1 lb dried green split peas
1 tablespoon oil
1 yellow onion (chopped)
6 cloves garlic (finely chopped)
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon marjoram
1/4 teaspoon black pepper
8 cups vegetable stock/broth
2 teaspoons Worcestershire sauce (or soy sauce)
4 medium Yukon gold potatoes (peeled and cubed)
2 large carrots (peeled and chopped)
Salt to taste

Steps:

  • Rinse split peas. Set aside.
  • In a large pot on medium heat, add the oil and chopped onion. Sauté until the onion is translucent.
  • Add in the garlic, smoked paprika, thyme, marjoram, and black pepper and sauté for an additional two minutes.
  • Add the split peas, vegetable stock, and Worcestershire sauce to the pot.
  • Bring to a boil on high. Reduce heat to low, cover with lid, then simmer for 60-75 minutes, or until the peas are tender and beginning to disintegrate.
  • Add the potatoes and carrots into the soup. Bring to a simmer again. Simmer for 10 minutes or until the potatoes are tender.
  • Salt to taste.

This makes a very thick vegetarian split pea soup. To make it thinner, reduce the amount of split peas or add more water. Depending on the density of split peas, it may take a while for the vegetables and peas to soften, but you can't really overcook this soup; just stir occasionally, and add water if it gets too dry. Seasonings can be altered to taste. Tastes even better reheated.

  • In a large pot over medium high heat, saute the oil, onion, bay leaf and garlic for 5 minutes, or until onions are translucent. Add the peas, barley, salt and water. Bring to a boil and reduce heat to low. Simmer for 2 hours, stirring occasionally.
  • Add the carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.

Steps:

  • Mince two cloves of garlic. Dice the onion, celery, and carrots. Add the garlic, onion, celery, and carrots to a large pot with olive oil and sauté over medium heat for about five minutes, or until the onions are soft.
  • Add the dry split peas, smoked paprika, parsley, oregano, thyme, pepper, and water to the pot. Stir to combine.
  • Place a lid on top, turn the heat up to medium-high, and bring the water up to a boil. When it reaches a boil, turn the heat down to medium-low and continue to let the soup simmer, stirring occasionally, for about 45 minutes, or until the peas have completely broken down and the soup is thick (keep the lid on between stirs).
  • Add salt to the soup by taste, starting with ½ teaspoon. I added about 1.5 tsp. Serve hot with crackers or crusty bread for dipping!

1 cup dried split peas
5 cups cold water
¼ cup diced onion
¼ cup thinly sliced celery
1 tablespoon ketchup
1 tablespoon extra-virgin olive oil
1 pinch coarse salt
2 cloves garlic, crushed, or more to taste
3 bay leaves, or more to taste
1 cup sliced carrots, or more to taste
ground black pepper to taste

Steps:

  • Inspect peas, discarding any stones, foreign matter, or unattractive peas. Place peas in a fine mesh strainer and rinse under cold running water to remove pea dust.
  • Transfer drained peas into a pot with a lid and a heavy, heat-diffusing bottom. Add water, onion, celery, ketchup, olive oil, salt, garlic, and bay leaves. Cover and bring to a boil over medium-high heat. Reduce heat to a very slow simmer. Cook, stirring and scraping the bottom every 7 to 12 minutes, until peas have largely fallen apart, about 1 1/2 hours.
  • Stir carrots into the soup. Cook, covered, stirring often, until peas are completely dissolved and soup is thick, about 1 1/2 hours more. Remove and discard bay leaves. Season with pepper.

2 cups split peas, rinsed and sorted
2 tablespoons vegetable oil
2 celery ribs, sliced
1 onion, diced
2 carrots, sliced
1 turnip, peel and dice (optional)
1 medium potato, peel and dice
1 cup brown rice, uncooked
8 ounces spinach, chopped
4 cups vegetable broth
4 cups water (or more as needed)
1 tablespoon chopped parsley
salt and pepper, to taste

Steps:

  • In a large soup pot, saute onion and celery in oil until tender. Add carrots, turnip, and potato. Saute about 5 more minutes. Add water, broth, peas, rice, and spinach.
  • Simmer until peas are tender (this will take about 2-4 hours), stirring every so often to avoid scorching. Add water or broth as needed to keep soup from becoming too thick. Add parsley, salt, and pepper in the last 30 minutes.
  • Warning: If you do not add water during the cooking process, the soup will be very thick and the split peas may not soften!

1 1/2 cups yellow split peas
2 onions, chopped
1 head broccoli, coarsely chopped
3 carrots, sliced
2 zucchini, sliced (peel if desired)
1/2 cup tahini
3 -4 tablespoons Braggs liquid aminos
2 teaspoons chili powder
1 teaspoon ground cumin

Steps:

  • In a large pot, combine 6 cups of the water and split peas and bring to a boil.
  • Reduce heat and simmer, covered, for 1 hour. Stir occasionally so they don't stick on the bottom.
  • Add the vegetables and simmer another 30-45 minutes, until the peas are very soft (depends on the age of the peas).
  • Meanwhile, whisk together the remaining 1 cup of water with the tahini and the remaining engredients. If your tahini is quite thick, do this in the food processor or blender, much easier. Stir the tahini mixture into the soup and serve.

I forgot to buy celery so I used some celery salt. and I had to separate the soup at the end because my husband does not like hot spicy foods, ( the garlic and onion ok) . It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well.

  • Place first 5 ingredients in a large pot.
  • Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
  • Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
  • Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
  • Season to taste with pepper and vinegar.
  • Serve with a drizzle of sesame oil, diced tomato and minced parsley.
