VEGAN APPLE PIE WITH STREUSEL

- First, prepare the flax eggs by combining the ground flaxseed and water and set aside for five minutes.
- Then, add al the ingredients for the pastry into a food processor and blend until it starts to clump and form a dough.If you don't have a food processor, simply add all ingredients for the pastry to a bowl and use your hands to knead the dough until it clumps together.If the dough appears too dry, add a tiny bit of cold water or more vegan butter.
- Roll the dough into a ball, wrap it in clingfilm and place it into the fridge. Refrigerate for about 30 minutes.
- Meanwhile, peel and core the apples and chop them into slices (approximately 0.2 inches / 0.5 cm thick). Add the apples and all other "Filling Ingredients" to a large pot and stir to combine over medium heat. Let simmer for about 2 minutes and turn off the heat. Taste it. If you think it's not sweet enough, add more sugar to taste.
- Preheat the oven to 360 degrees F (180 degrees C) and brush an 8-inch pie pan (or a springform) with either coconut oil or margarine (or vegan butter). Set aside.
- Remove the dough from the fridge and set around 1/3 of it aside to use as the streusel topping. Roll out the remaining dough and fit the pie crust to the bottom of the pan, large enough to go about 2-inches (5 cm) up the sides of the springform.Instead of rolling out the dough, you can place the dough ball in the pan and spread it out with your fingers.
- Add the filling and crumble the streusel on top.
- Bake for 45-50 minutes or until golden brown and let cool. Enjoy!

This pie is delicious! My family raved. This is my own recipe. Being that it is an apple pie, it is very simple. Making it vegan was not hard at all either. With no animal products, the crust is very buttery and light. Serve right out of the oven, chilled, or slightly warmed and a la mode.

- Combine 2 1/3 cups all-purpose flour, 1 cup vegan margarine, 1 tablespoon white sugar, and salt in a food processor; pulse until mixture clumps together. Pour water in slowly and pulse a few times until a dough forms.
- Transfer dough to a flat work surface; knead for 30 seconds and shape into a disk. Wrap with plastic wrap and refrigerate until firm, about 30 minutes.
- Preheat oven to 325 degrees F (165 degrees C).
- Dust a flat work surface with flour. Roll dough out into two 10-inch crusts. Press 1 crust gently into a 9-inch pie plate.
- Combine brown sugar, 1/2 cup vegan margarine, 1/4 cup white sugar, rice milk, 3 tablespoons flour, cinnamon, and nutmeg in a saucepan; cook and stir over medium heat until margarine melts and brown sugar is dissolved, 3 to 5 minutes.
- Place apple slices in a large bowl. Pour brown sugar mixture on top; mix until apples are evenly coated. Pile apples into the bottom crust. Cover with the second crust. Cut slits in the top crust with a sharp knife.
- Bake in the preheated oven until crust is golden brown and apples are semi translucent, 45 to 60 minutes.

- Add the pecans, coconut sugar, coconut oil, and cinnamon to a food processor. Pulse 20-25 times or until you have a coarse crumble.
- Remove your crust from the freezer. Pour in the apple mixture, and use a spatula to spread it evenly into the crust. Sprinkle the cinnamon-pecan streusel over the apple layer and return the pie to the freezer for one hour to set.
