oven to 200°C (400°F).
  • Start by spreading two tablespoons of ricotta on the bottom of the baking pan, then top it with a few sheets of fresh pasta to cover the entire surface of the pan.
  • Cover the pasta with 3 tablespoons of ricotta and 1 tablespoon of pesto, spreading it out evenly. Then add the bite-sized mozzarella.
  • Continue making 4 more layers, until you have finished all the ingredients. The last layer will be made of ricotta, pesto and mozzarella.
  • Sprinkle the top with breadcrumbs and drizzle with extra virgin olive oil.
  • Bake the lasagna for about 20-25 minutes, until golden brown.
  • You can serve the lasagna immediately, or, even better, let it cool down and serve after a few hours, or the next day, quickly reheating in a hot oven.

1 tablespoon olive oil or 1/4 cup water (for water saute)
1 small onion, diced
2 - 3 cloves garlic, minced
2 carrots (2 cups), diced
1 zucchini (2 cups), diced
1 yellow squash (2 cups), diced
8 oz. mushrooms, chopped
1/2 teaspoon Italian seasoning (or thyme, basil or marjoram), optional
1 package (10 - 12 oz.) frozen spinach, thawed and drained
1 jar (25 - 28 oz.) pasta sauce, about 3 cups
9 lasagna noodles (approx.), regular or no-boil
2 cups vegan ricotta (Cashew Ricotta Cheese or Tofu Ricotta)
salt & pepper, to taste
almond parmesan, for garnish
fresh basil leaves, julienned, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • Noodles: Cook noodles according to package directions, set aside. If using no boil lasagna noodles like I did there is no need to cook first.
  • Saute Veggies: In a large skillet, heat oil over medium heat, add onion and garlic, saute for about 5 minutes. Add carrots, zucchini, squash, mushrooms, herbs/seasonings and good pinch of salt and pepper, continue to saute for another 5 - 7 minutes. We don't need to saute the zucchini, yellow squash and mushrooms too much, we want their juices to fully release while baking. Remove from heat.
  • Spinach Ricotta: Mix together the cashew ricotta and spinach, mix well.
  • Assemble & Layer: Using a large rectangular baking dish (9 x 12) place about 1/3 cup of sauce on the bottom of the dish spreading to coat, add a layer of pasta, top with 1/2 ricotta cheese and 1/2 vegetables. Add another layer of pasta, 1/2 of the remaining sauce, then the rest of the ricotta, then vegetables. Add one more layer of pasta and top with the remaining sauce. Cover with lid, small silpat or foil.
  • Bake: Cover and bake on the center rack for 40 minutes. Let rest covered for 5 minutes, remove cover and let cool 10 minutes. If not using no-boil noodles, you can remove the cover half way through for a baked look.
  • To Serve: Add a sprinkle of Almond Parmesan and a bit of freshly chopped basil overtop.
  • Serves 9
  • Leftovers can be stored in the refrigerator for up to 5 - 6 days, in a covered container.

185 g green pesto sauce
1/3 cup blue cheese

1 small head broccoli (chopped)
4 cups chopped tomatoes
1/2 cup sweet corn
1/3 cup grated cheddar cheese (for topping)

200 g lasagna sheets

Steps:

  • Fry the onion and garlic for 4-5 minutes.
  • Add all vegetables and cook 10 minutes.
  • Add tinned tomatoes and sweet corn.
  • Add crumbled blue cheese, pesto, capers, olives and sun dried tomatoes.
  • Mix well --that's your sauce!
  • Layer in a lasagna dish -- sauce, lasagna, sauce, lasagna, sauce and finish with grated cheese. Done in the oven 180c for around 30 minutes!
  • Open the wine and turn on the tunes!

Steps:

  • Blend ricotta and Parmesan in medium bowl. Season cheeses with salt and pepper; stir in egg. Blend spinach and pesto in another medium bowl.
  • Brush 13x9x2-inch glass baking dish with oil. Spread 1 cup pasta sauce in prepared dish. Arrange 3 noodles side by side atop sauce. Spread 1 1/4 cups ricotta cheese mixture over in thin layer. Drop 1/3 of spinach mixture over by spoonfuls. Repeat layering with sauce, noodles, ricotta cheese mixture and spinach mixture 2 more times. Top with remaining 3 noodles and 1 cup sauce.
  • Preheat oven to 350°F. Cover lasagna with foil. Bake 35 minutes. Uncover; sprinkle with Fontina cheese. Bake lasagna until heated through, sauce bubbles and cheese on top is melted, about 15 minutes longer. Let stand 10 minutes.

Pesto lasagna are a hearty first course that is perfect for Sundays: layers of egg pasta, béchamel sauce, and Genoese pesto.

Steps:

  • To prepare pesto lasagna , start with the pesto (for the complete procedure you can see our Genoese pesto recipe): first off, clean the basil leaves with a clean cloth, do not wash them with water. Then take a mortar and pound the peeled garlic together with a pinch of coarse salt: once you have a creamy mixture, add the basil leaves and another pinch of coarse salt 1 . Crush the basil by turning pestle and mortar in the opposite direction 2 . Add the pine nuts and grated cheese as you continue to crush the ingredients. Finally, add the oil 3 a little at a time, continuing to mix the ingredients well with the pestle until you obtain a homogeneous sauce. Alternatively, you can make the pesto in a blender, taking care to cool the blades in the refrigerator first and blend for the shortest possible time to prevent the basil from discoloring.
  • Set the pesto aside 4 . As an alternative to the mortar, you can proceed with a blender fitted with blades for making pesto. Now proceed with the homemade pasta. Pour the sieved flour into a bowl (keep about 1/4-1/3 cup (30-40 g) to add later if needed) 5 . Add the eggs and start mixing the ingredients with a fork, incorporating the flour a little at a time 6 .
  • Then knead the dough with your hands 7 for at least 10 minutes until a soft and homogeneous mixture is obtained. Shape into a loaf 8 , wrap it with plastic wrap and let it rest in a cool, dry place for about 30 minutes. Now make the béchamel sauce: heat the milk in a small saucepan, melt the butter over low heat, then turn off the heat and add the sifted flour a little at a time 9 , stirring continuously with a whisk to prevent any lumps. Then put the butter and flour mixture back over low heat and stir until golden.
  • Season the milk with nutmeg and salt, then pour it a little at a time into the butter and flour mixture 10 , stir vigorously with a whisk 11 . Cook for 5-6 minutes on a low heat and continue stirring until the sauce thickens and starts to boil. Your béchamel sauce is ready, transfer it to a bowl and let it cool down 12 .
  • In the meantime, pick up the fresh dough, sprinkle it with very little 00 flour, then divide it into 2 portions; wrap in plastic the one you are not using immediately to prevent it from drying out and put the other through a pasta machine (alternatively you can roll out the dough by hand with a rolling pin), flatten the dough and pass it through the rollers of the machine, from the widest to the thinnest thickness gradually until you get a very thin sheet of dough 13 . From the sheets of dough, cut 22 rectangles measuring 4x6 inches (10x15 cm) with a smooth pastry cutter or a knife 14 . Place the sheets on a tray with flour to prevent them from sticking 15 .
  • Bring a saucepan full of slightly salted water to a boil, blanch the sheets for 1 minute 16 , drain them and place them on a tray drizzling them with a little oil so they won't stick 17 . You can also quickly dip the pasta sheets in a bowl of cold water to stop the cooking process. Once the pasta is cooked, take a 12x8-inch (30x20 cm) ovenproof dish and grease the bottom with a little oil 18 .
  • Spoon a layer of béchamel sauce 19 then one of pesto 20 , and lay 3 sheets of pasta on top 21 , overlapping them slightly.
  • Cover with béchamel sauce 22 and pesto, taking care to distribute the sauces evenly with a spoon 23 , sprinkle with grated cheese 24 and repeat with another layer of fresh pasta sheets until the ingredients are used up (you will need 6 layers composed of 3 sheets each).
  • Finish off the last layer with 4 sheets of dough arranged horizontally (25-26), then top with béchamel sauce and pesto 27 .
  • Mix the sauces well to obtain a more homogeneous cream 28 and finish with a layer of grated cheese 29 . Now bake the pesto lasagna in a preheated static oven at 360°F (180°C) for 15 minutes, then continue for another 5 minutes in grill mode (if you like a softer surface, you can skip this step). Take the pesto lasagna out of the oven and let it cool slightly before taking to the table 30 !

Steps:

  • Preheat oven to 475°F. Toss plum tomatoes, zucchini, squash, peppers, mushrooms, salt, and oil in a bowl. Coat a baking sheet with cooking spray and place vegetables on it; roast 30 minutes. In a bowl, mix egg white, ricotta, pesto, and Parmesan. Coat a 9" x 12" baking pan with cooking spray. Spread 1 can tomatoes on the bottom. Top with 3 noodles. Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the yellow squash and zucchini and cook, stirring, for 4 to 5 minutes more. Season with salt, pepper and red pepper flakes. Stir in the crushed tomatoes and tomato sauce; bring to a simmer. Cook, stirring occasionally, about 20 minutes. Add salt, pepper and a pinch of sugar, if necessary.

  • Grease the bottom and sides of your lasagna dish with butter. Spread a little of the tomato sauce on the bottom of the pan. Lay 4 noodles across the bottom of the baking dish, overlapping by 1/2-inch. Spread 1/3 of the ricotta and pesto mixture evenly on top. Sprinkle with about a 1/2 cup mozzarella cheese. Ladle about 1 cup of sauce on top. Repeat layering in the same order. Layer the top layer of noodles and drizzle with the remaining sauce, then sprinkle with the Parmesan and remaining mozzarella. Cover with foil and bake in the center of the oven until the sauce is bubbling around the edges, about 40 minutes. Uncover and bake 5 minutes more. Let stand 10 minutes before slicing.

  • In a food processor or blender combine tofu, garlic powder, vinegar, salt, olive oil, nutritional yeast, & cream cheese. Process/blend until smooth and combined. Pour into a bowl and add pesto to the mixture. Set aside.
  • Add onion, a drizzle of oil, and a pinch of salt. Saute for 4-5 minutes until translucent. Add in sausage, saute until nice and browned, another 4-5 minutes. Remove from Crock-Pot making sure to get every little piece up, place in a small bowl and set aside. Turn Crock-Pot off.
  • In a 9” Springform Pan, add ¾ cup of marinara sauce. Add a layer of lasagna noodles, breaking them up as needed to fit and cover the marinara. Add 1/3 of the tofu/pesto mixture. Add 1/3 of the sausage and onion mixture, Repeat that 2 more times (marinara through sausage mixture), finishing with one last layer of lasagna noodles.

  • Preheat oven to 350F. Bring a medium pot of water to a boil. Add the lasagna noodles and cook until al dente. Drain then rinse with cold water. Set aside.
  • Cut the zucchini and squash lengthwise into 8-10 slices using a knife or mandolin. Slice the cherry tomatoes in half lengthwise. Heat a tablespoon of oil in a large skillet over medium heat. When hot, add the tomatoes and zucchini together. Sprinkle with 1/4 teaspoon of salt (optional). Cook for 6-8 minutes, or until the zucchini is almost translucent and tender. The cherry tomatoes should release the majority of their juices. Reserve the liquid.
  • For the tofu ricotta: combine all of the ricotta ingredients in a food processor and pulse until crumbled. Alternately, use your hands to break down the tofu for a more chunky texture.
  • Place 1/4 cup pesto at the bottom of an 8x11 (or similiarly sized) baking dish. Top with three cooked noodles. Top with 1/4 cup pesto and half of the tofu ricotta. Layer half of the zuchinni and yellow squash side by side (see pictures for reference). Top with half of the cherry tomatoes. Repeat one more time, then top with 3 more cooked noodles. Top with the reserved tomato liquid and 1/4 cup pesto.
