Spinach Salad with Fennel and Blood Oranges image

An Italian spinach salad gets its flavor from blood oranges, fennel, and red onion; cremini mushrooms and spinach add an earthy note.

3 blood oranges
Juice of 1 lemon
2 tablespoons sherry vinegar
1/2 teaspoon coarse salt
Freshly ground pepper
3 slices bacon
1 bulb fennel, very thinly sliced
16 cremini mushrooms, very thinly sliced
1 red onion, very thinly sliced
6 ounces baby spinach

Steps:

  • Make the vinaigrette: Using a sharp paring knife, peel 2 oranges, following the curve of the fruit; cut between membranes to remove whole segments. Place in a small bowl; set aside. Juice remaining orange into a separate small bowl or large glass measuring cup; whisk in lemon juice, vinegar, and salt. Season with pepper; set aside.
  • In a small skillet, cook bacon over medium heat until crisp and browned on both sides, about 4 minutes per side. Transfer to drain on paper towels; let cool, and finely crumble.
  • In a large serving bowl, combine fennel, mushrooms, onion, and spinach. Add reserved orange segments and vinaigrette, and toss to combine. Divide among serving plates, and sprinkle each with crumbled bacon.

This is the salad, my dad, Mario, came up with for the big sister-cities dinner that Solari's hosted for the visiting dignitaries from Sestri Levante. The combination of the sweet oranges, crunchy fennel, and salty olives makes for a zesty palate-cleanser. And because the salad can be prepared in advance and then tossed at the last minute, it's a terrific side dish for a dinner party of any size, from four to forty guests. Use only the bulb of the fennel, and core and quarter it before slicing. For the oranges, make sure to remove most of their white pith, as it can be bitter. You can squeeze the two teaspoons of juice needed for the dressing from one of the oranges before cutting it up. The dressing can be made a day ahead and kept in the fridge; just be sure to take it out at least a half hour before serving, and give it a good stir before using. This recipe is excerpted from Death al Fresco: A Sally Solari Mystery.

2 cups naval oranges, peeled and cut into bite-sized chunks (about 3 large oranges)
2 cups fennel, thinly sliced
1 cup sliced, pitted Greek-style black olives
6 cups baby spinach
Salt and pepper, to taste
2 teaspoons Dijon-style mustard
1/4 teaspoon ground black pepper
1/2 teaspoon sugar
1 teaspoon balsamic vinegar
3 tablespoons olive oil (preferably extra virgin)
2 teaspoons orange juice

Steps:

  • 1 Mix the mustard, pepper, sugar, and vinegar together in a bowl until smooth and the sugar has dissolved. Slowly drizzle the olive oil into the bowl, using a wire whisk to incorporate it into the other ingredients. (Don't beat it too hard, or the oil can become bitter.) Once smooth, finish by whisking in the orange juice. Add more juice or a little water, if needed to thin to your desired consistency. 2 Toss all the salad ingredients in a large bowl, then drizzle on the dressing and toss again. Season with salt and pepper to taste.

  • Whisk 2 tablespoons white balsamic vinegar with 1/4 cup olive oil in a large bowl; season with salt and pepper. Blood oranges are only in season for a few brief times a year, but they are so delicious and unusual that I wanted to create a recipe worthy of them. This colorful salad always gets rave reviews, and I always get asked for the recipe. My husband says it is the best salad he's ever had!

2 red onions, thinly sliced
4 blood oranges
8 ounces pitted Kalamata olives, drained
½ cup olive oil
6 tablespoons balsamic vinegar, or more to taste
1 large navel orange, juiced
¼ cup white sugar
2 teaspoons Dijon mustard
¼ teaspoon dried oregano
¼ teaspoon black pepper
¼ teaspoon garlic powder, or more to taste
1 (6 ounce) package fresh spinach
1 (10 ounce) basket cherry tomatoes, halved
4 ounces crumbled blue cheese
4 ounces roasted, salted macadamia nuts

Steps:

  • Fill a covered bowl halfway with ice, add onion slices, and top with more ice. Add cold water until you're just able to get the lid on. Refrigerate for 3 hours.
  • Cut a slice off the top and bottom of each of the blood oranges, and slice downward to remove all skin and white pith. Be careful, as blood oranges will stain like beet juice. Cut oranges into 1/4-inch horizontal slices and remove seeds. Retain any juice and add to the juice of the navel orange. Put slices in a covered bowl or plastic bag with the olives and refrigerate for 3 hours along with onions.
  • Combine olive oil, balsamic vinegar, orange juice, sugar, mustard, oregano, pepper, and garlic powder in a jar with a lid, close, and shake well to combine. Refrigerate until 15 minutes before serving the salad. Remove from refrigerator to barely come to room temperature.
  • Drain onions and add to a large salad bowl. Add spinach, cherry tomatoes, onions, blood orange slices, and kalamata olives. Drizzle dressing on top and toss to combine. Sprinkle with blue cheese and macadamia nuts.

3 blood oranges (use navel oranges if blood oranges are out-of-season)
1 large fennel bulb
4 teaspoons white wine vinegar
4 teaspoons finely chopped fresh basil
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup extra virgin olive oil

Steps:

  • Use a sharp knife to remove orange peel.
  • Cut oranges into segments, removing all the white pith.
  • Slice end from fennel and remove shoots from top (reserve shoots).
  • If exterior of fennel bulb is marred or discoloured, peel with a vegetable peeler.
  • Cut in half and thinly slice.
  • In a small bowl, whisk together vinegar, basil, garlic, salt and pepper; then whisk in oil.
  • Arrange fennel slices and orange segments on individual serving dishes.
  • Drizzle dressing over salads and garnish with reserved fennel fronds.

2 pounds fennel bulbs
3 to 4 oranges
1/4 cup good olive oil
2 lemons, juiced
Kosher salt
1/4 teaspoon freshly ground black pepper
2 ounces arugula

Steps:

  • Cut the fronds from the fennel bulbs and reserve some of the feathery leaves for later. Cut each fennel bulb in half and remove the cores with a sharp knife.
  • Fit a food processor with the thinnest slicing blade. Cut the fennel bulbs into wedges and place horizontally into the feed tube. Process in batches. Peel each orange, remove the pith with a knife, and slice. Set aside.
  • For the dressing: Whisk together the oil, juice, 1 teaspoon salt and the pepper in a small bowl. Place the fennel slices, oranges slices and arugula in a large bowl. Pour the dressing over the salad and toss together. Sprinkle with salt and add some fennel fronds for decoration.

2 fennel bulbs
1/4 lb chopped walnuts or 1/4 lb pecans
1/4 cup olive oil
1/2 cup wine vinegar
2 teaspoons French mustard
2 cloves garlic, crushed

Steps:

  • Remove thick stalks from spinach and tear leaves into salad bowl.
  • Trim leaves from fennel and reserve.
  • Slice fennel bulb and add with nuts to the bowl.
  • Put olive oil and seasonings in a jar with a tight-fitting lid, shake well to blend.
  • Just before serving, pour the dressing over the salad and toss well to coat.
  • Garnish with fennel leaves.
