Easy 20 Minute Vegetarian Lo Mein image

This easy vegetarian lo mein is done in under 20 minutes and tastes divinely of umami veggies and delicious sesame and soy sauce!

2 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
8.5 oz noodles, e.g. ramen noodles or egg noodles 240g
1 tablespoon oil, e.g. canola or sesame
2 tablespoon ginger, minced or finely chopped
1 tablespoon garlic, minced
1 red chilli, for heat leave in the seeds, finely chopped
2 cups mushrooms, e.g. champignon chopped into quarters. 150-200g
2 cups cabbage, cut into strips. 200g
3/4 cup broccoli, cut into small florets. 100g
1 carrot, cut into matchsticks
1/2 red bell pepper, chopped, optional
3 green onions, separate white and green parts
1 tablespoon mirin, or white wine, sherry
sesame seeds, for garnish, optional

Steps:

  • Mix all the sauce ingredients together.
  • Cook the noodles according to package instructions. Drain them and coat in a little sesame oil or other oil for them to unstick from each other. Set aside.
  • Cut them as you like or as I described in the ingredients list.
  • In a large skillet, on medium high heat, pour a little neutral oil in. Add in garlic and ginger and sauté until aromatic, about 1 minute. Add all the other vegetables - except for the green parts of the green onion - and cook until tender. Around 6 minutes, depending a little on the size you chose. Sprinkle with pepper. You may also wait with the cabbage until the last minute of sautéing to have more crunch.
  • Add mirin or white wine to the pan to deglaze it (to get the flavorful brown bits from the pan into the sauce). Add in the cooked noodles and the sauce and give it a mix, to make sure the noodles are warm before serving.
  • Serve warm and sprinkle with green onions and sesame seeds, if desired.

8 ounces lo mein noodles, linguine or spaghetti
1 teaspoon toasted sesame oil
12 ounces Chinese broccoli (see Tips) or broccolini
2 tablespoons reduced-sodium soy sauce
1 tablespoon Shao Hsing rice wine (see Tips) or dry sherry
1 tablespoon sriracha or other Asian hot sauce
2 tablespoons peanut oil, divided
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
6 ounces fresh shiitake mushrooms, stems removed and caps thinly sliced
Pinch of salt

Steps:

  • Bring 2 quarts of water to a boil in a large pot. Add noodles and cook according to package directions. Drain and rinse with cold water. Shake well to remove excess water. Transfer the noodles to a cutting board and roughly cut into thirds. Return the noodles to the pot and toss with sesame oil. Set aside.
  • Trim 1/4 inch off broccoli (or broccolini) stalks. If the stalks are thicker than 1/2 inch, cut in half lengthwise. Keeping them separate, cut stalks and leaves into 2-inch-long pieces. Combine soy sauce, rice wine (or sherry) and hot sauce in a small bowl.
  • Heat a 14-inch flat-bottomed wok or large heavy skillet (not nonstick) over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon peanut oil, add ginger and garlic and stir-fry until fragrant, about 10 seconds. Add mushrooms and the broccoli (or broccolini) stalks and stir-fry until all the oil is absorbed, about 30 seconds. Swirl in the remaining 1 tablespoon oil and add the noodles and broccoli leaves; stir-fry until just combined, about 15 seconds. Stir the soy sauce mixture and swirl it in. Sprinkle with salt and stir-fry until the noodles are heated through, 1 to 2 minutes.

1 large green bell pepper, diced
1 large onion, diced
2 jalapeno peppers, chopped

Steps:

  • Heat oil in a pot over medium-high heat. Saute bell pepper, onion, and jalapeno peppers until tender, about 3 minutes. Add chili powder, salt, cumin, and garlic. Cook, stirring occasionally, for about 10 minutes, making sure chili powder does not burn.
  • Stir tomatoes, beans, water, and rice into the pot. Bring to a boil. Reduce heat to low, cover, and simmer until rice is fully cooked, about 20 minutes. Check every 10 to 15 minutes if extra water is needed; add 1/4 cup at a time.

Vegetarian Mandarin Orange and Almond Lo Mein
ounces about 7 ounces fettuccine rice noodles
1/2 package firm tofu, cut into small cubes
4 TBSP canola oil
5 TBSP mandarin orange/pear juice
3 1/2 TBSP soy sauce
1 TBSP rice wine vinegar
1 1/2 TBSP honey
2 TBSP corn starch
(marinate while you prepare the rest)
Sauce:
4 TBSP mandarin orange/pear juice
3 1/2 TBSP soy sauce
1 TBSP rice wine vinegar
1/8 tsp black pepper
3/4 tsp ground ginger
1 1/2 tsp corn starch
Veggies and other ingredients:
1/2 cup green onion, chopped into 1/2" pieces
1 cup sliced and chopped mushrooms
1 large garlic clove
3 cups frozen stir fry veggies
1/4 cup slivered almonds
1 small can mandarin oranges (about 6-8 ounces)
Sweet and Spicy Chili (for serving individually):
3 1/2 TBSP sugar
1 1/2 TBSP water
1/2 tsp red chili seeds
3/4 tsp garlic salt
1/2 tsp corn starch
1 tsp rice wine vinegar
remaining sauce

Steps:

  • 1. Ending with the corn starch and tofu, add all of the marinade ingredients to a medium sized bowl then refrigerate while you get started on the rest. 2. Fill a large pot with boiling water and cook the noodles with about 1 tbsp of canola oil until they are al dente. Start on the sauce. Combine all ingredients in a small bowl, ending with the corn starch, make sure you mix it well so that there are no lumps. 3. Check on the pasta and chop all of the veggies then get started on the sweet and spicy chili sauce, which will be served on the side. 4. When the pasta is done cooking, strain and keep it in a large bowl. Now get started on frying up the veggies. Add 1TBSPof oil to a sauce pan and then fry the veggies (not frozen ones), starting with the garlic, now add the onion and mushroom. Fry just until the mushrooms start to soften. Remove veggies from the pan. Now add the tofu to the pan and fry on high for a few seconds, while stirring gently; add the fried onion and mushroom. Continue to cook on medium/high until the tofu slightly darkens or becomes golden on one side, then remove the veggies from the pan when most of the marinade has evaporated (all but about 2 tbsp). 5. Now add 1TBSPof canola oil to that same pan, keep it on a low flame and add the pasta with 4 1/2 tbsp of the sauce (not the marinade from the veggies). Use a fork to toss the pasta until it's evenly coated with the sauce. Cook on medium without a lid and continue to toss pasta with the fork, then add the frozen veggies. Cook on low and cover; allow to simmer until frozen veggies are thawed and warm. When they're thawed, add the tofu, fried onion and mushrooms; the almonds and mandarin oranges. Turn off flame and keep covered until ready to serve. 6. For the sweet and spicy chili, combine all of the ingredients in a bowl, including the remaining sauce, then simmer on low in a sauce pan while stirring. Don't cook it for too long, just until it starts to thicken. Now pour the sauce into a small dish. (If you cook it too long, it'll become like glue!); it may look a bit runny, but once it sits for about 5 minutes, it'll thicken. If you thickened the chili sauce too much, you can add a bit of water and microwave it for a few seconds. You can drizzle the chili sauce over the lo mein, it's spicy so a little goes a long way :). You should end up with about 1/4 cup of the chili.

2 cups diced fresh tomatoes (about 2 medium or 6 plum tomatoes)
1 1/2 cups tomato sauce
1 (15-ounce) can kidney beans, drained and rinsed
1 1/2 (15-ounce) cans black beans, drained and rinsed
1 1/2 teaspoons kosher salt, or to taste
Chopped fresh cilantro

Steps:

  • 1. Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the onion, carrots, and jalapeño and sauté, stirring often, until the onion is soft and translucent, about 5 minutes. Add the garlic and sauté for 1 minute. Add the bulgur, chili powder, and cumin and stir until well combined.

This is very similar to the Mandarin chicken served in the malls, except I use white meat chicken. Boneless chicken thighs are what the restaurant uses. It's quick, easy and delicious. Sometimes I'll make this, then a quick trip to the local Chinese take-out for vegetable lo mein and eggrolls for a cheap, tasty Chinese meal that's almost homemade. You'll be amazed at how authentic this tastes! *Note: I have adjusted the amount of sugar to reflect comments written in reviews. If you like it sweet, use the full 2/3 cup.

2 large boneless, skinless chicken breasts (cut into bite size chunks )
1/2 cup flour
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
2 tsp orange peel (grated)

1/2 cup Frank's sweet chili sauce
1/4 cup orange juice
1 Tbsp minced onion
1 tsp minced garlic
1 tsp ground ginger
20 oz. can mandarin oranges (drained well)

Steps:

  • Start cooking the rice and cut up the chicken.
  • Mix together the flour, garlic powder, onion powder, salt and orange peel in a plastic bag or container of some kind. Toss the chicken pieces in the bag until they are fully coated.
  • In a large skillet, heat the oil and then add the coated chicken pieces and toss often to brown all sides.
  • In a small mixing bowl, whisk together the sweet chili sauce, orange juice, minced onion, minced garlic and ground ginger. Once the chicken pieces have browned, pour the sauce over the top. Cover the skillet and let cook for 4 to 6 minutes, or until the chicken has cooked through. Stir once or twice to keep from sticking to the bottom of the skillet. If necessary, deglaze the skillet with orange juice.
  • Once the chicken has cooked through, stir in the mandarin orange segments and let warm over low heat for a few minutes.
  • Prepare veggies.
  • Serve Spicy Mandarin Orange Chicken over rice with side of veggies.
