1 cup all-purpose flour
1/3 cup sugar
1/2 cup butter
FILLING:
2 eggs
1/2 cup corn syrup
1/2 cup sugar
1/4 cup crunchy peanut butter
1/4 teaspoon salt
1/2 cup sweetened shredded coconut
1/2 cup semisweet chocolate chips

Steps:

  • In a bowl, combine flour and sugar; cut in the butter until mixture is crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until lightly browned. , In a large bowl, beat the eggs, corn syrup, sugar, peanut butter and salt until smooth. Fold in coconut and chocolate chips. Pour over crust. Return to the oven for 15-20 minutes or until golden. Cool on a wire rack. Cut into bars.

I got this recipe from a Friends of the Library cookbook. The bars are easy to make and taste awsome. Plus the ingredients are things that most people have one hand. My kids also love it.

1/2 cup creamy peanut butter
1/2 cup margarine
1 1/2 cups sugar
2 eggs
1 tablespoon vanilla
1 cup plain flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Pre heat oven to 350 degrees. Grease and flour 9 x 13 inch pan and set aside.
  • Melt peanut butter and margarine in a medium pan.
  • When melted add the sugar, eggs, flour, baking powder, salt and vanilla, stirring until well blended.
  • Pour into pan and bake for 25 to 30 minutes or until set. Cool, and cut into squares.

½ teaspoon salt
¾ teaspoon baking powder
¼ teaspoon freshly grated nutmeg
2 eggs
1 cup firmly packed light brown sugar (215g)
8 tablespoons butter, melted and cooled (113g)
1 teaspoon vanilla
½ cup chunky peanut butter (133g)
18 Reese's Peanut Butter Cups, cut in quarters
½ cup peanut butter-flavored chips (85g)
½ cup semi-sweet chocolate chips (85g)
extra peanut butter cups and chips for sprinkling on top

Steps:

  • Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with non-stick cooking spray. See note*
  • Combine the flour, salt, baking powder, and grated nutmeg in a bowl and whisk to combine.
  • In another mixing bowl, whisk eggs. Add brown, cooled melted butter, and vanilla. Whisk until smooth.
  • Add peanut butter and whisk until smooth.
  • Remove 1 tablespoon from the flour mixture and toss with peanut butter and chocolate chips.
  • Add flour mixture to wet mixture and stir with a wooden spoon until combined.
  • Add peanut butter chips, chocolate chips, and chopped Reese's cups and stir gently to combine.
  • Transfer mixture to prepared baking pan and smooth.
  • Bake until set and golden on the edges, about 30 minutes. Do not overbake.
  • Let cool completely before cutting into squares.

Steps:

1 1/2 cups all-purpose flour
2 cups old-fashioned rolled oats
1/4 cup butter
1 Tablespoon unsweetened cocoa powder

Steps:

  • Preheat oven to 350 degrees F. In a large mixing bowl, cream together the butter, sugar and brown sugar.

1/2 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2/3 cup creamy peanut butter
2 teaspoons pure vanilla extract
2 cups bittersweet chocolate chips (about 12 1/2 ounces)
1/2 cup chopped salted peanuts (about 2 ounces)

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. 1 cup sugar
1 cup light corn syrup
1 teaspoon vanilla
1/2 teaspoon kosher salt
1 cup unsweetened peanut butter
7 cups cereal flakes, such as Special K
1 cup dark chocolate chips
1 cup butterscotch chips
Flaky salt
Sprinkles, for topping, if desired

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square pan with cooking spray and line with parchment so that wings come up the sides by 1 inch.
  • In a large pot, combine the sugar, corn syrup, vanilla and salt over medium heat and cook until the sugar is melted. Stir in the peanut butter, then the cereal. Pour into the prepared pan and pack it down firmly and evenly with a spatula. Scatter the chocolate chips and butterscotch chips all over the top.
  • Bake until the chips are melty, about 3 minutes. Use an offset spatula to spread the melted chips in an even layer all over the top. Sprinkle with flaky salt and sprinkles if using and allow to set at room temperature or in the fridge. Slice into 25 squares.

1 cup brown sugar, firmly packed
2/3 cup butter, softened (equals 10 2/3 tbls)
1/3 cup light corn syrup
1 teaspoon vanilla
4 cups quick oats, uncooked
1 cup semi-sweet chocolate chips
2/3 cup creamy peanut butter
1/2 cup unsalted peanuts, chopped

Steps:

  • Preheat oven to 350°F Grease at 13x9" baking pan.
  • In a large mixer bowl, beat brown sugar and butter together until creamy.
  • Beat in corn syrup and vanilla; then stir in uncooked oats.
  • Press dough into bottom of the prepared pan.
  • Bake 15 minutes. Cool slightly (about 10-15 minutes).
  • While this is cooling, in a small saucepan, combine chocolate chips and peanut butter. Cook over low heat, stirring constantly until smooth.
