VEAL BLANQUETTE

4 pounds veal breast, boned, cut in large dice
20 pearl onions
2 quarts beef stock
1 sachet d'epices (1 tablespoon parsley, 1 tablespoon peppercorns, 1 tablespoon thyme and 1 bay leaf in a cheesecloth bag)
6 tablespoons butter, divided
1/2 cup all-purpose flour
6 ounces (about 2 cups) white button mushrooms, cleaned and sliced
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 egg yolks
1 cup heavy cream

Steps:

  • Cover the veal with cold water to "blanch" it. Drain and rinse the veal.
  • Boil about 2 cups of water in a saucepan and then add the pearl onions briefly to scald them. Drain and slip skins from the pearl onions and set them aside.
  • In a large saucepot, combine the veal with the stock and simmer covered over medium-low heat until the veal is tender, about 1 1/2 hours. After the veal has been simmering about 30 minutes, add the sachet d'epices. Then uncover the pot to allow the stock to reduce to intensify the flavor.
  • Melt 4 tablespoons of the butter in a small pot and gradually add the flour to make a white roux. (Do not allow the roux to brown.) Remove and discard the sachet from the stew. Add the roux to the stew pot and simmer until thickened.
  • In another pan, heat the remaining 2 tablespoons of butter and gently cook the pearl onions and mushrooms until they are tender. To this pan, add the lemon juice and salt and pepper, to taste, and set aside.
  • The heat under the blanquette (stew) must be such that the stew is just below a boil. In a small pot whisk together the egg yolks and cream (known as a liaison) and temper by heating gently and gradually. (You are only heating it. Do not boil. Do not cook.) Add the liaison to the blanquette. Add the reserved pearl onions and mushrooms. Adjust salt and pepper, to taste, if needed.

Add veal; cook until juices run clear, about 1 minute on each side. Remove and keep warm., Add mushrooms to skillet; cook and stir until tender, 2-3 minutes. Spoon over veal. Stir broth into skillet, stirring to loosen any browned bits. Add parsley and remaining butter; cook and stir until slightly thickened, 1-2 minutes longer. Pour over veal and mushrooms.

2 1/2 cups reduced-sodium chicken broth (20 fl oz)
1/3 cup matzo meal
7 oz brine-cured green olives (1 cup medium), pitted
2 garlic cloves, chopped
1 large egg
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup plus 2 tablespoons chopped fresh flat-leaf parsley
1 lb ground veal
5 tablespoons olive oil plus additional for greasing pan
2 medium fennel bulbs (sometimes called anise; 2 lb total), stalks cut off and discarded and bulbs halved lengthwise, then cut lengthwise into 1/3-inch-thick slices
1 lb carrots (6 medium), cut diagonally into 1-inch pieces
1 tablespoon water
2 1/4 teaspoons potato starch
Accompaniment: lemon wedges

Steps:

  • Heat 1/2 cup broth until warm, then add matzo meal and soak 10 minutes.
  • While matzo soaks, chop enough olives to measure 1/3 cup, then quarter remainder and set aside. Pulse soaked matzo and chopped olives in a food processor along with garlic, egg, 1/4 teaspoon salt, and 1/4 teaspoon pepper until olives and garlic are finely chopped and egg is incorporated. Add 1/4 cup parsley and pulse until parsley is finely chopped.
  • Transfer matzo mixture to a bowl and add veal, mixing gently with your hands until combined. Chill, covered, 30 minutes.
  • Preheat broiler. Line a 15- by 10-inch shallow baking pan or baking sheet with foil, and brush foil with oil. Using wet hands, form veal mixture into 1 1/2-inch balls, arranging in 1 layer as formed in baking pan.
  • Broil meatballs 4 to 6 inches from heat, turning once with a spatula and tongs, until browned, about 10 minutes total.
  • While meatballs are broiling, heat 3 tablespoons oil in a 12-inch heavy skillet (2 to 3 inches deep) over moderately high heat until hot but not smoking. Brown fennel in 2 batches, turning occasionally, 5 to 7 minutes per batch. Transfer to a plate, then brown carrots in remaining 2 tablespoons oil in skillet, stirring occasionally, 5 to 7 minutes.
  • Return fennel to skillet and add meatballs, remaining 2 cups chicken broth, and remaining 1/4 teaspoon each of salt and pepper. Simmer, covered, until vegetables are tender, about 20 minutes.
  • Whisk together water and potato starch in a small bowl. Stir into meatball mixture and boil, uncovered, until sauce is thickened slightly, about 2 minutes (sauce will continue to thicken off the heat). Remove from heat and sprinkle with remaining 2 tablespoons parsley and quartered olives. Season with salt.

Four 12-ounce veal shanks
Kosher salt
Freshly ground black pepper
1 cup vegetable oil
1 cup all-purpose flour
2 carrots, peeled and diced
2 celery ribs, diced
1 yellow onion, diced
6 garlic cloves, sliced
1 cup dry red wine
4 cups veal stock or chicken stock
3 cups chicken stock
3 cups canned plum tomatoes, drained and crushed
2 sprigs fresh thyme
1 sprig fresh rosemary
1 bay leaf
1 tablespoon grated fresh horseradish (see Note)
2 tablespoons grated lemon zest
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • 1. Lay the veal shanks in a shallow baking pan and sprinkle liberally on both sides with salt. Refrigerate for 2 hours.
  • 2. Rinse the veal shanks of their salt and pat dry with paper towels. Wrap each veal shank once around the circumference so that it holds the bone and meat together in the center. Tie the twine with a good knot. Season the veal shanks with pepper.
  • 3. Preheat the oven to 350°F.
  • 4. Heat a large, ovenproof casserole over high heat. Put the oil into the casserole and let it heat.
  • 5. Meanwhile, put the flour in a shallow bowl, dredge the veal shanks in it, and pat off the excess. Brown the veal shanks in the hot oil for about 5 minutes on each side, or until browned on all sides. Remove from the pan and set aside. If the oil turns dark during the process, discard it and heat a fresh cup of oil.
  • 6. Add the carrots, celery, onion, and garlic to the pan and cook over medium-high heat for 2 to 3 minutes, stirring constantly. Add the wine, bring to a boil, and cook for about 2 minutes, or until reduced by half.
  • 7. Add the stocks, tomatoes, thyme, rosemary, and bay leaf to the pan. Return the veal shanks to the pan and bring to a boil over high heat. Once the liquid boils, cover, transfer to the oven, and cook for 2 1/2 hours, until the meat is fork tender and falling off the bones.
  • 8. Remove the herbs from the braising liquid and discard. Let the veal shanks come to room temperature in the braising liquid. Remove the veal shanks and set aside. Strain the liquid through a fine-mesh sieve or chinois into a large saucepan. Bring to a boil over medium-high heat, reduce the heat, and simmer for 10 to 15 minutes, or until reduced by a quarter. Using a skimmer or large spoon, skim off any grease or foam that rises to the surface. Return the strained vegetables to the liquid and taste for seasoning.
  • 9. To serve, cut and discard the twine, put a single osso buco (veal shank) in a bowl, and ladle about 3/4 cup of the sauce and vegetables over it. (If the sauce and the meat are not still warm, heat them together very gently over low heat for 8 to 10 minutes.)
  • 10. Garnish each osso buco with the fresh horseradish, lemon zest, and chopped parsley and season with pepper.

1 large tomato, cored and halved
1 large onion, halved
1 tablespoon vegetable oil, optional
4 cups water
2 pounds veal bones, split and cut into 2-inch pieces
1 medium-size carrot (about 3 ounces), peeled and diced
1 rib celery (about 2 ounces), peeled and diced
1 leek (4 ounces), trimmed, rinsed and diced

Steps:

  • If desired, preheat conventional oven to 450 degrees. Brush tomato and onion with vegetable oil and place in a roasting pan along with the bones. Bake for about 40 minutes, shaking the pan occasionally. Remove from oven and place tomato and onion in a 5-quart casserole with tight-fitting lid. Place roasting pan on top of the stove. Stir 1 cup of the water into roasting pan to loosen all the brown bits from the bottom, and bring to a boil over moderate heat. Remove from heat and pour mixture into the casserole.
  • Combine all remaining ingredients in the casserole. Cook, covered, at 100 percent power in a 650- to 700-watt oven for 40 minutes.
  • Remove from oven and uncover. Strain broth through a fine sieve. If not using at once, pour broth into containers and store, covered, in the refrigerator or freezer. If you wish to skim the fat off, refrigerate so the fat rises to the surface and hardens, then remove with a large spoon.

Number Of Ingredients 7

4 pounds veal or beef bones, cracked by butcher or (for an all purpose "brown stock" 2 pounds veal bones and 3 pounds beef bones, cracked by butcher)
2 onions, quartered
2 stalks of celery, cut into 2 inch chunks
2 carrots, scrubbed clean and cut into 2inch lengths
1 gallon water
Bouquet Garni including parsley, 1 teaspoon thyme, 2 cloves garlic, 12 peppercorns and a bay leaf
1 medium tomato, cored and chopped

Steps:

  • Preheat the oven to 475 degrees. Roast the bones for 30 minutes or until well browned, add the onions, celery and carrots and roast for 30 minutes longer. Transfer bones and vegetables to a 1012 quart tall stockpot. Discard fat from roasting pan and deglaze with 2 cups of the water. Add this to the stock pot with remaining water, bouquet garni and tomato. Bring the liquid slowly to a boil, skimming often. Simmer for 4 5 hours, skimming occasionally and replenishing the water to keep the level of water somewhat constant.
  • Strain and discard solids; let stock come to room temperature and chill. When chilled, discard surface fat. Bring back to a simmer and adjust for seasoning. If too weak for your taste, reduce, the season with salt.
  • If you want to concentrate it, keep on reducing and transferring to a smaller pot until you have the consistency you want.

Steps:

  • Combine all ingredients in a kettle and cook three to six hours or until the liquid is reduced to about three cups.
  • Line a sieve with cheesecloth and strain the stock. Carefully skim or pour off all trace of fat. Cook the clear broth until reduced to two cups.

This recipe is originally from SABATINO'S RESTAURANT in Baltimore, Maryland, upon which I made a couple of minor changes, such as changing the use of half and half to heavy cream.

1 1/2 lbs veal scallopini (pounded thin)
3 eggs (lightly beaten)
1 cup heavy cream
salt and pepper
1/4 teaspoon oregano
1/4 cup flat leaf parsley (finely chopped)
1/2 cup grated parmesan cheese
dry breadcrumbs
1/2 cup extra virgin olive oil
3/4 cup unsalted butter
1/4-1/2 cup flour
1/2 cup cream sherry
1/4 cup sweet marsala wine
1/4 cup lemon juice
1 cup chicken broth
12 slices thin prosciutto ham (at room temperature)
12 slices thin lemons

Steps:

  • Place each slice of veal between 2 sheets of wax paper, and with the flat side of a meat mallet, pound the meat very thin.
  • Sprinkle veal with salt and pepper, and then dredge in flour.
  • Dip veal in beaten eggs and dredge again in flour, and then in the bread crumbs.
  • Saute veal in the 1/2 cup melted butter in a large skillet over medium-high heat for 2 or 3 minutes on each side, until a light golden brown.
  • Remove the veal, reserving the drippings in the skillet, and set the veal aside and keep warm.
  • In the skillet that has the reserved drippings, add the chicken broth, wine, 1/4 cup butter, lemon juice, parmesan cheese and heavy cream.
  • Stir well.
  • Over medium heat, bring to just to a boil, stirring frequently.
  • Return the reserved veal to the skillet and place the prosciutto slices on top of the veal slices, and reduce the heat, and simmer uncovered for 5 minutes.
  • Remove veal and mixture to a serving platter, placing lemon slices either on or around the veal.
  • Sprinkle with the parsley flakes and serve immediately.

1 lb boneless veal shoulder, cut into 3/4 inch cubes or 1 lb other veal stew meat
2 medium carrots, chopped
1/2 onion, chopped
1 stalk celery, chopped
1 leek, chopped
1/4 cup chopped pimiento (or red bell pepper, chopped)
6 cups veal broth or 6 cups beef broth
1 tablespoon parsley, chopped
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 bay leaf
1/8 teaspoon nutmeg
salt and pepper
1/4 cup butter or 1/4 cup margarine
1/4 cup flour
2 eggs
parsley (to garnish) (optional)

Steps:

  • Melt 2 tablespoons butter or margarine in dutch oven over medium-high heat.
  • Add veal to pan and saute until lightly brown on all sides.
  • Stir in carrot, onion, celery, leek and pimiento (or red bell pepper) and saute 5 minutes longer.
  • Add broth, herbs and seasonings to pan and simmer for 45 minutes or until meat is tender.
  • Adjust seasonings if necessary.
  • Melt 1/4 cup butter in small saucepan over low heat.
  • Whisk in flour and stir for 3 minutes.
  • Whisk into soup.
  • Continue simmering 5 minutes longer.
  • While soup is simmering beat eggs in small bowl.
  • Whisk into eggs 1 1/2 cups soup and then return egg mixture to soup and stir well.
  • Remove from heat and adjust seasonings if necessary.
  • Garnish soup bowls with parsley if desired.

  • Melt butter in heavy large skillet over high heat.
  • Season veal with salt and pepper.
  • Working in batches, add veal to skillet and saute until just golden brown, about 2 minutes per side.

  • Tent with foil to keep warm.
  • Add brandy to skillet.
  • Bring to boil, scraping up any browned bits.
  • Add both stocks.
  • Boil until liquid is reduced to generous 1 cup, about 10 minutes.
  • Add cream; boil until sauce is slightly thickened, about 12 minutes.
  • Reduce heat to medium-low.
  • Add cheese and whisk until melted.
  • Simmer until thickened to sauce consistency, about 8 minutes.
  • Season sauce with salt and pepper.
  • Spoon sauce over veal.
  • Sprinkle with parsley and serve.
