CAMPFIRE FOIL PACKS

These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

1 pound skinless, boneless chicken breast meat - cubed
2 onions, diced
1 (8 ounce) package sliced fresh mushrooms
1 yellow bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
4 cloves garlic, sliced
4 small potatoes, cubed
¼ cup olive oil
1 lemon, juiced

Steps:

  • In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
  • Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
  • Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

A complete foil pack meal! This meat and veggie bundle is quick to prep and easy to clean up at the campsite!

2 lb 85% lean ground beef
½ cup bread crumbs
4 tablespoons french onion soup mix
1 ½ lb petite marble medley potato
1 lb baby carrot
1 ½ teaspoons kosher salt
½ teaspoon black pepper
1 cup BBQ sauce, or ketchup, for glazing

Steps:

  • Prepare a grill or campfire for medium heat.
  • In a medium bowl, gently mix together the ground beef, bread crumbs, and French onion soup mix until well combined.
  • Lay out 6 large rectangles of heavy duty aluminum foil, about 20 x 12 inches (50 x 30 cm) each.
  • Place about 6 potatoes and 4 carrots on a piece of foil. Season with salt and pepper. Form about 5 ounces of beef mixture into a patty and place on top of the vegetable pile. Fold the foil over and crimp the edges to seal. Repeat with the remaining ingredients.
  • Place the packets on the grill over medium heat. Cook for 15-20 minutes, until the potatoes are tender and the beef patties are cooked through.
  • Let cool for a few minutes, then carefully unwrap the packets. Glaze the meat with BBQ sauce.
  • Enjoy!

1 medium yellow summer squash, halved and cut into 3/4-inch slices
1 medium zucchini, cut into 3/4-inch slices
6 large fresh mushrooms, quartered
2 large tomatoes, cut into wedges
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
1/2 cup fresh baby carrots, quartered lengthwise
1/4 cup prepared ranch salad dressing
1/4 cup prepared Italian salad dressing

Steps:

  • Divide vegetables between two pieces of double thickness heavy-duty foil (about 18 in. square). Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 10-13 minutes on each side or until vegetables are tender. , Open foil carefully to allow steam to escape. With a slotted spoon, remove vegetables to a serving dish. Combine the salad dressings; drizzle over vegetables and toss to coat.

Easy, Quick and delicious!! Everything in one roaster, serve with a green salad and rolls. Change the veggies to your liking, be sure they are similar in size. Have sour cream and chives ready for the potatoes. recipe #20107 goes really well on this roast.

4 lbs beef eye round (very lean)
1 1/2 slices thick cut bacon (optional)
2 tablespoons Dijon mustard
8 small carrots, peeled with tops left on
8 large mushrooms, leave whole
2 slices sweet onions, 1/4 inch thick (such as Spanish, Vidalia, Walla Walla)
4 medium baking potatoes, scrubbed, leave skins on, score lengthwise
olive oil
salt
pepper

Steps:

  • Slather the roast with the roast beef slather (recipe on Recipezaar), let rest 15 to 20 minutes, or spread with Dijon mustard.
  • In the meantime, spray a roaster with veggie spray.
  • Place the thick slices of onion beside each other in the middle of the roaster.
  • sprinkle with salt and pepper.
  • In a large bowl, place the carrots, mushrooms and potatoes, pour olive oil over, just enough to moisten, stir to coat well.
  • Sprinkle veggies with salt and pepper.
  • Place the roast on top of the onion slices, cut the bacon into 3 or 4 slices and place on top of the roast, if using.
  • Place the whole potatoes, one on each side and one at each end of the roast.
  • Place the mushrooms and carrots in the remaining spaces.
  • Cook roast and veggies in 400°F oven for 1 hour.
  • Roast will be medium rare and potatoes will be fork tender.

1 pound lean ground beef
1 envelope onion soup mix
¼ cup water
1 cup sliced fresh mushrooms
1 (9 ounce) package frozen cut green beans, thawed

Steps:

  • Coat four pieces of heavy-duty foil (about 12 in. square) with nonstick cooking spray. Place 1/2 cup potatoes on each square. Shape beef into four patties; place over potatoes. Combine soup mix and water; spoon half over patties. Top with mushrooms, green beans and remaining soup mixture.
  • Fold foil around meat and vegetables and seal tightly. Place on a baking sheet. Bake at 375 degrees F for 25-30 minutes or until meat is no longer pink and potatoes are tender.

We have so many garden vegetables right now and this is a nice way to use up some of them. This would make a nice appetizer or a side dish for a cook out. The sauce makes these little bundles. You may also have some left over zucchini and squash depending on how small they are.

10 slices deli ham, cut in half
5 peeled baby carrots, quartered in strips
1 small zucchini, cut into 1 inch strips
1 small yellow squash, cut into 1 inch strips
1 small red onion, sliced
2 cups water
4 tablespoons dry sherry
4 tablespoons light soy sauce
2 teaspoons sugar
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger

Steps:

  • For the sauce combine the last 5 ingredients and set aside.
  • In medium saucepan bring 2 cups of water to a boil.
  • Add carrots and boil for 2 minutes.
  • Add onion and boil another minute.
  • Add zucchini and squash and boil for 30 seconds.
  • Remove from stove and drain and rinse with cold water.
  • On a work surface place 1/2 piece of ham and in the center add 2 zucchini strips, 2 squash strips 1 onion strip and 1 carrot strip. Fold the lower end over the vegetables and then the other end.
  • Place bundle on metal skewers with the folded side first and repeat until you have all the ham used up.
  • Place them touching each other slightly on the skewers.
  • Preheat your grill to medium heat.
  • Coat the cooking grate with oil.
  • Brush each bundle with the sauce and place on grill.
  • Cook with lid open for 15-20 minutes until the ham turns slightly brown, basting with the sauce every 5 minutes and turning gently 4 times.
  • Remove from the grill and enjoy.
