This healthy flavour-punching vegan potato salad is a great addition to your summer BBQ table. Quick & easy to prepare, it'll become one of your favourite crowd pleasers. Great option for people with dietary requirements: vegan, low fat, gluten-free, dairy-free and egg-free.

500 g baby potatoes (cut in half)
1 tbsp olive oil
1 cup green peas (fresh or thawed if using frozen)
1/2 cup green olives
6-8 radishes (thinly sliced)
2 big handfuls green pea shoots
1/2 cucumber (cubed)
Juice of 1/2 lemon
A small bunch of fresh mint (finely chopped)
2 tbsp Dijon mustard
2 tbsp lemon juice
1 tbsp maple syrup
Around 4-5 tbsp olive oil

Steps:

  • Cook the potatoes in boiling water for 25-35 mins until soft. Drain, drizzle with olive oil, season with salt & pepper & cool down slightly.
  • Combine all dressing ingredients in a jar/bowl and shake/whisk for a few seconds to combine. Set aside.
  • Combine all salad ingredients in a serving bowl, add warm potatoes, drizzle with dressing, season with salt & pepper and mix well to combine. Serve warm or cold.

No Mayo Vegan Potato Salad image

This No Mayo Vegan Potato Salad is packed with LOTS of herbs and an olive oil dressing that is tangy & delicious. The perfect summer side recipe!

1.5 lbs baby potatoes
1/2 cup fresh herbs (I used a mixture of basil, parsley, dill and chives)
1/2 cup red onion (diced)
sugar & salt (optional)
1/2 cup olive oil
2 tbsp red wine vinegar
1 tbsp yellow mustard
2 cloves garlic (diced)
1/2 tsp pepper

Steps:

  • Add potatoes to a pot and cover with water. Cover with the lid and bring to a boil. Once boiling, remove the lid and continue to boil until fork tender (approx. 15 minutes). Drain and allow to cool.
  • While the potatoes are cooling, prepare the dressing. Combine all of the ingredients in a bowl and whisk to combine. Set aside.
  • When the potatoes have cooled, cut potatoes in half or quarters and place in a bowl. Add dressing, herbs and red onion to the bowl and gently toss to combine. Place in the fridge for 30 minutes.
  • Remove from the fridge and taste. If bitter, add a pinch of sugar and toss to combine. Add salt if needed.

Creamy Vegan Potato Salad image

We took classic, creamy potato salad -- a summer-time favorite for picnics and BBQ's -- and transformed it to a vegan-friendly side dish. The splash of vinegar and addition of chopped cornichons add just the right amount of zip and crunch.

2 pounds red-skinned potatoes (about 6 medium), cut into 1-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons apple cider vinegar
3/4 cup vegan mayonnaise
3 tablespoons vegan sour cream
1/4 cup finely chopped cornichons, plus 1 tablespoon brine
1 tablespoon vegan Dijon mustard
2 tablespoons fresh parsley, chopped
3 stalks celery, finely diced (about 1 cup)
2 scallions, thinly sliced
Paprika, for serving

Steps:

  • Put the potatoes in a large saucepan and cover with cold water; season with 1 teaspoon salt. Bring to a simmer over medium-high heat and cook, stirring occasionally, until tender, about 10 minutes. Drain well and transfer to a large bowl. Add the vinegar and 1/2 teaspoon salt; toss to coat well. Let cool slightly, about 10 minutes.
  • Meanwhile, whisk the vegan mayonnaise, vegan sour cream, cornichon brine, vegan mustard and several grinds of black pepper in a small bowl until smooth and combined. Stir in the parsley, cornichons, celery and scallions to combine.
  • Pour the creamy dressing over the potatoes and gently toss with a rubber spatula to combine. Taste and adjust the seasoning with salt and pepper. Cover and refrigerate until chilled through, at least 2 hours and up to overnight.
  • Sprinkle with paprika before serving.

4 medium red potatoes
1 dill pickle
1 stalk celery
1/2 red onion
1/2 green bell pepper
1 tablespoon spicy brown mustard (regular mustard will do)
2 tablespoons olive oil
2 tablespoons vinegar
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon chili powder
1 tablespoon hot sauce (Frank's, Cholula, etc.)

Steps:

  • Cut potatoes into bite size pieces and boil until cooked through.
  • Finely chop your pickle, celery, red onion and bell pepper, then set aside.
  • In a bowl big enough to fit your potatoes and chopped veggies mix the oil, vinegar, spices, mustard and hot sauce (I recommend adding more spice and mustard depending on your taste, I just pour spice in and I don't really measure).
  • When potatoes are finished, drain the water in a colander and pour the cooked potatoes into the bowl with the oil and vinegar dressing you just prepared.
  • Now add your chopped veggies in the potato bowl and mix everything together with a spoon carefully so as not to mash up the potatoes (or you can toss it with your hands). Add salt and pepper to taste.
  • Refrigerate for a few hours until chilled or overnight. Serve chilled.

Make a vegan version of a classic potato salad using vegan mayonnaise. It's the perfect accompaniment to a barbecue, picnic or salads in the summer

600g baby new potatoes , halve any larger ones
2 tsp white wine vinegar
2 tsp extra virgin olive oil
120g vegan mayonnaise
1½ tsp Dijon mustard
1 shallot , or ½ a red onion, finely chopped
2 tsp capers , chopped if large
small handful of parsley , chopped
small handful of chives , chopped

Steps:

  • Put the potatoes in a pan, season with salt and cover with cold water. Bring up to a boil and simmer for 15-20 mins, until they're tender. Drain and leave to steam-dry in a colander for 5 mins. If the skins are papery and peeling away, you can rub them off, if you like.
  • Tip the potatoes into a bowl and add the vinegar, olive oil and some seasoning, toss well, then leave to cool.
  • Stir in the mayo, mustard, shallot, capers and herbs (saving a little to garnish). Check the seasoning and add a little more salt or vinegar, if you like. Scatter over the remaining herbs and serve.
